    Analysis of kefir information propagated in digital media

    The amount of available information in the media grows continuously and, frequently, it does not have a basis in the scientific literature. In the area of ​​food and nutrition, the contents are available on social media profiles, websites and blogs, which usually appoint some foods as “superfoods” – able of curing diseases or inhibiting their development –  or, on the other hand, classifying other foods as the cause of damage to health. Kefir-based products can be classified in the first category, being considered a “superfood” by the media. Thus, the aim of this study is to search for information about kefir in digital media and to evaluate such information based on scientific articles. The contents were collected from 50 websites or blogs, using Google as a search tool. The data obtained were divided into 25 positive categories and 5 negative categories. One made a comparison with the scientific literature. Analyzing the information about kefir, the majority has a scientific basis, however, digital media put the research data in a superficial way, without clear information to readers

    A população idosa vem aumentando no Brasil e no mundo e nessa faixa etária ocorrem várias alterações fisiológicas, nos ossos, articulações, músculos, sistema respiratório, cardíaco, digestório que comprometem o condicionamento físico, a composição corporal e a saúde. Entre os idosos, a avaliação nutricional precisa considerar as características associadas ao processo de envelhecimento, como dificuldades de cognição, concentração, memória, visão ou audição e até moradia, inclusive o fato de alguns viverem em instituições de longa permanência (ILP). A avaliação do estado nutricional é importante para a prevenção e para o tratamento no contexto do envelhecimento. Sendo assim, o objetivo desse estudo foi avaliar o estado nutricional de idosos em três instituições de longa permanência, utilizando diferentes indicadores antropométricos. Métodos: Foram avaliados a idade, o peso, a altura, a prega cutânea tricipital (PCT), as circunferências do braço (CB), da panturrilha (CP), da cintura (CC), posteriormente calculadas a circunferência muscular do braço (CMB), a área muscular do braço (AMB) e o Índice de Massa Corporal (IMC), em 40 idosos Resultados: A idade variou de 61 a 95 anos (média = 74,6 anos), residentes em três ILP na cidade de Mogi Mirim/SP. Na população estudada predominou o gênero feminino 52,5% (n = 21). O estado nutricional variou conforme o indicador antropométrico estudado. Por meio do IMC para idade, índice mais utilizado internacionalmente, verificou-se 27,5 % da população estudada era desnutrida, porém quando foi utilizado a CMB 100% dos idosos apresentaram comprometimento muscular, corroborando a avaliação da circunferência da panturrilha. Outro ponto a destacar e estratificado por gênero, o feminino atingiu 42,5% riscos para doenças cardiovasculares, com circunferência da cintura (? 80cm) comprometimento, maior que o do gênero masculino (CC ? 94 cm), esse com 15% da população. Conclusão: A correlação do IMC foi forte, demostrou ser importante, com vários indicadores antropométricos CC, CB e PCT no geral. Esses dados corroboraram com a literatura destacando a importância de associar vários métodos de avaliação nutricional para a obtenção de um diagnóstico nutricional mais seguro, pois não existe um padrão-ouro para avaliação nutricional. 

    A NUTRITION VIEW OF COVID 19 IN THE PANDEMIC

    COVID-19 is a disease caused by a coronavirus, called SARS-CoV-2. This virus has become a major public health concern worldwide, causing a collective outbreak, leading to the pandemic in 2020. People become infected with other common coronaviruses throughout their lives, but currently the concern is the COVID-19 type due to its severity in some cases. The immune system protects the body against external aggressions and preserves the body\u27s homeostasis, and nutrients are involved in the development and preservation of this system. Considering the degree of complications that can occur in an individual with COVID-19, regardless of their age group, and in some cases even lethal, there was an interest in researching studies about this disease, and which nutrients are mentioned in the literature regarding immunity in this disease. The aims of this research were to describe concepts about the disease COVID-19 and to identify nutrients involved in the immunity and treatment of this disease, through a literature review in the period from December 2019 to October 2020. There is no doubt that it is essential to maintain an adequate nutritional status, through a balanced diet that can contribute to a better coping with the infectious state. Supplementation of vitamins, minerals, probiotics and prebiotics can provide the immune system, several of them were cited as an adjunct to the treatment of COVID-19, including their doses, but there was a lack of agreement regarding the dose of nutrients. Obviously maintaining social distance, wearing masks and proper hygiene are essential to reduce the risk of contamination, while not having access to vaccination

    Increase of cholesterol oxidation and decrease of pufa as a result of thermal processing and storage in eggs enriched with n-3 fatty acids

    In this work, cholesterol oxide formation and alteration of fatty acid composition were analyzed in n-3 enriched eggs under different storage periods and two temperatures. The eggs enriched with n-3 fatty acids were stored at 5 or 25 °C for 45 days and subsequently boiled or fried. For each treatment, 12 yolks were analyzed every 15 days including time zero. The concentrations of the cholesterol oxides 7-ketocholesterol, 7β-hydroxycholesterol, and 7α-hydroxycholesterol increased during the storage period and were higher in fried eggs. Only the 7-ketocholesterol was affected by the storage temperature, and its concentration was highest in eggs stored at 25 °C. There was no significant difference in the contents of cholesterol and vitamin E at the different storage periods; however, the concentration of vitamin E decreased with thermal treatment.
