    SOME REMARKS ON THE HIGHEST WIND SPEED VALUES IN LUBLIN

    This paper presents and analysis of the highest wind speed values recorded at the Meteorological Observatory of the Maria Curie-Skłodowska University in Lublin. The study uses values recorded data (3 times a day) for the period 1981–2005. During the 25 years of the study period there were 19 occasions of wind speed ≥ 10 m·s-1 and 14 cases of winds gusting at or over 20 m·s-1. Both kinds of situation were noticed most often in January and did not occur in May, June, July or August.

    The pathophysiology of coronavirus disease-19 (COVID-19) is characterized by worsened inflammation because of weakened immunity, causing the infiltration of immune cells, followed by necrosis. Consequently, these pathophysiological changes may lead to a life-threatening decline in perfusion due to hyperplasia of the lungs, instigating severe pneumonia, and causing fatalities. Additionally, severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) infection can cause mortality due to viral septic shock, resulting from unrestrained and backfiring immune reactions to the pathogen. Sepsis can cause premature organ failure in COVID-19 patients, as well. Notably, vitamin D and its derivatives and minerals, such as zinc and magnesium, have been reported to improve the immune system against respiratory illnesses. This comprehensive review aims to provide updated mechanistic details of vitamin D and zinc as immunomodulators. Additionally, this review also focuses on their role in respiratory illnesses, while specifically delineating the plausibility of employing them as a preventive and therapeutic agent against current and future pandemics from an immunological perspective. Furthermore, this comprehensive review will attract the attention of health professionals, nutritionists, pharmaceuticals, and scientific communities, as it encourages the use of such micronutrients for therapeutic purposes, as well as promoting their health benefits for a healthy lifestyle and wellbeing

    Background: Bee bread is a product of the fermentation of a mixture of pollen, nectar and bee saliva that is inoculated by a wide range of bacteria and yeasts necessary for fermentation after storage in comb cells. Bee bread is regarded as the chief protein resource that bees can utilize, especially for feeding of larvae and adults. Since ancient times, bee bread has been used in different cultures for several nutritional and therapeutic purposes. Scope and approach: In this review, we attempt to highlight the possible biological activities, chemical components, methods of isolation and structure of bee bread in addition to its food supplement value and/or medical applications. Key findings and conclusions: Bee bread has been shown to exhibit antimicrobial, antioxidant, antiradical, anticancer, and anti-inflammatory activities. The basic chemical components of bee bread include carbohydrates, proteins and vitamins, as well as minerals, fatty acids and other substances such as enzymes, natural antibiotics, antioxidants and hormones. Bee bread is considered to be a beneficial food supplement. In recent years, there has been significant interest in the use of bee bread to treat many illnesses

    Selenium is a micronutrient that is essential for the proper functioning of all organisms. Studies on the functions of selenium are rapidly developing. This element is a cofactor of many enzymes, for example, glutathione peroxidase or thioredoxin reductase. Insufficient supplementation of this element results in the increased risk of developing many chronic degenerative diseases. Selenium is important for the protection against oxidative stress, demonstrating the highest activity as a free radical scavenger and anti-cancer agent. In food, it is present in organic forms, as exemplified by selenomethionine and selenocysteine. In dietary supplementation, the inorganic forms of selenium (selenite and selenate) are used. Organic compounds are more easily absorbed by human organisms in comparison with inorganic compounds. Currently, selenium is considered an essential trace element of fundamental importance for human health. Extreme selenium deficiencies are widespread among people all over the world. Therefore, it is essential to supplement the deficiency of this micronutrient with selenium-enriched food or yeast cell biomass in the diet

    Selenium plays a key role in the proper metabolism of living organisms. The search for new selenium compounds opens up new possibilities for understanding selenometabolome in yeast cells. This study was aimed at the identification of compounds containing selenium in the feed yeasts Candida utilis ATCC 9950. Yeast biomass was kept in aqueous solutions enriched with inorganic selenium (20 mg&#183;L&#8722;1) for 24 h. Speciation analysis of the element was performed using the HPLC-ICP-MS and UHPLC-ESI-Orbitrap MS techniques. The obtained selenium value in the yeast was 629 &#956;g&#183;g&#8722;1, while the selenomethionine value was 31.57 &#956;g&#183;g&#8722;1. The UHPLC-ESI-Orbitrap MS analysis conducted allowed for the identification of six selenium compounds: dehydro-selenomethionine-oxide, selenomethionine, selenomethionine-NH3, a Se-S conjugate of selenoglutathione-cysteine, methylthioselenoglutathione, and 2,3-DHP-selenocysteine-cysteine. In order to explain the structure of selenium compounds, the selected ions were subjected to fragmentation. The selenium compounds obtained with a low mass play a significant role in the metabolism of the compound. However, the bioavailability of such components and their properties have not been fully understood. The number of signals indicating the presence of selenium compounds obtained using the UHPLC-ESI-Orbitrap MS method was characterized by higher sensitivity than when using the HPLC-ICP-MS method. The obtained results will expand upon knowledge about the biotransformation of selenium in eukaryotic yeast cells. Future research should focus on understanding the entire selenium metabolism in cells and on the search for new transformation pathways for this element. This opens up new possibilities for obtaining functional food, rich in easily absorbable selenium sources, and constituting an alternative to dietary supplements based on this compound found primarily in inorganic form

    Microbial transglutaminases (mTGs) belong to the family of global TGs, isolated and characterised by various bacterial strains, with the first being Streptomyces mobaraensis. This literature review also discusses TGs of animal and plant origin. TGs catalyse the formation of an isopeptide bond, cross-linking the amino and acyl groups. Due to its broad enzymatic activity, TG is extensively utilised in the food industry. The annual net growth in the utilisation of enzymes in the food processing industry is estimated to be 21.9%. As of 2020, the global food enzymes market was valued at around 2.3billionUSD(mTGmarketwasestimatedtobearound2.3 billion USD (mTG market was estimated to be around 200 million USD). Much of this growth is attributed to the applications of mTG, benefiting both producers and consumers. In the food industry, TG enhances gelation and modifies emulsification, foaming, viscosity, and water-holding capacity. Research on TG, mainly mTG, provides increasing insights into the wide range of applications of this enzyme in various industrial sectors and promotes enzymatic processing. This work presents the characteristics of TGs, their properties, and the rationale for their utilisation. The review aims to provide theoretical foundations that will assist researchers worldwide in building a methodological framework and furthering the advancement of biotechnology research
