INFLUENCES OF TECHOLOGICAL HYDROLYSIS CONDITION ON NUCLEIC ACID CONTENT OF SPENT BREWER’S YEAST HYDROLYSATE
Currently, with the strong increasing of the brewing industry output, the consequencing amount of yeast residue is very large. Utilizing a large source of protein from brewers yeast to produce hydrolysed products using protease as food and food additives has a high real-life benefit. However, one limitation in the use of yeast and hydrolysis products is that the amount of nucleic acid in the yeast in particular and in the microbial cells is generally high. Nucleic acid is abundant in food that causes gout in humans and animals. There are many methods for reducing or separating nucleic acids in hydrolysed products such as extracellular ribonuclease enzymes, chemical agents, thermal shock and autolysis. Use extracellular ribonuclease enzyme for hydrolysis of nucleic acid gives good efficiency, but with high production cost. Chemical agents affect the quality of the hydrolysed products used in the food industry. There have been many good-efficiency studies using heat shock and autolysis to reduce the amount of nucleic acid in the hydrolysate. However, no research has been conducted to reduce the amount of nucleic acid by hydrolysis techniques. In this paper, we investigated the effects of heat shock, autolysis and hydrolysis techniques (batch, continuous overflow and continuous circulation) of brewery yeast protein to nucleic acid content in yeast hydrolysate. The results showed that the content of nucleic acid in the hydrolysate (with a concentration of 55 % dry matter) was the smallest. Under normal hydrolysis conditions, the nucleic acid content was 8.7 g / kg and when there was a heat shock+ autolysis, it decreased to 6.34 g/kg. After optimizing the hydrolysis conditions, the nucleic acid content of the hydrolysate was reduced to 5.41g/kg on continuous hydrolysis system.
MODELO DE CONSULTA ESCOLAR NO VIETNÃ: ESTUDO DE CASO DE PROFESSORES EM TEMPO PARCIAL
The school consultation model in Vietnam currently being implemented according to Circular No. 31/2017/TT-BGDDT effective from February 2, 2018, is the “Part-time teacher” model. The purpose of this exploratory study is to test the awareness of officials and teachers about the effectiveness of elements in the “part-time teacher” school consultation model in high schools in Ho Chi Minh City, Vietnam. The research sample was randomly selected from 4 high school heads and from teacher pedagogical training courses and management training classes, with 538 participants, of which teachers (69.0%), and managers (31.0%); in the study sample, there were (36.2%) participating in the school’s psychology team. Research subjects (28.6%) were trained in psychological consultation capacity by topic; (8.9%) training in psychological counseling capacity and granting training certificates; (5.4%) training for bachelor of psychology and master of psychology; (57.1%) had not studied through the psychological counseling competency program. The instrument’s validity and reliability were verified through the evaluation of Cronbach alpha analysis, and exploratory factor analysis (EFA). When analyzing the EFA factor, the results of the factors in the model have a positive correlation of 76.2% (R2 = 1.00), in the factors of personnel conducting consultations, policies for personnel participating in consultations, and policies for consulting personnel. Joining the school counseling team, the consultation process and the consultation room have not been paying attention.O modelo de consulta escolar no Vietname que está atualmente a ser implementado de acordo com a Circular n.º 31/2017/TT-BGDDT, em vigor a partir de 2 de fevereiro de 2018, é o modelo “Professor a tempo parcial”. O objectivo deste estudo exploratório é testar a sensibilização de funcionários e professores sobre a eficácia dos elementos do modelo de consulta escolar de “professores a tempo parcial” em escolas secundárias na cidade de Ho Chi Minh, Vietname. A amostra da pesquisa foi selecionada aleatoriamente entre 4 diretores de escolas de ensino médio e de cursos de formação pedagógica de professores e turmas de formação gerencial, com 538 participantes, sendo professores (69,0%) e gestores (31,0%); na amostra do estudo havia (36,2%) participantes da equipe de psicologia da escola. Os sujeitos da pesquisa (28,6%) foram capacitados em capacidade de consulta psicológica por tema; (8,9%) formação em capacidade de aconselhamento psicológico e concessão de certificados de formação; (5,4%) formação para bacharel em psicologia e mestre em psicologia; (57,1%) não haviam cursado o programa de competência em aconselhamento psicológico. A validade e a confiabilidade do instrumento foram verificadas por meio da avaliação da análise alfa de Cronbach e da análise fatorial exploratória (AFE). Ao analisar o fator AFE, os resultados dos fatores do modelo apresentam correlação positiva de 76,2% (R2 = 1,00), nos fatores pessoal que realiza consultas, políticas para pessoal participante de consultas e políticas para pessoal consultor. Juntando-se à equipe de aconselhamento escolar, o processo de consulta e o consultório não têm prestado atenção
NON-SPECIALIZED STUDENTS’ BENEFITS AND CHALLENGES IN USING ELSA SPEAK APPLICATION FOR PRONUNCIATION LEARNING
The noteworthy proliferation of English language applications, exemplified by advancements such as the Elsa Speak Application, specifically designed for the pedagogical aspects of English instruction, underscores this trend. This study seeks to scrutinize the benefits and difficulties that non-specialized students in the High-quality program at Can Tho University (CTU) have when they learn English pronunciation through the Elsa Speak Application. To conduct this examination, semi-structured interviews were undertaken with 10 participants. The findings reveal that these participants encountered specific advantages and challenges in effectively navigating and utilizing the application. In response to these identified challenges, a set of recommendations has been proffered to enhance the effectiveness of the Elsa Speak Application, with the overarching goal of optimizing English language learning outcomes for students enrolled in the High-quality program at CTU. This research contributes valuable insights into the nuanced experiences and challenges associated with the integration of AI-driven language learning tools within the educational landscape of Industry 4.0. INFLUENCE OF FACTORS ON THE BITTERNESS AND SENSORY TASTE IN PROTEIN HYDROLYSATE FROM SPENT
Spent brewer’s yeast, obtained after the main fermentation stage, is a rich- in-protein source (protein content accounts for 48 - 50 % dry matter). In order to use efficiently this protein source for using in food industry, it was hydrolysed by different methods into mixtures of peptides and amino acids. So that it has a wide range of applications in food. It can be used as emulsifying agents in a number of applications such as salad dressings, spreads, ice cream, coffee whitener, cracker, and meat products like sausages. However, bitterness in hydrolysates is one of the major undesirable aspects for various applications in food processing. In this study, influences of factors (E/S ratio, pH and temperature) on bitterness of hydrolysate were studied to choose the best hydrolysis conditions by using flavourzyme, alcalase and neutrase. The bitterness of hydrolysate was determined by intensity sensory method (using quinine standard) and amino acid content was analysed by HPLC method. The result showed that bitterness of brewer’s yeast hydrolysate by flavourzyme is the lowest and that by neutrase is the highest. In particular, the bitterness of hydrolysates have reached values of 15.2–40.42 µmol quinine/l (FH - flavourzyme hydrolysate), 21–64.99 µmol quinine/l (AH - alcalase hydrolysate) and 34.62–64.26 µmol quinine/l (NH - neutrase hydrolysate), respectively. The hydrolysis conditions in using flavourzyme were chosen at 50 oC, pH 7, E/S ratio 7.1U/g and in using alcalase - at 55 oC, pH 8, ratio E/S 7.2 U/g, respectively. At this conditions, bitterness reached values 15.44 µmol quinine/l (in FH) and 21.16 µmol quinine/l (in AH)

The Impact of Corporate Governance on the Quality of Accounting Information: Research Based on Listed Companies on Vietnam's Stock Exchange
Purpose: This research aims to evaluate the impact of corporate governance on the quality of accounting information in listed companies on the Vietnamese stock exchange.
Theoretical framework: Corporate governance focuses on the structure of ownership, the characteristics of director and supervisory boards. The quality of accounting information is evaluated under the perspectives of information users and information auditors.
Design/methodology/approach: This research analyzes primary and secondary data from 193 listed companies as of 2021 and uses both qualitative and quantitative research methods.
Findings: The results show that the factors affecting corporate governance that have a proportional impact on the quality of accounting information include: Government ownership, Supervisory Board ownership, major shareholders ownership, number of board members, professional qualifications of the association board of directors, and that have an inverse impact is the duality between the Board of directors and the managing directors, and that have no impact are the number of members in the supervisory Board and professional qualifications of the supervisory board.
Research, Practical & Social implications: From the research results, the authors propose recommendations to improve the quality of accounting information through corporate governance.
Originality/value: The value of the study is pointing out the impact of corporate governance on the quality of accounting information in listed companies on the Vietnamese stock exchange meaningful in creating trust among users to attract investment domestically and internationally
