    AsiFood and its output and prospects: An Erasmus+ project on capacity building in food safety and quality for South-East Asia

    The Asifood project is a capacity building project in the field of higher education involving collaboration among thirteen partners from Cambodia, Thailand, Vietnam, Austria, Belgium, Italy and France. This project aimed to support the universities in Vietnam, Thailand and Cambodia in building their capacities and their link with professionals in food safety and food quality, in the context of ASEAN integration. Further, training for trainers around a key theme, ‘food safety and quality’ for partner countries was set up involving students and teachers, professional stakeholders, political decision-makers and association leaders. During the first year of the project, study and diagnostic phase were carried out to properly assess the training as per each university needs. In the second year, the training paths around three axes: courses, quality and laboratory analysis were conducted. Finally, a test phase was carried out with the partners by inserting the modules created in the bachelor's and master's degree courses offered by the universities as well as short term trainings on innovations in food safety and quali

    Generation of flavors and fragrances through biotransformation and de novo synthesis

    Flavors and fragrances are the result of the presence of volatile and non-volatile compounds, appreciated mostly by the sense of smell once they usually have pleasant odors. They are used in perfumes and perfumed products, as well as for the flavoring of foods and beverages. In fact the ability of the microorganisms to produce flavors and fragrances has been described for a long time, but the relationship between the flavor formation and the microbial growth was only recently established. After that, efforts have been put in the analysis and optimization of food fermentations that led to the investigation of microorganisms and their capacity to produce flavors and fragrances, either by de novo synthesis or biotransformation.     Enhancement of dielectric permittivity and electromechanical response in silicone elastomers: Molecular grafting of organic dipoles to the macromolecular network

    A novel method is established for permittivity enhancement of a silicone matrix for dielectric elastomer actuators (DEAs) by molecular level modifications of the elastomer matrix. A push-pull dipole is synthesized to be compatible with the silicone crosslinking chemistry, allowing for direct grafting to the crosslinker molecules in a one-step film formation process. This method prevents agglomeration and yields elastomer films that are homogeneous down to the molecular level. The dipole-to-silicone network grafting reaction is studied by FTIR. The chemical, thermal, mechanical and electrical properties of films with dipole contents ranging from 0 wt% to 13.4 wt% were thoroughly characterized. The grafting of dipoles modifies the relative permittivity and the stiffness, resulting in the actuation strain at a given electrical field being improved by a factor of six. © 2011 WILEY-VCH Verlag GmbH & Co.     Dielectric elastomer actuators are soft electro-mechanical transducers with possible uses in robotic, orthopaedic and automotive applications. The active material must be soft and have a high ability to store electrical energy. Hence, three properties of the elastic medium in a dielectric elastomer actuator affect the actuation properties directly: dielectric constant, electric breakdown strength, and mechanical stiffness. The dielectric constant of a given elastomer can be improved by mixing it with other components with a higher dielectric constant, which can be classified as insulating or conducting. In this paper, an overview of all approaches proposed so far for dielectric constant improvement in these soft materials will be provided. Insulating particles such as TiO2 nanoparticles can raise the dielectric constant, but may also lead to stiffening of the composite, such that the overall actuation is lowered. It is shown here how a chemical coating of the TiO2 nanoparticles leads to verifiable improvements. Conducting material can also lead to improvements, as has been shown in several cases. Simple percolation, relying on the random distribution of conducting nanoparticles, commonly leads to drastic lowering of the breakdown strength. On the other hand, conducting polymer can also be employed, as has been demonstrated. We show here how an approach based on a specific chemical reaction between the conducting polymer and the elastomer network molecules solves the problem of premature breakdown which is otherwise typically found. © 2011 SPIE

    Materials science on the nano-scale for improvements in actuation properties of dielectric elastomer actuators

    We discuss various approaches to increasing the dielectric constant of elastomer materials, for use in dielectric elastomer actuators. High permittivity metal-oxide nano-particles can show elevated impact compared to larger size particles, but suffer from water uptake. Composites with conducting particles lead to extremely high permittivity caused by percolation, but they often suffer early breakdown. We present experiments on approaches combining metal-oxides and metal particles, which compensate for the drawbacks, and may lead to useful DEA materials in which all relevant properties are technologically useful. The key seems to be to avoid percolation and achieve a constant nearest-neighbor separation. © 2010 Copyright SPIE - The International Society for Optical Engineering

    In Lactobacillus pentosus, the olive brine adaptation genes are required for biofilm formation

    International audienceLactobacillus pentosus is one of the few lactic acid bacteria (LAB) species capable of surviving in olive brine, and thus desirable during table olive fermentation. We have recently generated mutants of the efficient strain L. pentosus C11 by transposon mutagenesis and identified five mutants unable to survive and adapt to olive brine conditions. Since biofilm formation represents one of the main bacterial strategy to survive in stressful environments, in this study, the capacity of adhesion and formation of biofilm on olive skin was investigated for this strain and five derivative mutants which are interrupted in metabolic genes (enoA1 and gpi), and in genes of unknown function ("oba" genes). Confocal microscopy together with bacteria count revealed that the sessile state represented the prevailing L pentosus C11 life-style during table olive fermentation. The characterization of cell surface properties showed that mutants present less hydrophobic and basic properties than the wild type (WT). In fact, their ability to adhere to both abiotic (polystyrene plates) and biotic (olive skin) surfaces was lower than that of the WT. Confocal microscopy revealed that mutants adhered sparsely to the olive skin instead of building a thin, multilayer biofilm. Moreover, RT-qPCR showed that the three genes enoA1, gpi and obaC were upregulated in the olive biofilm compared to the planktonic state. Thus enoA1, gpi and "oba" genes are necessary in L pentosus to form an organized biofilm on the olive skin
