    Effects of soil and vineyard characteristics on volatile, phenolic composition and sensory profile of Cabernet Sauvignon wines of Campanha Gaúcha

    The influence of vineyard on wines was evaluated for the first time using a broader analytical approach: sensory analyses and several analytical techniques (gas chromatography-mass spectrometry (GC-MS), GC flame ionization detection (FID), GC-olfactometry-Osme technique (GC-O-Osme), GC × GC-MS), taking into account odoriferous compounds of Cabernet Sauvignon wines. Sensory attributes were correlated to the concentration of volatiles and also to favorable climate/solar exposition, less clayey/lower organic matter soil, and lower vegetative growth of one out of five vineyards, C1. Among 30 coelutions in GC-MS, 12 involved some of the odoriferous volatiles and GC × GC-MS was required to elucidate their identities. Higher concentrations of ethyl propanoate and diacetyl (related with red fruits/aromatic intensity) and of acetoin (aroma of dry fruits, but coeluted with octanal in first dimension (1D), which presents green odor) were found in C1 wine. It was also correlated with positive appearance attributes, gustatory persistence, body, smell and taste harmony, as well as with higher concentrations of phenolic acids, anthocyanins, flavonols, stilbenes, and flavanols

    Estudo dos componentes voláteis de vinhos espumantes moscatéis através do emprego de microextração em fase sólida e cromatografia gasosa

    O espumante Moscatel é conhecido por sua tipicidade aromática e se destaca dos demais também pela sua importância econômica e social na região sul do Brasil, entretanto, não há relatos na literatura científica sobre os componentes voláteis do headspace deste vinho. Este trabalho caracterizou qualitativamente os compostos voláteis de 24 espumantes Moscatéis brasileiros de várias procedências (52,4% das vinícolas que têm produção própria de vinho e 26,5% do total de vinícolas da região Sul) através de microextração em fase sólida (SPME) e cromatografia gasosa monodimensional (1D-GC) e bidimensional abrangente (GCGC) com detectores de espectrometria de massas, tendo-se verificado um perfil volátil semelhante para estas bebidas, o que demonstrou a homogeneidade do produto nacional no conjunto de amostras analisado. As classes predominantes foram ésteres e ácidos, seguidas de terpenos e álcoois, dos quais se destacam 17 compostos majoritários. O uso de análise de componentes principais apontou caminhos para a discriminação entre as amostras de espumantes devido à presença de compostos específicos, os quais poderão ser potenciais marcadores de qualidade em estudos futuros, relativamente à variedade ou região de produção destes vinhos. Várias co-eluições verificadas na 1D-GC foram resolvidas por GCGC, sendo o número de componentes tentativamente identificados por GCGC aproximadamente cinco vezes maior do que na monodimensional.Moscatel sparkling wine is known for its typical aroma and stands out among other sparkling wines also because of its economic and social importance in the South region of Brazil, even though there are no reports in the scientific literature related to its volatile compounds. Solid phase microextraction (SPME), one-dimensional gas chromatography (1D-GC) and comprehensive two-dimensional gas chromatography (GCGC) with mass spectrometric detector has been used to qualitatively characterize the volatile compounds of 24 Brazilian Moscatel sparkling wines (52,4% of the wineries that produce their own wine and 26,5% of the total of wineries of the Southern region). Results have shown a similar volatile profile for the sparkling wines investigated and this demonstrates that the national product is homogeneous in this regard for this set of samples under study. Predominant classes were ésters and acids, followed by terpenes and alcohols and 17 compounds were considered the major ones. Principal component analysis has pointed out ways to discriminate among sparkling wine samples due to the presence of specific compounds, which may be considered potential markers for variety, region or for quality control of wine production in future studies. Several co-elutions found in 1D-GC were resolved by GCGC, while the number of tentatively identified components was five times higher in the two-dimensional technique when compared to 1D-GC

    Adaptation of an olfactometric system in a GC-FID in combination with GCxGC/MS to evaluate odor-active compounds of wine

    A step-by-step approach to easily adapt and use a GC-FID as an olfactometer, as well as a detailed description of acquisition and interpretation of olfactometric data by the OSME (from the Greek word for odor, ὀσμή) method. A Merlot wine was used to exemplifly this strategy and its volatiles were characterized, rendering 43 volatiles in 1D-GC/MS and 142 in GCxGC/MS. GC-O showed the presence of 24 odor-active compounds and GCxGC/MS indicated aditional 14 odor-active compounds, which were found as coelutions. Six compounds (isoamyl acetate, ethyl octanoate, ethyl decanoate, 3-methylthio-1-propanol, carvone, benzyl alcohol and nonanoic acid) were described in 1D-GC-O analyses as having distinct odors by the same and by different assessors. This fact indicated the presence of coeluting bands, which were resolved by GCxGC/MS. The adapted GC-O in combination with the use of GCxGC/MS may be a tool to more accurate investigation of the odor-active compounds of wine

    Solid phase microextraction, one-dimensional gas chromatography (1D-GC) and comprehensive two-dimensional gas chromatography (GC×GC) with mass spectrometric detector have been used to characterize the volatile profile of Moscatel sparkling wines. Predominant classes were esters, acids, alcohols and terpenes. The efficiency of GC×GC was apparent due to the higher number of compounds positively and/or tentatively identified through this technique (two and a half times higher than with 1D-GC), as well as by the separation of co-eluted compounds in 1D-GC. Principal components analysis showed that the volatile profile of the majority of sparkling wines is similar. Only two samples differed from others and the compounds responsible for this behavior were nerol, menthol, linalool acetate, limonene and geraniol. Furthermore, a clear separation among sparkling wines done with two Moscato grape varieties (Bianco and Giallo) was observed in cluster analysis due to the higher chromatographic area of terpenes and norisoprenoids verified in Giallo samples
