Sensory acceptance of “Mackerel Burger” with reduced salt content as an alternative for school feeding
This study aimed to evaluate consumers’ acceptance of Serra Spanish Mackerel burgers (Scomberomorus brasiliensis) with reduced sodium content for school feeding programs. The variables studied were fish pulp (whole and washed) and concentration of table salt (1.5% and 0.75%) and monosodium glutamate (0% and 0.3%). The samples were subjected to the determination of sodium content and consumers’ acceptance test with both adults and children. The tests with adult consumers were performed in two Brazilian cities: Campinas, São Paulo State, and Matinhos, Paraná State, while the tests with children were carried out only in Matinhos city. The results were evaluated through an analysis of variance, Tukey’s test (p ≤ 0.05) and a frequency distribution bar graph. The tests with adults from both cities were compared by Student’s t-test (p < 0.05). Significant differences were observed in the sodium content of all formulations, which ranged from 199.26 mg/100 g (F7) to 517.76 mg/100 g (F2). Significant differences (p < 0.05) were observed in the acceptance tests with adult consumers for the attributes appearance, flavor, and overall impression between the two cities by t-test. For the consumer test with children, no significant difference was observed, with scores ranging from 6.67 to 6.75. The data suggest that the fish burgers can be part of school meals
MODIFICAÇÕES FÍSICO-QUÍMICAS E SENSORIAIS DE AGUARDENTE DE CANA DURANTE O ENVELHECIMENTO EM TONEL DE CARVALHO (Quercus alba L.)
Sugar cane spirits are of great interest because, besides the social and economical importance of this beverage very little information, specially that related to its maturation is available. Thus, studies about sugar cane spirit aging, are important parts of the effort to improve the quality of this typical Brazilian drink. In order to compare the physical chemical and sensory properties during maturation, sugar cane spirits samples, corresponding to zero, 12, 24, 36 and 48 months of aging in a 200 liter oak cask, and two commercial samples (aged and not aged) were analyzed. Total fixed and volatile acidity, alcoholic grade, copper levels and color intensity were determined. Acceptability tests for aroma, flavor, global impression and color were also worked over. The results showed that acidity levels and color intensity increased during aging while alcoholic grade and copper levels decreased. The acceptability increased (p£0,05) significantly for all attributes, confirming the effectiveness of aging to improve the sugar cane spirit quality.Analisou-se as propriedades físico-químicas e a aceitação sensorial de amostras de aguardente de cana envelhecidas em tonel de carvalho nos tempos 0, 12, 24, 36 e 48 meses e também de duas amostras comerciais, sendo uma envelhecida e outra não. Determinou-se acidez fixa e volátil, pH, graduação alcoólica, teor de cobre e intensidade de cor. Realizou-se também estudo de aceitação das amostras em relação ao aroma, sabor, impressão global e cor. Observou-se aumento significativo nos resultados de acidez total, fixa e volátil, bem como de intensidade da cor, com o decorrer do tempo, além de diminuição considerável nos teores de cobre e na graduação alcoólica. A aceitação aumentou significativamente (p£0,05) para todos os atributos avaliados, confirmando que a técnica de envelhecimento de aguardente proporciona a obtenção de produtos com qualidade superior
COMPARAÇÃO DA PERCEPÇÃO TEMPORAL DE DOÇURA, AMARGOR E SABOR DE FRUTA EM SUCO DE MANGA RECONSTITUÍDO E ADOÇADO COM SACAROSE, MISTURA CICLAMATO/SACARINA 2:1, ASPARTAME, SUCRALOSE E ESTÉVIA
Foi realizada análise tempo-intensidade dos estímulos doce,
amargo e sabor de fruta em suco de manga, adoçado com
quatro edulcorantes (ciclamato/sacarina 2:1, aspartame,
sucralose e estévia) e com sacarose. A amostra adoçada
com estévia apresentou a maior intensidade máxima para
os estímulos doce e amargo e essa característica persistiu
por longo período, indicando a presença de doçura e de
amargor residual intenso. A amostra com sacarose
caracterizou-se pelo gosto doce limpo, sem residual amargo.
Em relação ao estímulo sabor de fruta, a sacarose exibiu a
maior intensidade máxima. Já o aspartame apresentou o
maior tempo total de duração do estímulo, indicando
potencialização do sabor de fruta por esse edulcorante em
suco de manga. O aspartame foi o edulcorante, cujo
comportamento sensorial mais se aproximou ao da
sacarose na análise tempo-intensidade
SELEÇÃO DE PARÂMETROS DE CURVAS TEMPO-INTENSIDADE DE AGUARDENTES DE CANA SEM ENVELHECIMENTO E ENVELHECIDAS EM TONÉIS DE CARVALHO (Quercus alba L.) POR ANÁLISE DISCRIMINANTE POR PASSOS E ANÁLISE DE CORRELAÇÃO
It was verified the possibility to reduce a number of parameters necessary for the time-intensity-analysis in the sensorial characteristics of aged sugar cane spirits (“cachaça”). It was made a statistical study of all possible parameters, which were submitted to stepwise discriminant and regression analysis. It was sampled aged “cachaças” in oak barrels at zero, 12, 24, 36 and 48 months and six commercial brands, being three aged and three not, for the evaluation of sweetness, aggressive alcoholic taste and wood taste. The parameters obtained from each curve were: time to reach the maximal intensity (TImax), time in which the maximal intensity begins to decline (Td), duration time of the maximal intensity (Plato), total area under the curve (Area), total duration time of incentive (Ttot) e maximal intensity noticed (Imax). The results suggested that the parameters Imax and Plato could be eliminated in the time-intensity analysis of the sweet taste and wood taste, respectively without changing the final results of the analysis.Verificou-se a possibilidade de reduzir o número de parâmetros necessários em análise tempo intensidade (T-I) de características sensoriais de aguardente de cana, mediante estudo estatístico dos parâmetros possíveis, os quais foram submetidos às análises de correlação e discriminante por passos. Foram estudadas em relação ao gosto doce, sabor alcoólico, agressivo e de madeira, aguardentes envelhecidas em tonel de carvalho durante zero, 12, 24, 36 e 48 meses, além de seis marcas comerciais, sendo três envelhecidas e três não. Os parâmetros obtidos a partir de cada curva foram: tempo para atingir a intensidade máxima (TImax), tempo em que a intensidade máxima começa a declinar (Td), tempo de duração da intensidade máxima (Platô), área total sob a curva (Área), tempo total de duração do estímulo (Ttot) e intensidade máxima percebida (Imax). Os resultados obtidos sugerem que os parâmetros Imax e Platô podem ser eliminados na análise T-I de gosto doce e sabor de madeira, respectivamente, sem modificar o resultado final da análise
PERFIL SENSORIAL DE EXTRATO HIDROSSOLÚVEL DE SOJA ( Glicine Max L. Merril) COMERCIAL ADOÇADO COM SACAROSE E COM SUCRALOSE
Foram comparados o perfil sensorial e curvas tempointensidade
de doçura de extratos hidrossolúveis de
soja comerciais, adoçados com sacarose (versão
tradicional) e com edulcorante sucralose (versão light).
A Análise Descritiva Quantitativa evidenciou que a
percepção dos atributos cor creme, aroma de baunilha,
aroma de soja, sabor de baunilha, sabor de soja, doçura
e viscosidade foi significativamente superior para a
amostra com sacarose (p≤0,05). Não foi verificada
diferença significativa entre as amostras quanto ao
atributo homogeneidade. Os parâmetros da curva tempointensidade
Imax, Área e Ttot para a amostra adoçada
com sacarose foram de forma significativa superiores.
O tempo para atingir a intensidade máxima (TImax) de
doçura da sucralose no leite de soja é maior, ou seja,
demora mais para ser percebida.
SENSORY PROFILE OF COMMERCIAL HIDROSSOLUBLE SOY EXTRACT
(Glicine Max L. Merril) SWEETENED WITH SUCROSE AND SUCRALOSE
Abstract
The sensorial profile and time-intensity curves of sweetness of commercial
hidrossoluble soy extracts, sweetened with sucrose (traditional version) and
edulcorant sucralose (light version) were compared. The Quantitative Descriptive
Analysis evidenced that the perception of the attributes cream color, vanilla aroma,
soy aroma, vanilla flavor soy flavor, sweetness and viscosity was significantly
superior to the sample with sucrose (p≤0,05). It was not found significant difference
between the samples for homogeneity. The curves time-intensity parameters, Imax,
Area and Ttot, for the sample sweetened with sucrose were superior in a significant
form. The time to reach the maximum intensity (TImax) of sucralose sweetness in
soy milk is higher, or either, it takes more time to be perceived
AVALIAÇÃO TEMPO-INTENSIDADE DE DOÇURA E AMARGOR DE ASPARTAME E CICLAMATO/SACARINA EM EQUIVALÊNCIA À SACAROSE EM ALTAS CONCENTRAÇÕES
O objetivo do presente estudo foi caracterizar
sensorialmente o aspartame e a mistura ciclamato/
sacarina 2:1, mediante análise tempo-intensidade capaz
de avaliar as características temporais destes
compostos. Os edulcorantes foram analisados nos níveis
de doçura equivalentes à sacarose em solução a 20 e
30%. Constatou-se que o aspartame e a mistura
ciclamato/sacarina 2:1 modificam seu comportamento
temporal com aumento na concentração.

Abstract
The objective of the present study was to sensory characterize aspartame and
cyclamate/saccharin 2:1 blend by using time-intensity analysis, capable of evaluating the temporal attributes of these compounds. The sweeteners were evaluated at the
equi-sweet level of sucrose in solution at 20 and 30%. It was noticed that the aspartame
and cyclamate/saccharin 2:1 blend modifies their temporal behavior with concentration

Development of pitanga nectar with different sweeteners by sensory analysis: ideal pulp dilution, ideal sweetness, and sweetness equivalence
The objective of this study was to develop pitanga nectar formulations in which sucrose was replaced with different sweeteners. Consumer tests were conducted with 50 fruit juice consumers, and a just-about-right scale was used to determine the ideal pulp dilution and ideal sweetness with sucrose. Furthermore, the adequate concentrations of six sweeteners were determined to obtain the equivalent sweetness of sucrose using relative to these concentrations the magnitude estimation model with 19 selected assessors. The ideal dilution test resulted in 25% pulp, and the ideal sweetness test, 10% sucrose. Sweetener concentrations to replace sucrose were 0.0160%, 0.0541%, 0.1000%, 0.0999%, 0.0017%, and 0.0360%, respectively, for sucralose, aspartame, stevia 40% rebaudioside A, stevia 95% rebaudioside A, neotame, and a 2:1 cyclamate/saccharin blend. PERFIL SENSORIAL DE AGUARDENTE DE CANA EM FUNÇÃO DA DILUIÇÃO E VARIAÇÃO DA ACIDEZ DA AMOSTRA
Estudou-se a influência da concentração alcoólica e
da acidez no perfil de percepção sensorial de
aguardente de cana, visando detectar igualdades ou
diferenças na avaliação de atributos típicos de aroma
e sabor do produto. Utilizou-se aguardente recémdestilada,
que foi submetida a diluição e acidificação
com ácido succínico, originando quatro amostras para
provas. Concluiu-se que a concentração alcoólica e a
acidez não influíram na avaliação sensorial dos atributos
típicos da aguardente. A diluição da aguardente não
contribuiu para a maximização da percepção de
diferenças entre o aroma e o sabor das duas amostras.
A variação da acidez não mascarou a expressão
sensorial dos atributos devido aos componentes
secundários da aguardente, representados
principalmente por aldeídos, alcoóis superiores, ésteres
e ácidos orgânicos.
SENSORY PROFILE OF SUGARCANE SPIRIT IN FUNCTION TO SAMPLE
DILUTION AND ACIDITY VARIATION
Abstract
The influence of alcoholic concentration and acidity on the sensory perception
profile of sugarcane spirit was studied, aiming to detect similarities and differences
in the evaluation of product flavor and aroma typical attributes. Recent prepared
sugarcane spirit was utilized, which was submitted to dilution and acidification
with succinic acid, originating four samples for tests. It was concluded that the
alcoholic concentration and acidity didnt influence the sensory evaluation of the
typical attributes of the spirit. The spirit dilution didnt contribute for the maximization
of differences perception among aroma and flavor of two samples. The acidity
variation didnt disguise the attributes sensory expression due to the secondary
components of the spirit, represented mainly by aldehydes, superior alcohols,
esters and organic acids
