Az analitika jövője élelmiszerek vizsgálatában és értékelésében

Im Laufe der letzten Jahrzehnte hat sich die Lebensmittelchemie mehr und mehr zu einer Disziplin der angewandten Biochemie entwickelt. Untersuchung und Beurteilung der Lebensmittel erfolgten bisher meist gemäss den lebensmittelrechtlichen Anweisungen. Der neuen Arbeitsrichtung gemäss liegt jetzt auch die Forderung nach einer Urteilsfindung über die ernährungsphysiologische Wertigkeit, Verträglichkeit usw. vor. Als Beitrag dazu, wie der Verfasser Weg, Richtung und Ziel der analytischen Arbeit in der Perspektive zu erkennen glaubt, werden einige herusgegriffene Problemkreise erörtert. Au cours des derniéres décades la chimie des denrées alimentaires est devenue de plus en plus une branche de la biochimie appliquée. L’analyse et l’évaluation des denrées alimentaires ont été faites jusqu’ici surtout du point de vue de la police de ces substances. Conformémant ä la nouvelle direction de travail s’y ajoute maintenant l’évaluation du point de vue de la Physiologie de la nutrition. Pour illustrer comment l’auteur voit la perspective, la direction et la but du travail analytique dans l’avenir il discute quelques problémes détachés. In the last decades food chemistry proved to develop rather to a particular branch of applied biochemistry. Up to the present, foods were investigated and evaluated mainly from the aspect of food control. Corresponding to the new trend in food assay, the conventional evaluation of foods is now to'be complemented by an evaluation from the aspect of nutrition physiology. Some selected topics are discussed in detail in order to show how the perspectivic ways, trends and aims of analytical technique will develop, in the opinion of the author
