    Probiotics and Postbiotics from Food to Health: Antimicrobial Experimental Confirmation

    The field of probiotics is up-and-coming, especially in management of microbial pathogens. Probiotics confer nutritional benefits, reduce inflammation and infection. Probiotics have also shown to be helpful in the management of microbial pathogens, which include bacteria, fungi, and viruses. To ernes this potential maximumly, there is a need for an elaborate screening system for new isolates. This entails; rigorous screening methods and thorough confirmatory systems. There is need also to come up with standard methods used to evaluate the probiotics mechanism of action both in vivo and in vitro. In summary, there is a need for a standard screening process for probiotic microorganisms that is reproducible. The aim is to ensure that, the candidate microbial cultures are not written off without proper investigations. This will also fasten the screening process and save time and resources wasted in pre-screening experiments

    Hospital Mortality - a neglected but rich source of information supporting the transition to higher quality health systems in low and middle income countries.

    BACKGROUND: There is increasing focus on the strength of primary health care systems in low and middle-income countries (LMIC). There are important roles for higher quality district hospital care within these systems. These hospitals are also sources of information of considerable importance to health systems, but this role, as with the wider roles of district hospitals, has been neglected. KEY MESSAGES: As we make efforts to develop higher quality health systems in LMIC we highlight the critical importance of district hospitals focusing here on how data on hospital mortality offers value: i) in understanding disease burden; ii) as part of surveillance and impact monitoring; iii) as an entry point to exploring system failures; and iv) as a lens to examine variability in health system performance and possibly as a measure of health system quality in its own right. However, attention needs paying to improving data quality by addressing reporting gaps and cause of death reporting. Ideally enabling the collection of basic, standardised patient level data might support at least simple case-mix and case-severity adjustment helping us understand variation. Better mortality data could support impact evaluation, benchmarking, exploration of links between health system inputs and outcomes and critical scrutiny of geographic variation in quality and outcomes of care. Improved hospital information is a neglected but broadly valuable public good. CONCLUSION: Accurate, complete and timely hospital mortality reporting is a key attribute of a functioning health system. It can support countries' efforts to transition to higher quality health systems in LMIC enabling national and local advocacy, accountability and action

    A comparison of Landsat 8 (OLI) and Landsat 7 (ETM+) in mapping geology and visualising lineaments: A case study of central region Kenya

    Availability of multispectral remote sensing data cheaply and its higher spectral resolution compared to remote sensing data with higher spatial resolution has proved valuable for geological mapping exploitation and mineral mapping. This has benefited applications such as landslide quantification, fault pattern mapping, rock and lineament mapping especially with advanced remote sensing techniques and the use of short wave infrared bands. While Landsat and Aster data have been used to map geology in arid areas and band ratios suiting the application established, mapping in geology in highland regions has been challenging due to vegetation land cover. The aim of this study was to map geology and investigate bands suited for geological applications in a study area containing semi arid and highland characteristics. Therefore, Landsat 7 (ETM+, 2000) and Landsat 8 (OLI, 2014) were compared in determining suitable bands suited for geological mapping in the study area. The methodology consist performing principal component and factor loading analysis, IHS transformation and decorrelation stretch of the FCC with the highest contrast, band rationing and examining FCC with highest contrast, and then performing knowledge base classification. PCA factor loading analysis with emphasis on geological information showed band combination (5, 7, 3) for Landsat 7 and (6, 7, 4) for Landsat 8 had the highest contrast and more contrast was enhanced by performing decorrelation stretch. Band ratio combination (3/2, 5/1, 7/3) for Landsat 7 and (4/3, 6/2, 7/4) for Landsat 8 had more contrast on geologic information and formed the input data in knowledge base classification. Lineament visualisazion was achieved by performing IHS transformation of FCC with highest contrast and its saturation band combined as follows: Landsat 7 (IC1, PC2, saturation band), Landsat 8 (IC1, PC4, saturation band). The results were compared against existing geology maps and were superior and could be used to update the existing maps

    Development and Sensory Evaluation of Omega-3-Rich Nile Perch Fish Oil-Fortified Yogurt

    Nile perch (Lates niloticus) is a major fish species in East Africa and its processing produces sufficient amounts of by-products containing significant amounts of long-chain polyunsaturated fatty acids (PUFAs). Due to the health benefits associated with PUFAs, they can be incorporated into commonly consumed foods such as yoghurt. This study is aimed at developing an omega-3-rich functional yoghurt and evaluating its quality and acceptability. Omega-3-rich fish oils were obtained from Nile perch fat pads in the presence and absence of a commercial food grade enzyme Alcalase. Recovery of omega-3-rich fish oil was done by centrifugation at 1000×g at room temperature. The peroxide value (PV), anisidine value (AV), total oxidation (TOTOX), and free fatty acids (FFA) were some of the quality parameters investigated. Natural yoghurt (150 ml) was prepared and spiked with 3.5 g of omega-3-rich Nile perch oil. To mask the fishy flavor and taste, four different flavors were used and sensory evaluation of the yoghurt samples was performed. The liberation of Nile perch fish oil in the absence of Alcalase gave better yield (60.7% wet weight), while the use of Alcalase gave lower yields (48.3% wet weight). Assessment of the quality of the extracted fish oils showed that all parameters were within the required limits. Sensory characterization by a panel of students showed that passion and strawberry flavors were the most liked with mean values of 4.65 and 4.625, respectively. This study revealed that substantial amounts of omega-3-rich fish oil can be extracted from Nile perch fish pads in the absence of exogenous enzymes.     A Journal Article by Dr. Betty Mbatia, a Lecturer in the Faculty of Pharmacology and Health Sciences at USIU - AfricaProcessing of Nile perch (Lates niloticus), a commercial fish in Eastern Africa; results in omega-3 polyunsaturated fatty acids (PUFA) rich by-products. Oil derived from such by-products can be incorporated in commonly consumed foods; however, these fatty acids are highly susceptible to oxidation. Honey and ascorbic acid are natural anti-oxidants that could play a role in preventing lipid oxidation. In the current study, omega-3 rich oil was extracted from L. niloticus viscera and added to yoghurt samples. The aim of the study was to investigate the biochemical and anti-oxidative parameters in honey and lemon juice and use them as antioxidants in the fortified yoghurt samples. Stability of the fortified yoghurt was monitored over one month storage period. Ascorbic acid Equivalent Antioxidant Capacity (AEAC) of lemon juice and honey were 312 ± 2.34 and 197 ± 3.65 mg/L, respectively. The DPPH radical scavenging activity showed that honey (86.16± 1.43%) tended to be highly active in the reaction with DPPH compared to lemon juice (71.29± 3.52%).After four weeks of storage, the peroxide value (PV), anisidine value (AV) and (free fatty acid) (FFA) contents were within the acceptable range with the honey fortified sample being most stable. The ascorbic acid content was highest in lemon juice fortified samples (30 mg/100g) while in honey fortified samples were below 1mg/100g. The pH in all the samples decreased slightly over time. Honey and lemon juice are therefore good natural anti-oxidants and their anti-oxidative potential can be utilized in the prevention of lipid oxidation in omega-3 fortified yoghurts

    Does the exclusion of meiofauna affect the estimation of biotic indices using stream invertebrates?

    <p>Biomonitoring of rivers is usually undertaken using information based on macroinvertebrate assemblages. However, exclusion of meiofauna (i.e. invertebrates less than 0.5 mm in size) when sorting benthic invertebrates can affect the estimation of densities and other biotic indices. In the present study, the effect of excluding the less than 0.5 mm fraction of invertebrates on estimation of benthic invertebrate indices was investigated in the Naro Moru River, Kenya. The Shannon–Wiener diversity index, Pielou’s evenness index, a multimetric index, Simpson’s diversity index, Margalef’s diversity index, mean invertebrate density, taxa richness, and Ephemeroptera, Plecoptera and Trichoptera (EPT) densities were determined. Only mean invertebrate and EPT densities differed significantly between the greater than 0.5 mm and total fractions. In conclusion, exclusion of meiofauna from invertebrate samples can affect the estimation of some stream invertebrate biotic indices.</p

    Combined signal sequence trap and macroarray analysis identifies genes associated with differential fruit softening characteristics during ripening in European and Chinese pears

    During ripening, European pear (Pyrus communis L. cv. ‘La France’) fruit undergo dramatic softening in response to increased ethylene production, whereas Chinese pear (Pyrus bretschneideri Rehd. cv. ‘Yali’) fruit remain firm, despite producing large amounts of ethylene. The molecular basis of this differential softening behavior is not well understood. In this study, we combined a yeast-based signal sequence trap (YSST) and macroarray gene expression analysis to identify putative genes encoding secreted proteins that control pear fruit softening. We identified 22 cDNAs annotated as encoding proteins with diverse cell wall-associated functions that were up- or down-regulated during fruit ripening in ‘La France’. Gene expression analysis in fruit that were treated with the ethylene perception inhibitor 1-methylcyclopropene (1-MCP) at 4 d after the onset of ripening revealed that 16 of the targeted genes are ethylene-regulated, while the others appear to be ethylene independent. Comparative gene expression analyses of ‘La France’ and ‘Yali’ fruit during ripening suggested that four ethylene-regulated cDNAs encoding cell wall modifying proteins, contig 2 (polygalacturonase 3), contig 15 (expansin), contig 19 (expansin) and contig 55 (pectate lyase) contribute to the different softening behaviors of ‘La France’ and ‘Yali’ fruit. Additionally, one ethylene-independent cell wall related gene, contig 36 (expansin), and three genes encoding proteins of unknown function, contigs 1, 13 and contig 75 showed differential expression between ‘La France’ and ‘Yali’ fruit during ripening. The results presented herein represent promising candidates for future functional analysis and elucidation of softening mechanisms
