    İnsan ve çevre birbirinden ayrılmaz bir bütün olarak birbirini etkileyen ve dönüştüren bir yapıdır. Bu yapı kendini hem mikro hem de makro alanlarda gösterir. Kent belleği, kent kimliğinin ayrılmaz bir parçası olarak kent sakinlerinin kültürel, sosyal, tarihsel deneyimleriyle birlikte inşa ettikleri bir kolektif bellektir. Araştırma, coğrafi konumu ve sahip olduğu özellikler sebebiyle antik dönemden itibaren farklı kültürlerin yaşadığı bir kent olan İzmir'de gerçekleştirilmiştir. Kentte yaşayan grupların kültürel özellikleri, kenti kullanım pratikleri ve yaşanan tarihsel döneme göre değişen İzmir Kent Belleği'nin geçmişten günümüze değişimi farklı özelliklere sahip etnik gruplara ve zamana göre incelenmiştir. Bu değişimin araştırılmasının pek çok sebebi vardır. İlki, değişen kimlik mekânlarının ve bu mekânlarda gerçekleştirilen etkinliklerin farklı etnik gruplar temelinde incelenerek görünür kılınmasıdır. İkinci amaç, kent sakinlerinin kente dair düşüncelerinin tespit edilmesi ve eleştiriler vasıtasıyla daha yaşanabilir bir kent konusunda ışık tutmaktır. Üçüncü amaç zaman içinde yok olan mekân ve etkinliklerin tespiti, günümüz mekân ve etkinliklerin keşfi ile değişen kent kimliğini görünür kılmaktır. Bu amaç doğrultusunda İzmir'de en az 30 yıldır yaşayan, İzmir'e göçle gelen veya İzmir'de doğmuş olan ve farklı tarihsel arka planlara sahip 12 ayrı grubun, İzmir temsilleri ve bir mekân olarak İzmir'i kullanım pratikleri araştırılmıştır. Araştırma İzmir'in farklı bölgelerinde yaşayan toplam 33'ü kadın 26'sı erkek olmak üzere toplamda 59 katılımcı ile yapılan derinlemesine görüşmelerden oluşmaktadır. Görüşmelerin transkripsiyonu sonunda elde edilen metinler içerik analiziyle incelenmiştir. Sonuçlar İzmir'de yaşayan tüm gruplar için benzerlik göstermektedir. Geçmişten günümüze olanak ve hizmetlerin artmış olmasına karşın; geçmiş dönemde daha fazla çeşit ve sayıda İzmir mekânı ve mekânda gerçekleştirilen etkinlik belirtildiği görülmektedir. Belirtilen mekânların tespiti ile İzmir Kent Belleği'nin değişen yönleri belirlenmiştir. Bu bağlamda sonuçlar ve sınırlılıklar literatür ışığında tartışılmıştır.Human and the environment are structures that interact and transform each other as an integral whole. This structure shows itself in both micro and macro areas. Urban memory is a collective memory that is built as an integral part of urban identity, together with the cultural, social and historical experiences of the inhabitants of the city. The research was carried out in İzmir, a city where different cultures lived since ancient times due to its geographical position and characteristics. The daily change of the İzmir Urban Memory, which varies according to the cultural characteristics of the groups living in the city, the usage practices of the city and the historical turning around, has been examined according to the ethnic groups and time with different characteristics. There are many reasons to investigate this change. The first is to make visible the changing identity spaces and the activities performed in these spaces on the basis of the group. The second aim is to shed light on a more livable city through the identification of urban inhabitants' thoughts and criticism. The third purpose is to identify the places and events that have disappeared over time, and to make the changing urban identity visible through the discovery of today's spaces and events. For this purpose, Izmir representations and practices of using İzmir as a place of 12 different groups living in İzmir for at least 30 years, who migrated to İzmir or who were born in Izmir and have different historical backgrounds, were searched. The research consists of in-depth interviews with a total of 59 participants, 33 of whom are women and 26 of whom are men, living in different regions of Izmir. The texts obtained at the end of the transcription of the interviews were analyzed by content analysis. The results are similar for all groups living in İzmir. Despite the increase in daily facilities and services from the past; it is observed that in the past period, more and more kinds of İzmir places and activities were realized. The changing aspects of İzmir Urban Memory have been determined with the determination of the mentioned places. The conclusions and limitations in this context are discussed in the light of literature

    Food safety challenges associated with traditional foods of Turkey

    Consumer food safety concerns are continually increasing in Turkey, with consumer demand for safer foods becoming an important challenge for the industry. Most traditional foods in Turkey are produced under different requirements, and food safety risk management and risk assessment are conducted primarily by the government. Based on risk assessment, safety regulations and standards for traditional foods (e.g. Turkish white cheese, doner, helva) have been established. In this paper, safety concerns surrounding the commercialization of traditional Turkish foods and related studies to identify and minimize potential hazards are discussed along with pathogen contamination in raw meat balls and aflatoxin in helva and white cheese. Based on this review, additional national risk analysis experts and related databases are urgently needed. In addition, the manufacturing processes for traditional foods need to be standardized and harmonized with international standards, such as CODEX

    Macedonian proverbs and riddles which contain the city of Istanbul are excerpted from folk tales as cultural works and translated into Turkish. In addition, although in some of these proverbs the city of Istanbul is not mentioned at all, the name of the city of Istanbul is still present in the stories from which the proverbs are derived. The folk tales in which these proverbs were found, which are the subject of our research, have been translated into Turkish and are included in this paper. The purpose of this study is to understand the perception of the Macedonian people about the city of Istanbul through the mediation of Macedonian folk proverbs and riddles.     Günümüze kadar optik spektrumun farklı bölgelerinde çalışan fotodetektör dizini üretimlerini bulmak mümkündür. Tez çalışması kapsamında; optik spektrumun ultraviyole (UV) bölgesinde çalışan metal oksit tabanlı, 640x512 çözünürlüğe sahip UV detektör dizininin mikrofabrikasyon yöntemleri ile üretilmesi ve üretilen fotodetektör dizininin, optik ve elektronik bileşenler birleştirilerek UV bölgede görüntü alabilen kamera geliştirilmesi amaçlanmıştır. Geniş bant enerjisine sahip Metal Oksit malzemelerin UV ışığı soğurma özellikleri kullanılarak fotodetektör tasarımı ve bu fotodetektörlerin 640x512 satır sütun boyutlarında matris şeklinde dizilimlerinden Metal Oksit fotodetektör dizini oluşturulmuştur. Fotodetektör dizini üretimi İ.D. Bilkent Üniversitesi NANOTAM laboratuvarlarında bulunan sınıf 100 temiz odalarda gerçekleştirilmiş olup, fotolitografi, ince film büyütme gibi mikro fabrikasyon teknikleri kullanılarak yapılmıştır. Aygıtların üretiminde safir alttaş üzerine fotolitografi, RF magnetron saçtırma, termal ve elektron demeti buharlaştırma yöntemleri kullanılarak incefilmler katmanlar ile fotodetektör dizininin yapısı oluşturulmuştur. Üretilen fotodetektör dizinlerinin elektriksel ve optik karakterizasyonu yapılmış olup 365 nm dalga boyu için 0.65 A/W tepkiselliğe sahip ve 250 nm ile 400 nm arasında tepki veren fotodetektör ve fotodetektör dizini üretilmiştir. Üretilen fotodetektör dizini kamera elektroniğine bağlanmıştır. Kamera optiği ve kamera elektroniği ile birlikte UV bölgede görüntü alabilen kamera haline gelmiştir.To date, it is possible to find photodetector array production in different regions of the optical spectrum. Within the scope of thesis study; It is produced by microfabrication methods of UV detector array with 640x512 resolution based on Metal Oxide base working in ultraviolet (UV) region of optical spectrum. The produced photodetector array, optical and electronic components are combined to develop a camera that can receive images in the UV region. In the literature, no UV images taken with Metal Oxide photodetector array have been reported so far. The Metal Oxide photodetector array has been formed from the matrix-shaped sequences of the 640X512 line column dimensions of the photodetector using UV light absorption properties of Metal Oxide materials with broad band energy. The photodetector array was produced in Bilkent University class 100 clean rooms. In the fabrication of devices, was performed using micro-fabrication techniques such as thin-film magnification and photolithography. In the fabrication of the devices, photolithography, RF magnetron scattering, thermal and electron beam evaporation methods were used on the sapphire bottomstone, photodetector array was formed using structure of thin film layers. Electrical and optical characterization of the produced photodetector sequences has been made and photodetector and photodetector array which has a responsivity of 0,65 A/W at 365 nm wavelength and response between 250 nm and 400 nm have been produced.     Newborn intestinal obstruction due to mesenteric lymphangioma: A diagnostic challenge

    Lymphatic malformations are uncommon benign cystic lesions that typically present in the neck and axilla during infancy. They are more rarely observed in the abdomen and extremities. This study presents the case of a newborn infant who was admitted to the hospital with vomiting. While the cause of the vomiting was investigated, a complete intestinal obstruction developed, and an emergency surgical intervention was performed. During a laparotomy, a cystic mass originating from the mesentery was discovered. A lymphangioma mass resulting in intestinal obstruction during the third week of life was not considered in the differential diagnosis

    Determination of Antifungal Effect of Edible Coatings Containing Williopsis saturnus var. saturnus Against Yeast and Mold Growth on Kashar Cheese

    One of the most important problems of Kashar cheese producers is mold and yeast spoilage during storage. Williopsis saturnus var. saturnus killer yeast has been reported to have an antagonistic effect on mold and yeast reproduction. In this study, the antifungal effect of a whey protein concentrate (WPC) coating containing W. saturnus was investigated in Kashar cheese. WPC with or without W. saturnus (7 log CFU/g) or W. saturnus without coating was applied on the surface of Kashar cheese samples and stored at 4 degrees C for 56 days. Microbiological, chemical, physical and sensory properties of cheese samples were assessed.After 56 days of storage, the numbers of lactic acid bacteria were not affected by WPC containing W. saturnus; however,the population of W. saturnus increased by 1 log CFU/g. Application of W. saturnus reduced the growth of other yeasts and molds (P < 0.05). Chemical, physical and sensory properties of all coated cheeses remained unchanged. In a conclusion, use of WPC coatings containing W. saturnus can potentially minimize mold and yeast spoilage of cheese during storage

    Effects of edible coating containing Williopsis saturnus var. saturnus on fungal growth and aflatoxin production by Aspergillus flavus in peanuts

    Production of aflatoxin by Aspergillus flavus in peanuts is both a health hazard and major problem. This study investigated the ability of a whey protein concentrate (WPC)-based edible coating containing Williopsis saturnus var. saturnus to prevent growth of A. flavus and aflatoxin production in peanuts. WPC with/without W. saturnus (7 log colony-forming unit [CFU]/g) or W. saturnus alone was sprayed on peanuts inoculated with A. flavus (3 log CFU/g) and stored for 84 days at 25 degrees C. Application of coating with W. saturnus reduced both growth of A. flavus and aflatoxin level by 82 and 69.5% compared with the control, respectively. Thiobarbituric acid values were around 60% lower in peanuts coated with WPC compared with the control. Sensory and chemical properties of peanuts were not significantly affected by coating treatment (p < .05). Based on results, coating with W. saturnus appears useful in preventing both growth of A. flavus and aflatoxin production in peanuts.
