    Qualidade físico-química e detecção de resíduos e contaminantes no mel – estudo de caso

    A intensificação de análises oficiais no controle de qualidade de mel por parte do Serviço de Inspeção Federal nos últimos anos possibilitou o reconhecimento do mel brasileiro no mercado internacional, tornando o Brasil um dos maiores exportadores do mundo. Neste contexto, o atual estudo reportou os parâmetros físico-químicos e detecção de resíduos e contaminantes analisados como forma de monitoramento de qualidade do mel em dois entrepostos do Estado de São Paulo. Para a realização dos ensaios adotou-se as diretrizes e métodos recomendados pelo Ministério da Agricultura para cada uma das variáveis. Com referência aos parâmetros físicoquímicos, as análises mostraram que 83,3% das amostras estavam em conformidade com a legislação. Em relação às análises de resíduos e contaminantes, foram detectadas presenças de nitrofurazona (substância cancerígena) em 10,7% das amostras, sendo que 7,14% estavam acima do permitido em legislação. Assim, observou-se que o mel atuou como marcador ambiental regional da flora circunjacente que havia sido tratada com o produto químico, o qual é tóxico e carcinogênico para humanos, representando risco à Saúde Pública. A detecção de tal composto mostra a efetividade do Programa Nacional de Controle de Resíduos e Contaminantes. Programas semelhantes devem ser adotados e aprimorados tanto no campo como no varejo para que esta detecção se faça de maneira eficiente e ostensiva

    Prediction of weight and percentage of salable meat from Brazilian market lambs by subjective conformation and fatness scores

    This study assessed the use of conformation and fatness scores of the EUROP sheep carcass grading system to predict weight and percentage of salable meat from Brazilian market lambs. Data were collected from in vivo, carcass, and retail production from 252 uncastrated lambs. Evaluated models included single regressions, two multivariate models, and one determined by the stepwise procedure. Conformation was moderately correlated with weight of salable meat. Fatness scores were correlated with rump perimeter, carcass width, and thoracic depth with coefficients of -0.33, -0.32, and -0.23, respectively. Body weight was the best single predictor for weight of salable meat and cold carcass yield for percentage of salable meat. All multivariate models for weight of salable meat prediction were significant. Stepwise regression with body weight, leg perimeter, thoracic depth, rump perimeter, and fatness scores predicted 98% of weight of salable meat variation. For percentage of salable meat prediction, stepwise regression with cold carcass yield, leg perimeter, and conformation score was significant. The EUROP conformation and fatness scores can be used in Brazil for the prediction of lamb meat production.</p

    Sensorial characteristics of smoked meat of capybara

    O presente trabalho teve como objetivo desenvolver alguns produtos, como paleta e copa defumadas, em escala de laboratório, com a carne de capivara (Hydrochoerus hydrochaeris), e empregar a técnica de maturação da carne por meio da utilização de cloreto de cálcio. Inicialmente procedeu-se a verificação da composição centesimal na carne in natura, e posteriormente realizou-se a avaliação sensorial e a determinação da composição centesimal dos produtos obtidos pelos seguintes tratamentos: Tratamento A - paleta defumada, submetida à maturação inicial com cloreto de cálcio; Tratamento B - paleta defumada sem a maturação inicial; Tratamento C - copa defumada, submetida à maturação inicial com cloreto de cálcio e; Tratamento D - copa defumada sem a maturação inicial. A carne in natura de capivara apresentou composição média de 76,59% de umidade, 0,90% de resíduo mineral fixo, 20,04% de proteína e 0,91% de extrato etéreo. Os produtos elaborados apresentaram, em média: 67,72% de umidade, 2,16% de resíduo mineral fixo, 24,93% de proteína e 2,77% de extrato etéreo. Os produtos defumados de carne de capivara não apresentam diferenças quanto ao aroma, sabor, aroma estranho e sabor estranho. A paleta defumada apresenta-se mais macia e suculenta do que a copa defumada. A utilização de cloreto de cálcio cinco horas após o abate não tem efeitos significativos nos atributos sensoriais.The capybara (Hydrochoerus hydrochaeris) is a herbivore rodent, semiaquatic, and lives in a herd. It's docile with simple adaptation in confinament, and produces meat and skin of high quality. This research was designed to study the elaboration of smoked palette and smoked neck, in laboratory scale, utilizing calcium chloride marination. Chemical analysis of the capybara meat, chemical and sensorial analyses of a sensorial product were performed. The treatments were: A - smoked palette with marination; B - smoked palette without marination; C - smoked neck with marination; D - smoked neck without marination. The average chemical composition of capybara's meat was water, 76.59%; ash, 0.90%; protein, 20.04% and eter extract, 0.91%. The smoked product showed water, 67.72%; ash, 2.16%; protein, 24.93% and eter extract, 2.77%. No significant differences were found in taste, aroma, strange taste and strange aroma. The smoked palette showed better tenderness and juiciness. The sensorial properties were not affected by calcium chloride marination

    Características de carcaça de cordeiros Hampshire Down e Santa Inês sob diferentes fotoperíodos

    The objective of this work was to evaluate the effect of photoperiod and breed on carcass characteristics. Seven Hampshire Down and seven Santa Inês ram lambs were assigned to two photoperiods: 12 hours light x 12 hours dark, or short photoperiod, and to 18 hours of light x 6 hours of dark, or long photoperiod. After weaning, the lambs were housed in individual stalls. The lambs were weighed weekly until slaughter weight of 31 kg. After slaughter, the carcass and the non-carcass components were weighed. Santa Inês lambs had higher hot carcass weight than Hampshire Down and also a higher commercial dressing percentage. Santa Inês lambs had higher blood, heart, lung, kidneys and spleen weight. The Hampshire Down lambs had higher skin, feet, full stomach and full intestine weight. Santa Inês lambs had higher width hindquarters and leg length than the Hampshire Down. Santa Inês lambs had higher percentage of discovered rib and low and the Hampshire Down lambs, higher percentage of leg. Breed influences more the carcass characteristics than photoperiod.O objetivo deste trabalho foi avaliar o efeito do fotoperíodo e da raça nas características de carcaça de cordeiros machos Hampshire Down e Santa Inês. Sete cordeiros Hampshire Down e sete Santa Inês foram submetidos a fotoperíodo de 12 horas luz x 12 horas escuro (curto) e de 18 horas luz x 6 horas escuro (longo). Após o desmame, os cordeiros foram alojados em baias individuais de acordo com os tratamentos. Ao atingirem 31 kg de peso vivo, foram abatidos e a carcaça e os componentes não-constituintes da carcaça foram pesados. Cordeiros Santa Inês apresentaram peso de carcaça quente superior ao dos Hampshire e maior rendimento comercial. Cordeiros Santa Inês apresentaram maior peso de sangue, coração, pulmão, rins e baço. Já os cordeiros Hampshire Down apresentaram pesos de pele, patas e aparelho gastrintestinal cheio superiores aos do Santa Inês. Os cordeiros Santa Inês apresentaram maior largura de garupa e comprimento de perna do que os Hampshire Down. Os cordeiros Santa Inês apresentaram porcentagem de costela descoberta e baixos maior do que os Hampshire Down, com maior porcentagem de perna. A raça influencia mais as características de carcaça do que o fotoperíodo

    Chemical, Physical And Oxidative Characteristics Of Broilers Meat Supplemented With Passion Fruit Seed Oil

    Residues that could be discarded and transformed in high biological value protein is a measure of environmental preservation combined with the sustainability of animal production. This study evaluated the effects of the addition of passion fruit seed oil (PFSO) on broiler diet under the resistance of skin, physical-chemical characteristic, fatty acid profile and lipid oxidation (under storage) of breast meat obtained from these animals. There was improvement in the condition of skin rupture and meat tenderness; apart from that, oxidative reactions decreased, as PFSO was added to the diet (P&lt;0.05). On the other hand, no effect on colour, pH, water retention capacity and weight loss on cooking (P&gt;0.05) was observed. There was a linear effect increasing only for the margaric (C17:0) and cis10-Heptadecanoic (C17:1; P&lt;0,05) fatty acids. However, due to the low amount of these fatty acids in PFSO, the found content was still low in all evaluated treatments. However, the evaluated levels did not contribute to the increase of the polyunsaturated fatty acid profile (P&gt;0.05). Thus, it can be concluded that PFSO improves the resistance of broiler skin, which becomes softer and less susceptible to oxidative effects due to the oil’s antioxidant action, suggesting that it may be an ingredient that brings substantial benefits in the poultry industry

    Effect of stocking density on performance, carcass yield and meat quality in broilers of different commercial strains

    The objective of this study was to evaluate the effects of stocking density and strain on performance, carcass yield and cuts and quality parameters of breast meat (cooking weight loss, shearing force and pH) of broilers chickens. Two thousand and nine hundred and twenty five day-old chicks were alocated in a randomized 3x3x2 factorial design, with tree commercial strains (Ross 308, Cobb 500 and Hybro PG), three densities (10, 13 and 16 birds/m²) and two sex with two replications with variable number of birds due to stocking density. The densities resulted in differences for weight gain in the starter and finisher phase and in the total period, when the density of 10 birds/m² presented higher weight gain than 13 and 16 birds/m². However, densities of 13 and 16 birds/m² was not different. Increasing stocking density increased live weight production per area and profit. Densities did not affected carcass yield and cuts as well as breast meat quality parameters. Strains was different on weight gain in all phases avaluated and for feed intake in finisher phase and total period. Strain did not affected carcass yield, however, effects on breast meat yield, leg quarters, wings, back and abdominal fat were observed, with difference for leg quarter yield among males and significant difference for abdominal fat among females. Strain affected cooking weight loss and did not affected shear force and pH. Sex affected all parameters of performance and carcass yield but no breast meat quality.O trabalho foi realizado objetivando-se avaliar o efeito da densidade populacional e da linhagem sobre as características de desempenho, o rendimento de carcaça e a qualidade da carne de peito (perda de peso por cozimento, força de cizalhamento e pH) em frangos de corte. Foram utilizados 2.925 pintos de um dia, sexados, distribuídos em um delineamento experimental inteiramente casualizado, em fatorial 3x3x2, sendo três linhagens (Ross 308, Cobb 500 e Hybro PG), três densidades (10, 13 e 16 aves/m²) e dois sexos, com duas repetições com número variável de aves em função da densidade. A densidade afetou o ganho de peso nas fases inicial e final e no período total, sendo que a densidade de 10 aves/m² apresentou o melhor ganho de peso, porém, as densidades de 13 e 16 aves/m² não diferiram entre si. O aumento da densidade promoveu maior produção de peso vivo/m² de galpão, além de incrementar a renda bruta. No entanto, não afetou o rendimento de carcaça e das partes, bem como as características de qualidade da carne. As linhagens diferiram para ganho de peso em todas as fases e para o consumo de ração na fase final e no período total de criação, porém não diferiram para o rendimento de carcaça, apesar de diferirem para o rendimento de peito, pernas, asas, dorso e gordura abdominal, sendo que para o rendimento de pernas houve diferenças apenas entre os machos e para gordura abdominal apenas entre as fêmeas. As linhagens diferiram para perda de peso da carne de peito por cozimento, mas não para maciez e pH. O sexo das aves influenciou as características de desempenho e rendimento de carcaça, mas não a qualidade da carne do peito.1506151
