    Influence of beef genotypes on animal performance, carcass traits, meat quality, and sensory characteristics in grazing or feedlot-finished steers

    A 2-yr study was conducted to evaluate the effects of beef genotypes and feeding systems on performance, carcass traits, meat quality, and sensory attributes. A 2×2 factorial experiment was used to randomly allocate 60 steers in year 1 (YR1) and 44 steers in year 2 (YR2). The two beef genotypes evaluated were Red Angus (RA), and RA x Akaushi (AK) crossbreed. The steers were allotted to two finishing feeding systems: grazing, a multi-species forage mixture (GRASS) and feedlot finishing, conventional total mixed ration (GRAIN). All steers were slaughtered on the same day, at 26 and 18 mo of age (GRASS and GRAIN, respectively), and carcass data were collected 48 h postmortem. Growth and slaughter characteristics were significantly impacted by the finishing system (P 0.10) between the two genotypes, except that steaks from AK tended to be juicier than RA (P = 0.06). Thawing loss and color variables were impacted by the finishing system (P < 0.01). L* (lightness) and hue angle presented greater values while a* (redness), b* (yellowness), and chroma presented lower values in GRAIN compared to GRASS. Sensory attributes were scored better in GRAIN than GRASS beef (P < 0.01). There was a genotype by system interaction for flavor (P = 0.02), where beef from RA had a lower flavor rating in GRASS than in GRAIN, and no difference was observed for AK. Within each system, no difference was observed for flavor between RA and AK. Beef from steers in GRASS had greater (P < 0.01) WBSF than those from GRAIN. These results indicate that steers from GRAIN had superior performance and carcass merit and that AK enhanced these traits to a greater degree compared to RA. Furthermore, the beef finishing system had a marked impact on the steaks’ sensory attributes and consumer acceptability. The favorable results for texture and juiciness in GRAIN, which likely impacted overall acceptability, may be related to high marbling

    O Brasil está no 14º lugar entre os 23 países responsáveis por 80% dos casos da doença no mundo. Buscando compreender a manutenção desses índices, estruturou-se este estudo, com o objetivo de identificar se o conhecimento, sobre a tuberculose, de médicos e enfermeiros que trabalham na Estratégia de Saúde da Família no município de Vitória (ES), seria um fator relevante na mediação dos processos de prevenção, diagnóstico e tratamento da tuberculose. É um estudo de corte transversal, tendo como amostra 50 profissionais. Os dados coletados foram analisados utilizando-se o teste qui-quadrado exato de Fischer com o nível de significância de 0.05. Em relação à transmissão e ao diagnóstico da tuberculose, não houve diferença estatisticamente significativa entre médicos e enfermeiros. Apenas uma variável apresentou diferença estatística: 41% dos médicos e 15% dos enfermeiros (p<0,05) disseram que o paciente deve ser assistido em um local de escolha do médico ou enfermeiro, e ainda 4% do total da amostra responderam que a supervisão não pode ser feita por um membro da família. A pesquisa comprova que médicos e enfermeiros possuem conhecimento para reduzir os índices da tuberculose, embora sejam indispensáveis o contínuo estudo e capacitação desses profissionais.<br>Brazil is in 14th among the 23 countries responsible for 80% of the tuberculosis (TB) cases in the world. Aiming to understand the maintenance of these indexes, this study was developed to identify if the knowledge about tuberculosis by doctors and nurses, who work in the Family Health Strategy in the city of Vitória (ES), would be a factor in the mediation of the prevention processes, diagnosis and treatment of the Tuberculosis. This is a cross-sectional study, with a sample size of 50 professionals. The collected data had been analyzed using the Chi-square and Fisher Exact tests with significance level of 0.05. Regarding the transmission and diagnosis of the Tuberculosis, there was no statistically significant difference between doctors and nurses. Only one variable presented a statistical difference: 41% of doctors and 15% of the nurses (p<0,05) mentioned that the patient must be attended in a place of choice of the doctor or nurse, and still, 4% of the total of the sample had answered that the supervision cannot be made by a member of the family. The research proves that doctors and nurses has knowledge to reduce the indexes of Tuberculosis, even so is indispensable the continuous study and qualification of these professionals

    Análise de gênero para o adoecer de câncer

    O objetivo deste estudo foi compreender o processo do adoecimento de câncer, em homens e mulheres, na perspectiva do gênero. Participaram como informantes quatro mulheres e três homens, portadores de câncer de cólon e reto que estavam em tratamento ambulatorial, numa Instituição de Saúde Privada, no município de Fortaleza-CE, no mês de julho de 2008. As informações foram coletadas por entrevista semi-estruturada sendo organizadas em categorias conforme análise de conteúdo e analisadas consoante estudiosos da temática de gênero. As categorias que emergiram foram: O adoecimento de câncer: fragmentações e limitações na vida; uma vida em transformação: das ameaças às superações. Os depoimentos elucidam todo o processo de adoecimento de câncer e a percepção de gênero sobre este evento além de revelar que os estereótipos criados pela sociedade acerca de gênero também se traduzem no comportamento apresentado pelas pessoas que adoecem de câncer
