    Perlakuan Panas Mendidih Pada Pembuatan Milk-tea Dalam Kemasan (Kajian Pada Industri Skala Kecil)

    Heating until boiling temperature has been a food safety standard for many Indonesian. The purpose of this study was to evaluate the effect of several heat treatment profiles towards the thermal death time value, pH, and microbiological aspect of bottled milk tea during cold storage. The bottled milk tea products was prepared from tea extract which was added with creamer and sugar to reach a soluble solid content of 16 Brix, and fat content of 2.9 % (m/v). The mixture was then heated until boiling and held for several different holding times (i.e. unboiled; boiled; boiled + 5? holding; and boiled + 10? holding). Thermal death time value was calculated using two microbiological references, namely Clostridium botulinum and Coxiella burnetii. The result showed that the heating treatment applied gave a much higher effect than pasteurization standard, whereas it did not reach the sterilization level. Highest log reduction reached 1.87 and shockingly high 9.36 x 109 log reduction, when calculated using C. botulinum and C. burnetti as reference, respectively. Higher heating intensity caused pH increase which may be associated with the ammonia production. Microbiological growth during storage were observed in unboiled and boiled treatment which reached 6.6 x 103 cfu/ml and 36 cfu/ml, respectively, while the other treatments did not show any growth. Boiled treatment was deemed as the most optimum which gave a 5 weeks product shelf life

    The Effect of Gatot (Fermented Dried Cassava) and Red Bean Ratio on Water Content and Organoleptic Characteristics of the "Gatotkaca" Analog Rice

    This study aimed to evaluate the effect of the ratio of gatot and red beans USAge on water content and organoleptic characteristics from "Gatotkaca" analog rice. The material in this study was gatot (fermented cassava) and red beans. The experimental design used was a completely randomized design (CRD) with 4 treatments and 5 replications. This study consisted of 4 different analog rice formulations, namely T1 (90% gatot: 10% red beans); T2 (85% gatot: 15% red beans); T3 (80% gatot: 20% red beans); T4 (75% gatot: 25% red beans). Data were analysed using Analysis of Variance (ANOVA) with the significance level 5%. The results showed that the difference in the ratio of the USAge of gatot but red beans didn't have a significant effect (p>0.05) on the water content and organoleptic characteristics. Treatment with a ratio of gatot and 85% red beans 15% gatot was the best treatment

    Pelatihan Lari Amplop Meningkatkan Kelincahan Siswa Putra Peserta Ekstra Kurikuler Pencak Silat SMA Dwijendra Denpasar Tahun Pelajaran 2015/2016

    Berdasarkan observasi dan penelitian pendahuluan yang telah dilakukan dengan tujuan untuk mengetahui apakah perlu diadakan penelitian lebih lanjut. Maka didapatkan hasil bahwa siswa putra peserta ekstra kurikuler pencak silat SMA Dwijendra Denpasar tahun pelajaran 2015/2016 memerlukan pelatihan untuk meningkatkan kelincahan dalam teknik menghindar dan mengubah arah. Tujuan dari pelatihan ini adalah untuk mengetahui adanya peningkatan kelincahan dengan pelatihan lari amplop dan lari zig-zag terhadap dua kelompok siswa putra yaitu,kelompok perlakuan dan kelompok control. Penelitian ini menggunakan rancangan experimental randomized pre-tes and post-tes groups design. Populasi diambil dari siswa putrapeserta ekstra kurikuler pencak silat SMA Dwijendra Denpasar tahun pelajaran 2015/2016. Sampel berjumlah 30 orang diambil secara acak sederhana dari populasi yang memenuhi kriteria inklusi dan eksklusi. Pelatihan yang dilakukan dalam penelitian ini ialah pelatihan lari amplop 2 repetisi 3 set pada kelompok perlakuan dan pelatihan lari zig-zag 2 repetisi 3 set pada kelompok kontrol, frekuensi pelatihan 4 kali seminggu selama 6 minggu pada siswa putrapeserta ekstra kurikuler pencak silat SMA Dwijendra Denpasar tahun pelajaran 2015/2016. Data berupa hasil kelincahan shuttle run 5 meter 8 kali yang diambil sebelum dan sesudah pelatihan. Data yang diperoleh diuji menggunakan program komputer SPSS 16. Data berdistribusi normal dan homogen sehingga selanjutnya diuji menggunakan uji t-paired untuk membandingkan nilai rata-rata sebelum dan sesudah pelatihan antara masing-masing kelompok, sedangkan uji t-tes independent untuk mengetahui perbedaan nilai rata-rata antara kedua kelompok. Hasil uji t-paired kelompok kontrol dan kelompok perlakuan terjadi peningkatan yang bermakna (p < 0.05). Hasil uji t-tes independent didapat bahwa kedua kelompok sebelum pelatihan tidak berbeda bermakna (p > 0,05), sedangkan setelah pelatihan kedua kelompok kelincahan tidak berbeda bermakna (p > 0,05). Simpulannya bahwa pelatihan lari amplop dan lari zig-zag 2 repetisi 3 setsama-sama meningkatkan kelincahan dan menyatakan hipotesis nol ditolak

    Effect of Basil (Ocimum Americanum L.) Proportion on Physical and Organoleptical Properties of Basil Cracker

    Basil contains flavonoid, saponin, tannin, and essential oils namely sineol and eugenol. Basil has been known as appetite stimulant, laxative, fragrance, and breast milk stimulator. This study aimed to determine the effect of basil addition to linear expansion, crispiness, color, and organoleptic of basil cracker. Complete Randomized Design was used in this research with 4 treatments and 5 replications i.e. T1 (10% basil, 90% tapioca), T2 (15% basil, 85% tapioca), T3 (20% basil, 80% tapioca), T4 (25% basil, 75% tapioca). Linear expansion was measured using ruler, hardness/crispiness using texture analyzer, color using digital colormeter, and organoleptic testing was done by 25 panelists. The research showed that basil cracker had linear expansion of 166-235%; hardness of 1264.8-1837.6 gF; L* value of 22,47-40,40 and a* value of -20.73 to -12.67. Variation of basil proportion gave significant effects to linear expansion, crispiness, and color of basil cracker. The best treatment was T2 (15% basil, 85% tapioca) because it had high linear expansion and bright color, was crispy, and preferred by panelists

    Developments in the digital media era as of today, having an online business is indeed one of the most profitable things. Once the community recognizes the online transaction system, it is also known that the user rates of online buying and selling services are increasing. It's what makes online business segments drastically rising. Especially, nowadays more and more selling sites or online marketplace that special provide online buy and sell transactions such as Shopee. Study reserch uses a descriptive and causal approach with a quantitative approach. Questionnaires were used to obtain data from citizens living in all areas of Surakarta. Samples in this study uses of 100 respondents, the research was carried out throughout Surakarta and the time needed in this study was more or less for 3 months. The results of this study indicate that quality of service, online customer review variables and trust have a significant positive effect on online purchasing decision.     Railways as a mode of transportation has special characteristics and advantages.Operating ofKRD AC Way Umpu aims to provide good service and convenient for people of Lampng who wantto go to Kotabumi or to Bandar Lampung.In this study describes the characteristics of KRD passengers based on age, job, income, trip pur-pose, the intensity of the journey, the destination station, level of service, fare and load factor.The results showed overall performance of KRD is quite good.Based on the characteristics of thedata analysis, 62.33% of passengers aged adults (21-40 years old).In terms of jobs, dominated bystudent / college students 34%, 23.33% self-employed, civil servants / military / police22.67%.Rp.1.000.000 is the highest income level, - at 36.67%.     The stigma of society have an impact on the community with positive and negative consequences In fact a lot of mentally ill people in a community that is considered troubling. This study aims to determine how the public stigma against mentally ill people in the village Trucuk.The design of this study is descriptive survey approach a total population of 743 people and a sample of 100 non-probability sampling .Tehnik sampling is purposive sampling Taking appropriate degan researchers will use the inclusion criteria. The subjects in this study were the people in the village Trucuk, the number of 100 respondents, data collection using questionnaire instruments that describe the notion of mental illness.Results illustrate the largely negative public stigma by 59 people, while having a negative stigma by 41 people.The conclusion from the results of research conducted in May 2014 on "public stigma against mentally ill people in the Village District of Trucuk Trucuk Bojonegoro 2014" can be concluded in the Village District of Trucuk Trucuk Bojonegoro 2014, more than most have a negative stigma.     Description of the Visual Image Magnification on Ginger Emulsion Using Kappa and Iota Carrageenan

    This study aimed to analyze the magnification of visual image upon SEM analysis for determining the optimum view in order to obtain proper information of SEM image in ginger emulsion. The treatment in this research are without carrageenan, with iota carrageenan and with kappa carrageenan. Emulsion of ginger Graphical display testing according to using the Scanning Electron Microscope (SEM) method. The research showed that ginger emulsion with and without carrageenan were able to be seen clearly and the particle size were able to detected at a range 0.5-5 µm. The sample with iota carrageenan provided the information of separation among particles and it could not be seen clearly on the sample with kappa carrageenan.
