    Developing Culinary Tourism Experiences for Inbound Travellers in Vietnam

    In recent years, the growing popularity of Vietnamese cuisine has become an attraction of the country that motivates an increasing number of travellers to visit Vietnam to taste the cuisine. Together with food tasting, there is a wide variety of activities related to food that have the potentiality to attract international visitors. The main goal of this thesis was to provide suggestions and directions to develop culinary tourism experiences for foreign visitors in Vietnam by finding out their perspective towards current gastronomic experiences in the destination country and discovering how satisfied they were when engaging in food-involved activities. The paper also discussed inbound travellers’ expectations for culinary experiences prior to the travels in Vietnam together with post-travel feelings and behaviours. The thesis used mixed methods, in which qualitative method was primarily adopted to answer the research issue. An electronic survey was conducted and posted on different social channels. Simultaneously, interviews were carried out with the support of two experienced stakeholders working in the tourism sector. The findings of the research revealed that most of the inbound tourists were satisfied with their food experiences in Vietnam. Generally, those experiences met their expectations, yet they still lacked some elements to go beyond what they expected. The results also showed that the country had various potentialities and advantageous opportunities to develop this emerging niche market. On the other hand, several existent problems present a threat to its growth. Amid those controversies, development solutions were suggested in an attempt to tackle the problems as well as to improve the experiences of future international visitors in the country

    Growth and morphological responses of Halophila beccarii to low salinity

    Halophila beccarii Ascherson is classified as a threatened seagrass species by IUCN because of the reductive tendency of ​​its distribution area. This seagrass is considered a euryhaline species adapted to a wide range of salinities from freshwater and brackish water to marine water. Previous studies showed that the species tends to grow better under low salinity; however, its optimum salinity has not been determined. In Vietnam, H. beccarii grows in habitats with low salinity (0–20 ppt). The results show that salinity affects the growth, survival rate, shoot density, biomass, and morphological characteristics of the grass. The leaf dimension is more prolonged and broader; the petiole and shoot length are longer at 10 ppt salinity. In contrast, both the number of shoots and biomass peak at 5 ppt and decrease at lower and higher salinities. The study reveals that H. beccarii can grow better under mesohaline conditions than freshwater and hypersaline conditions with an optimum salinity at 5–10 ppt. These findings would explain the species’ distribution dynamics in coastal environments and be helpful information for conserving the seagrass populations in habitats with fluctuating salinity as coastal lagoons in Central Vietnam

    NONLINEAR CHARACTERISTICS OF SQUARE SOLID-CORE PHOTONIC CRYSTAL FIBERS WITH VARIOUS LATTICE PARAMETERS IN THE CLADDING

    Nonlinear characteristics of fused silica, solid-core photonic crystal fibers (PCFs) with a square array of air holes are studied numerically. We present a novel design that emphasizes the difference in air hole diameters in the photonic cladding. These PCFs have the advantages of flat dispersion, high nonlinearity, and low attenuation. Based on simulation results, three optimal structures, denoted #F1, #F2, and #F3, having anomalous and all-normal dispersions in the near-infrared range are selected to investigate characteristic properties at the pump wavelength. Such PCFs open up many possibilities for nonlinear optical applications, especially supercontinuum generation

    INFLUENCE OF STRUCTURAL PARAMETERS ON OPTICAL CHARACTERISTICS OF PHOTONIC CRYSTAL FIBERS WITH CIRCULAR LATTICE

    We demonstrate in this study that near-zero, ultra-flattened chromatic dispersion can be achieved over a wide range of wavelengths in photonic crystal fibers (PCFs) by means of slight variations in the geometrical parameters of the cladding. To do that, a new solid-core circular PCF design with various air hole diameters and lattice constants is presented, and the design features are numerically analyzed in detail. After 40 simulations, we determined three structures that possess optimal dispersion with the following lattice constants (Ʌ) and filling factors for the first ring (d1/Ʌ): Ʌ = 0.8 µm, d1/Ʌ = 0.45 for #F1, Ʌ = 0.9 µm, d1/Ʌ = 0.45 for #F2, and Ʌ = 1.0 µm, d1/Ʌ = 0.45 for #F3. High nonlinearity and low attenuation are outstanding features of our model. With these advantages, the proposed fibers are targeted for smooth flat broadband supercontinuum generation for near-infrared applications

    The Epidemiology of Interpandemic and Pandemic Influenza in Vietnam, 2007–2010: The Ha Nam Household Cohort Study I

    Prospective community-based studies have provided fundamental insights into the epidemiology of influenza in temperate regions, but few comparable studies have been undertaken in the tropics. The authors conducted prospective influenza surveillance and intermittent seroprevalence surveys in a household-based cohort in Vietnam between December 2007 and April 2010, resulting in 1,793 person-seasons of influenza surveillance. Age- and sex-standardized estimates of the risk of acquiring any influenza infection per season in persons 5 years of age or older were 21.1% (95% confidence interval: 17.4, 24.7) in season 1, 26.4% (95% confidence interval: 22.6, 30.2) in season 2, and 17.0% (95% confidence interval: 13.6, 20.4) in season 3. Some individuals experienced multiple episodes of infection with different influenza types/subtypes in the same season (n = 27) or reinfection with the same subtype in different seasons (n = 22). The highest risk of influenza infection was in persons 5–9 years old, in whom the risk of influenza infection per season was 41.8%. Although the highest infection risk was in school-aged children, there were important heterogeneities in the age of infection by subtype and season. These heterogeneities could influence the impact of school closure and childhood vaccination on influenza transmission in tropical areas, such as Vietnam

    Gestational diabetes diagnosed in third trimester of pregnancy: an observation at a Hospital of Women and Children in Vietnam

    Background. Gestational diabetes mellitus (GDM) remains a significant concern within the medical community due to its high risk, as well as its serious side effects on both the mothers and the fetuses. This study aims to assess the prevalence and the risk factors of gestational diabetes mellitus in pregnant women at Da Nang Hospital for Women and Children.Methods. A cross-sectional study was conducted on 706 pregnant women at 2428 weeks of gestation at Da Nang hospital to determine the prevalence of gestational diabetes. Multivariate regression analysis was used to clarify the independent risk factors associated with gestational diabetes. All participants were interviewed and tested for the oral glucose tolerance test (OGTT) to identify the number of gestational diabetes, which was diagnosed according to the American Diabetes Association (ADA) diagnostic criteria in 2014.Results. Gestational diabetes prevalence was 10.2%; categorized by the number of matched diagnostic criteria: 1 criterion: 7.1%; 2 criteria: 2.1%; 3 criteria: 1.0%. There are four independent risk factors for gestational diabetes determined through multivariate regression analysis: maternal age > 30 years (OR = 2.376), a history of gestational diabetes (OR = 12.211), pre-pregnancy BMI ≥ 23 kg/m2 (OR = 10.775), a history of fetal macrosomia > 3800 g (OR = 4.655). The risk of gestational diabetes in the group with risk factors was 6.21 times higher than that in the group with no risk factors.Conclusion. More attention should be paid to the risk factors for gestational diabetes, such as maternal age > 30 years, a history of gestational diabetes, pre-pregnancy BMI ≥ 23 kg/m2, a history of fetal macrosomia > 3800 g in all pregnant women

    Gender Analysis of the Tuna Value Chain's Purchasing Stage in the South Central Provinces of Vietnam-Case Study of Binh Dinh Province

    peer reviewedThis study aims to identify the gender disparities between men and women as purchasing actors in the tuna value chain in South Central provinces, thereby suggesting gender-sensitive policies towards gender equity, women’s empowerment, and sustainable tuna fisheries management. The study was conducted with the aid of a set of structured questionnaires executed through personal interview surveys. Tam Quan and Quy Nhon fishing ports in Binh Dinh province were chosen as study sites for conducting gender analysis at the tuna value chain's purchasing stage in the South Central provinces of Vietnam. Forty respondents were directly interviewed at their home or at the fishing ports in Binh Dinh province in May 2020, of which are ten middlemen and nine middlewomen purchasing yellowfin and bigeye tunas at Tam Quan fishing port; and twelve middlewomen and nine female traders purchasing skipjack tuna at Quy Nhon fishing port. This study used gender analysis tools such as the Harvard, Moser, and the USAID's six gender dimensions to identify gender differences between men and women in the tuna purchasing stage in productive, reproductive, and community managing roles. Some policy recommendations for improving gender equity, women's empowerment, and sustainable tuna fisheries management were proposed, including (i) describe the importance of women's reproductive role in gender-responsive strategies; (ii) establish tuna trading management board at the fishing port to collect information on the needs, issues, and interests of purchasing actors; (iii) organize training courses on tuna business and management skills at the fishing ports during the low season for the full participation of middle-actors, especially women; (iv) provide access to savings, credit, and microfinance for female traders to create opportunities for expanding their business; (v) improve facilities at the fishing ports to increase the overall well-being of the fish trading communities; (vi) introduce alternative job opportunities for laborers in the tuna purchasing stage during the low season; (vii) support laborers trading yellowfin and bigeye tuna in seeking other ways to make a living due to the depletion of these tuna resources

    STUDY ON THE EFFECT OF CALCIUM-ALGINATE AND WHEY PROTEIN ON THE SURVIVAL RATE OF Bifidobacterium bifidum IN MAYONNAISE

    ABSTRACT – QMFS 2019The functional food development by adding probiotic bacteria is getting a lot of concern. In this study, Bifidobacterium bifidum AS 1.1886 was encapsulated in calcium-alginate 2% w/v (C sample) or the mix of calcium-alginate 2% (w/v) and whey protein 1% (w/v) (CW sample) or calcium-alginate 2% (w/v) coated by whey protein 1% (w/v) (CcW sample) by extrusion method, and added to mayonnaise product. The pH changes, the survival rate of probiotic bacteria, and total yeast and mold count during storage, as well as the probiotic survival in simulated gastric medium, were evaluated. The result showed that the pH changes were not significantly different in all mayonnaise samples in this test. The viability of the free probiotic cell was significant decrease about 5.85 log CFU/g compared to 0.26 ÷ 1.14 log CFU/g in encapsulated cell samples after four weeks of storage. None of the free cells survived after six weeks of storage. The total yeast and mold count in samples related to the probiotic count, the viability of probiotic cells higher 6 log CFU/g might be controlling the growth of yeast and molds in mayonnaise. Whey protein has been shown to significantly improve the survival rate of B.bifidum and calcium-alginate coated by whey protein, indicating the most effective protection.
