    Incorporation of several additives into gluten free breads: Effect on dough properties and bread quality

    The objective of this work was to assess the effect of emulsifiers, hydrocolloids and enzymes on gluten-free dough rheology and thermal properties and bread quality, while relating dough properties parameters to bread technological quality. Breads were based on rice flour, cassava starch and full-fat active soy flour, with 65% or 75% (flour-starch basis) of water incorporation. Additives used were emulsifiers (diacetyl tartaric acid ester of monoglycerides - DATEM and sodium stearoyl lactylate - SSL), enzymes (glucose oxidase and α-amylase) and hydrocolloids (xanthan gum, carboxymethylcellulose, alginate and carrageenan). Results showed that additive incorporation modified dough behavior, evidenced by different calorimetric and rheological properties. Besides, the electrophoretic pattern of dough extracted proteins changed with glucose oxidase addition. These modifications resulted in breads with different characteristics, such as specific volume, firmness and firming rate, and crumb structure. Nonetheless, they did not necessarily show better quality parameters than the control bread. The control dough displayed good performance for obtaining gluten-free breads of acceptable volume, crumb structure and, principally, with lower hardening rate during storage. Contrary to widespread opinion, this work shows that the presence of additives is not essential for gluten-free bread production. This fact provides new perspectives to the gluten free market at the moment of selecting raw materials and technological parameters, reducing production costs and facilitating gluten free products development.Fil: Sciarini, Lorena Susana.     Llista patró dels taurons, rajades i quimeres (Chondrichthyes, Elasmobranchii, Holocephali) de Mèxic Es presenta una relació de les espècies de taurons, rajades  i quimeres (condrictis) que han estat registrades a les aigües territorials de Mèxic, basada en revisions de bases de dades, literatura, examen físic dels espècimens de col·leccions científiques i registres d’exemplars recol·lectats en treballs de camp durant els darrers quatre anys i que no han estat publicats. La relació conté informació de 214 espècies de condrictis que, com a mínim, han estat registrades a les aigües marines i salobroses de Mèxic, pertanyents a 84 gèneres, 40 famílies i 14 ordres. S’hi inclouen vuit espècies de quimeres, 95 de batoïdeus i 111 de taurons. La condrictiofauna mexicana és una de les més riques del món, amb el 17,3% o més de les espècies conegudes. A més a més, s’ hi inclouen 16 espècies que és probable que siguin presents a Mèxic atesos els seus patrons de distribució.Checklist of sharks, rays and chimaeras (Chondrichthyes, Elasmobranchii, Holocephali) from Mexico We present an annotated checklist of the species of sharks, rays and chimaeras (chondrichthyan fishes) occurring in Mexican waters, based on a thorough review of the literature and electronic database searches, examination of museum collection specimens, and unpublished records obtained during fieldwork conducted in the last four years. The checklist contains information of at least 214 species of chondrichthyan fishes that occur in Mexican marine and brackish waters, assigned to 84 genera, 40 families and 14 orders. It includes eight species of chimaeras, 95 batoids and 111 sharks. Condrichthyan fauna in Mexico is one of the richest in the world, with almost 17.3% of the known species. An additional  16 species are included  as their occurrence in Mexican marine waters is probable according to distributional patterns.Se presenta un listado anotado de las especies de tiburones, rayas y quimeras (Condrictios) que han sido registrados en las aguas territoriales de México, basado en revisiones de bases de datos, literatura, examinación física de los especímenes de colecciones científicas y de registros de ejemplares recolectados en campo durante los últimos cuatro años y que no han sido publicados. El listado contiene información de al menos 214 especies de condrictios que se han registrado en las aguas marinas y salobres de México, pertenecientes a 84 géneros, 40 familias y 14 órdenes. Se incluyen ocho especies de quimeras, 95 de batoideos y 111 de tiburones. La condrictiofauna mexicana es una de las más ricas a nivel mundial, con al menos 17.3% de las especies conocidas.     Measuring online teaching service quality in higher education in the COVID-19 environment

    The use of the Internet to develop new technologies has generated a considerable change in teaching and student learning in higher education. The pandemic caused by COVID-19 has forced universities to switch from face-to-face to online instruction. Furthermore, this transfer process was planned and executed quickly, with urgent redesigns of courses originally conceived for live teaching. The aim of this work is to measure the service quality of online teaching delivered during the COVID- 19 period. The methodology was based on an importance-performance analysis using a structural equations model. The data were obtained from a sample of 467 students attending a university in southern Spain. The results reveal five priority attributes of online teaching that need to be improved in order to enhance the service quality of the virtual instruction provided to students. Universities need to redefine their online format by integrating methodological and technological decisions and involving collaboration between teachers, students and administration staff and services. The results do not apply to educational institutions that exclusively teach courses online, but to those institutions that had to rapidly adapt, and shift course material originally designed for face-to-face training

    Assessment of bacterial diversity in the cattle tick Rhipicephalus (Boophilus) microplus through tag-encoded pyrosequencing

    <p>Abstract</p> <p>Background</p> <p>Ticks are regarded as the most relevant vectors of disease-causing pathogens in domestic and wild animals. The cattle tick, <it>Rhipicephalus </it>(<it>Boophilus</it>) <it>microplus</it>, hinders livestock production in tropical and subtropical parts of the world where it is endemic. Tick microbiomes remain largely unexplored. The objective of this study was to explore the <it>R. microplus </it>microbiome by applying the bacterial 16S tag-encoded FLX-titanium amplicon pyrosequencing (bTEFAP) technique to characterize its bacterial diversity. Pyrosequencing was performed on adult males and females, eggs, and gut and ovary tissues from adult females derived from samples of <it>R. microplus </it>collected during outbreaks in southern Texas.</p> <p>Results</p> <p>Raw data from bTEFAP were screened and trimmed based upon quality scores and binned into individual sample collections. Bacteria identified to the species level include <it>Staphylococcus aureus, Staphylococcus chromogenes, Streptococcus dysgalactiae, Staphylococcus sciuri, Serratia marcescens, Corynebacterium glutamicum</it>, and <it>Finegoldia magna</it>. One hundred twenty-one bacterial genera were detected in all the life stages and tissues sampled. The total number of genera identified by tick sample comprised: 53 in adult males, 61 in adult females, 11 in gut tissue, 7 in ovarian tissue, and 54 in the eggs. Notable genera detected in the cattle tick include <it>Wolbachia</it>, <it>Coxiella</it>, and <it>Borrelia</it>. The molecular approach applied in this study allowed us to assess the relative abundance of the microbiota associated with <it>R. microplus</it>.</p> <p>Conclusions</p> <p>This report represents the first survey of the bacteriome in the cattle tick using non-culture based molecular approaches. Comparisons of our results with previous bacterial surveys provide an indication of geographic variation in the assemblages of bacteria associated with <it>R. microplus</it>. Additional reports on the identification of new bacterial species maintained in nature by <it>R. microplus </it>that may be pathogenic to its vertebrate hosts are expected as our understanding of its microbiota expands. Increased awareness of the role <it>R. microplus </it>can play in the transmission of pathogenic bacteria will enhance our ability to mitigate its economic impact on animal agriculture globally. This recognition should be included as part of analyses to assess the risk for re-invasion of areas like the United States of America where <it>R. microplus </it>was eradicated.</p

    Secondary metabolites from two species of Tolpis and their biological activities

    Phytochemical research of two Tolpis species, T. proustii and T. lagopoda, led to the isolation of three new compounds: 30-chloro-3β-acetoxy-22α-hydroxyl-20(21)- taraxastene (1), 3β,22α-diacetoxy-30-ethoxy-20(21)-taraxastene (2) and 3β,28-dihydroxy11α-hydroperoxy-12-ursene (3). The structures of the new compounds were elucidated by means of extensive IR, NMR, and MS data and by comparison of data reported in the literature. The in vitro antioxidant activities of the extracts were assessed by the DPPH and ABTS scavenging methods.     Model predictive control for single-phase NPC converters based on optimal switching sequences

    In this paper, a model predictive control (MPC) based on optimal switching sequences (OSSs) for a singlephase grid-connected full-bridge neutral-point-clampled (NPC) power converter is presented. The predictive control algorithm is formulated in terms of OSSs, which was originally proposed to govern three-phase power converters. In this work, the OSS concept is extended to control singlephase power converters. The proposed MPC algorithm belongs to the continuous control set MPC (CCS-MPC) and is able to provide fixed switching frequency while handling system constraints. The proposed algorithm has been experimentally tested in an NPC power converter prototype. Experimental results show the desired fixed switching behavior in the steady state condition and the intrinsic fast dynamic provided by MPC during transients.     Morphology and Sequence Data of Mexican Populations of the Ciliate Parasite of Marine Fishes Trichodina rectuncinata (Ciliophora: Trichodinidae)

    Trichodina rectuncinata is one of the trichodinids most widely distributed in marine fish. This ciliate species has been recorded in more than 20 host species belonging to 17 fish families worldwide. Previous comparative studies based on morphometric data revealed considerable morphological variation among specimens from different populations of T. rectuncinata. In this study, we conducted a morphometric- molecular analysis of three populations of T. rectuncinata to evaluate potential differences among 18S rRNA sequences, in relation to morphological variations. Smears were obtained from marine fishes in three localities along the Pacific coast of Mexico. Based on the shape of denticles, we found four different morphotypes for T. rectuncinata. This morphological variability does not correspond with the genetic divergence, suggesting that all analyzed populations belong to the same species.
