GOSTO E DELEITE: CONSTRUÇÃO E SENTIDO DE UM MENU ELEGANTE

Starting of the presupposed that the consumed food tends to transfer analogically to the commensal some of its characteristics, the present study wants to articulate the concept of taste to the strategies of the attainment of prestige and the social distinction, taking in account the choice of the menus, therefore, the food that goes to the mouth is not neutral. The composition of the menu and the future allotment of the dainty for it listed can consist in instrument of the construction of the identity and the nature of that they ingest them.Partindo do pressuposto de que o alimento consumido tende a transferir analogicamente ao comensal algumas de suas características, o presente estudo quer articular o conceito de gosto às estratégias da obtenção do prestígio e da distinção social levando em conta a escolha dos cardápios, pois a comida que vai à boca não é neutra. A composição do menu e a futura partilha das iguarias por ele elencadas pode constituir-se em instrumento da construção da identidade e da natureza daqueles que as consomem. É necessário, para isso, reconhecer, no consumo dos alimentos, fatores culturais, sociais e psicológicos capazes de influenciar nas preferências alimentares

CARLOS ROBERTO ANTUNES DOS SANTOS E A HISTÓRIA DA ALIMENTAÇÃO NO PARANÁ

O objetivo deste artigo é trazer para discussão o clássico História da alimentação no Paraná, de Carlos Roberto Antunes dos Santos, publicado pela primeira vez em 1995, propiciando a reflexão sobre os movimentos econômicos, sociais e políticos ocorridos no século XIX, na Província do Paraná, a partir da produção e do acesso aos alimentos e revelando as permanências que se verificam na produção e no consumo balizado pelo jogo do mercado capitalista. Atualmente, muito do que foi registrado como pertencente aos movimentos do século XIX se replica, seja nas relações de produção, distribuição, seja no consumo dos alimentos, evidenciando-se a atualidade e a importância da referida obra, que aborda temas persistentes e recorrentes no Brasil. Dada uma série de dilemas atuais, incluindo a insegurança alimentar, a falta de sustentabilidade ecológica e a necessidade de se garantir o direito humano à alimentação adequada e saudável, é pungente retornarmos à análise pretendida pelo autor, a partir da trilogia por ele defendida – escassez, carestia e qualidade.The objective of this paper is to bring to the discussion the classic História da Alimentação no Paraná, by Carlos Roberto Antunes dos Santos, first published in 1995, promoting reflection on economic, social and political movements in the 19th century in the Province of Paraná, from the production and access to food and revealing the permanences that occur in the production and consumption marked by the game of the capitalist market. Nowadays, much of what was registered as belonging to the movements of the nineteenth century is replicated, not only in the relations of production, distribution, but also in the consumption of food, evidencing the relevance and importance of this work, which addresses persistent and recurring themes in Brazil. Given a number of current dilemmas, including food insecurity, lack of ecological sustainability and the need to ensure the human right to adequate and healthy food is poignant returning to the analysis by the author, from the trilogy he advocated - shortage, dearness and quality

Labores, quitutes e panelas: em busca do lar ideal Handiwork, dainties and pans: searching for the ideal home

A partir do conceito de auto-governo, entendido como um modelo psicológico capaz de garantir o reconhecimento e respeito do próximo, uma valorização de si mesmo, este artigo propõe uma reflexão a respeito da mulher no desempenho do papel de "rainha do lar" no Brasil do início do século XX. Na preparação da casa repousava a valorização de uma conduta controlada da dona-de-casa, que deveria manter o controle sobre tudo e sobre todos, tendo aí a oportunidade de demonstrar sua capacidade de governar a si, seu lar e sua família.<br>This study begins from the concept of self-guidance understood as a psychological model capable to guarantee the recognition and respect of the next one, a self-valorization. It propitiates a reflection regarding the woman in the performance of the paper of "queen of the home" in Brazil of the beginning of the XX century. In the preparation of the house rested the valuation of a controlled behavior of the housewife, that would have to keep the control on everything and all, having there the chance to demonstrate its capacity to govern itself, its home and its family
