    Parâmetros qualitativos da carne de cordeiros submetidos aos modelos de produção orgânico e convencional

    Este trabalho objetivou avaliar parâmetros qualitativos da carne, análise sensorial e quantificação de resíduo de droga veterinária e metais pesados provenientes de 48 cordeiros Ile de France submetidos aos modelos de produção orgânico e convencional, os quais foram abatidos aos 32 kg de peso corporal. A carne dos cordeiros do modelo orgânico teve maior teor de amarelo que a dos cordeiros do modelo convencional aos 45 minutos após o abate, sendo que os demais parâmetros L* e a* não foram afetados, já a cor da carne dos cordeiros 24 horas após o abate, não foi influenciada pelos tratamentos. Não houve efeito dos tratamentos no pH e na temperatura aos 45 minutos e 24 horas após o abate, na capacidade de retenção de água e na força de cisalhamento, enquanto as perdas de peso na cocção foram influenciadas pelos tratamentos. Na carne dos cordeiros criados no modelo orgânico, a maciez subjetiva e a aceitação global foram inferiores quando comparadas às do modelo convencional.Os tratamentos não influenciaram os teores de arsênio, cádmio e chumbo da carne. Constatou-se inexistência do princípio ativo ivermectina na carne proveniente dos modelos de produção orgânico e convencional.This work aimed to evaluate qualitative parameters of meat, sensorial analysis, ivermectin residue and heavy metals from 48 Ile de France lambs submitted to organic and conventional production models which were slaughtered at 32 kg of body weight. Lamb meat from organic model had larger yellowness when compared to conventional model 45 minutes after the slaughter, but L * and a* parameters were not affected; however, not even the color of lamb meat 24 hours after the slaughter was influenced by treatments. There was not effect of treatments in pH and temperature at 45 minutes and 24 hours after the slaughter, in water holding capacity and in shear force, while the cooking losses were influenced by treatments. In the meat of lambs submitted to organic model, the subjective tenderness and the global acceptance were lower when compared to convencional model. Treatments didn't influence arsenic, cadmium and lead meat tenor. Inexistence of ivermectin was verified in meat from organic and conventional production models

    Influence of different nitrogen sources on the digestibility of diets based on sugarcane

    In order to evaluate the effects of different nitrogen sources (soybean meal - FS, corn gluten meal - GL, and urea - UR) on the digestibility of diets based on sugarcane, five rumen fistulated crossbred cattle, four years old and 470 kg mean live weight (LW), were used in a completely randomized block design experiment, with five treatments: T1, 99.25% sugarcane + 0.75% UR; T2, 93.24% sugarcane + 6.76% FS; T3, 95.87% sugarcane + 3.79% FS + 0.34% UR; T4, 94.78% sugarcane + 5.22% GL; and T5, 96.77% sugarcane + 2.88% GL + 0.35% UR, and four replications in time. Digestibility coefficients were determined using chronic oxide as an external indicator, as were digestible energy (DE) content and total digestible nutrients (TDN). The nitrogen sources had no effect (P>0.05) on digestibility coefficients of dry matter (DM), crude protein, crude fiber, ether extract, neutral detergent fiber, acid detergent fiber, nitrogen-free extract, and organic matter, nor on TDN content, but the digestibility of gross energy was influenced (P < 0.05) by nitrogen sources, means being 76.0 and 66.75% for T4 and T1, respectively. The DE value was also influenced by nitrogen sources, T4 (3.89 Mcal/kg DM) being higher (P<0.01) than T3 (3.37 Mcal) and T1 (3.18 Mcal). The daily intake of sugarcane DM (% LW) varied from 1.03 (T5) to 1.28 (T2) without significant differences (P>0.01)

    Objetivou-se avaliar as características quantitativas in vivo, da carcaça e dos cortes comerciais de cordeiros alimentados com dietas contendo 0; 12,5 e 25,0% de feno de amoreira em substituição ao concentrado. Foram utilizados vinte e quatro cordeiros Ile de France, com aproximadamente 60 dias de idade e 15 kg de peso corporal, confinados em baias individuais e abatidos aos 32 kg. Houve efeito linear crescente (R2 = 0,84) para a profundidade do tórax, índice de musculosidade da perna (R2=0,71) e para a relação músculo:osso (R2=0,95); decrescente (R2 =0,75) para o índice de compacidade da carcaça, peso da paleta (R2 = 0,78) e peso (R2=0,99) e comprimento (R2=0,86) do fêmur à medida que se aumentou o feno de amoreira na dieta; e comportamento quadrático para perdas por resfriamento (R2=1,0) e porcentagem de gordura intermuscular. O feno de amoreira pode ser utilizado na alimentação de cordeiros confinados sem prejudicar as características quantitativas da carcaça

    Quantitative and qualitative characteristics of the non-carcass components and the meat of lambs fed sunflower seeds and vitamin E

    The objective of this investigation was to evaluate the weight and percentage of the non-carcass components and the mineral content (macro minerals and trace minerals), crude protein, ether extract, moisture and vitamin E of the heart, liver, tongue, lungs, reticulum, kidneys and meat from the longissimus dorsi of lambs in feedlot finishing. Thirty-two non-castrated Ile de France male lambs, fed diets containing sunflower seeds and vitamin E from 15 to 32 kg of body weight were allotted in a completely randomized design in a 2 × 2 factorial arrangement. The weight of the gastrointestinal tract was higher in the lambs fed diets containing vitamin E (10%). No difference was observed in the liver as to the mineral matter, crude protein, ether extract, moisture (2.01; 20.03; 2.39 and 74.78 g/100 g, respectively), the macro minerals and trace minerals, except iron. In the tongue, lungs, reticulum, kidneys and meat there was no in fluence of diets in the studied variables. The liver and the meat presented different values of crude protein (20.01 and 18.34 g/100 g, respectively), and the heart (1.03 mg/100 g) showed a higher content of vitamin E. High contents of manganese, zinc and copper were observed in the liver. The evaluated non-carcass components were nutritionally equal to the sheep meat, once, in addition to their high yield in relation to the body weight at slaughter, the non-carcass components are sources of nutrients
