    The Exploration of Effects of Chinese Cultural Values on the Attitudes and Behaviors of Chinese Restaurateurs Toward Food Safety Training

Journal of Environmental Health, 75(10), 38-46.Foodborne illness is a challenge in the production and service of ethnic foods. The purpose of the study described in this article was to explore variables influencing the behaviors of U.S. Chinese restaurant owners/operators regarding the provision of food safety training in their restaurants. Seventeen major Chinese cultural values were identified through individual interviews with 20 Chinese restaurant owners/operators. Most participants felt satisfied with their previous health inspections. Several expressed having difficulty, however, following the health inspectors’ instructions and in understanding the health inspection report. A few participants provided food safety training to their employees due to state law. Lack of money, time, labor/energy, and a perceived need for food safety training were recognized as major challenges to providing food safety training in Chinese restaurants. Videos, case studies, and food safety training handbooks were the most preferred food safety training methods of Chinese restaurant owners/operators, and Chinese was the preferred language in which to conduct the training

    L’objectif de cet article est de présenter les résultats des travaux du projet IMdR P13-2 intitulé « Méthodes de démonstration de niveaux de sûreté / sécurité pratique » réalisé en 2014 et 2015. Les industriels associés à ce projet ont éprouvé et des difficultés à la mise en place de la sûreté pratique. Le projet a permis de réaliser un état de l’art, d’en analyser les caractéristiques dont les difficultés rencontrées et les points d’amélioration possibles, et de proposer une méthode de sûreté pratique dite « semi-quantitative » qui pourra faire l’objet ultérieurement d’une normalisation si son expérimentation future démontre sa réelle efficacité.This article aims to present the results of the IMDR project P13-2 named “methods to demonstrate level of “safety in production” carried out in 2014 and 2015. The industrialists associated to this project have experienced difficulties when setting up “safety in production”. This project supported the description of the latest developments in the subject. Then it analyzed their characteristics and the known difficulties and possible improvement issues. It proposed a “safety in production” method that can be called “semi quantitative”. This new method could be normalized in the future if its testing demonstrates its real efficiency
