Algarrobo flour is a gluten-free flour obtained by grinding the whole fruit (pods) of Prosopis chilensis. Because of its taste, this flour could be used as a sugar replacer. Besides, it can improve the protein profile, and the antioxidant and fibre content of foodstuffs. This is of special interest in gluten-free products that are generally deficient in these nutrients. In the present work a total of eleven different gluten-free biscuit formulations with Algarrobo flour and different proportions of rice flour, chickpea flour, cassava starch, and maize starch were evaluated. The effects of each ingredient were analysed and the texture, colour, total dietary fibre content, antioxidant capacity, and sensorial acceptability associated with the addition of algarrobo flour as a partial sugar replacer were studied in detail in three selected formulations. Results showed that the dietary fibre content and the antioxidant capacity increased with the addition of algarrobo flour (60 and 20%, respectively). In addition, no significant differences were found in the sensory scores of biscuits prepared with sugar or with algarrobo flour (P ≥ 0.05). It could be concluded that algarrobo flour could partially replace sugar in gluten-free biscuit formulations. Besides, its addition increases the fibre and antioxidant capacity of the product without significantly changing its optimum texture. This is a major achievement that could be the starting point for future research aimed to develop new and healthy gluten-free products.Fil: Lanata, M. C.. Provincia de Buenos Aires. Gobernación. Peritoneal sarcoidosis: an unusual presentation and a brief review of the literature

    Get PDF
Peritoneal involvement continues to be a rare manifestation of sarcoidosis: its involvement is not always isolated and sarcoid granulomas are also found elsewhere. Peritoneal diseases tend to have an increased incidence in women. Peritoneal involvement presents as ascites, as peritoneal thickening and multiple soft tissue nodules, and can often simulate peritoneal carcinomatosis. We describe a case of a man presenting abdominal pain, nausea, vomiting and a clinical picture of intestinal obstruction, with peritoneal sarcoidosis and abdominal findings suggesting peritoneal carcinomatosis. The diagnosis of sarcoidosis was confirmed by biopsy of the peritoneum during surgical laparotomy. Peritoneal involvement is a rare manifestation of sarcoidosis (less than 30 cases described in English medical literature) : to our knowledge this is the first reported case of the disease presenting with an acute abdominal obstruction treated with surgery

Design and preliminary affective characterization of a novel fabric-based tactile display

In this work we present a novel wearable haptic system based on an elastic fabric which can be moved forward and backward over the user forearm thus simulating a human caress. The system allows to control both the velocity of the “caress-like” movement, by regulating motor velocity, and the “strength of the caress”, by regulating motor positions and hence the force exerted by the fabric on the user forearm. Along with a description of the mechanical design and control of the system, we also report the preliminary results of psycho-physiological assessment tests performed by six healthy participants. Such an assessment is intended as a preliminary characterization of the device capability of eliciting tactually emotional states in humans using different combinations of velocity and caress strength. The emotional state is expressed in terms of arousal and valence. Moreover, the activation of the autonomic nervous system is also evaluated through the analysis of the electrodermal response (EDR). The main results reveal a statistically significant correlation between the perceived arousal level and the “strength of the caress” and between the perceived valence level and the “velocity of the caress”. Moreover, we found that phasic EDR is able to discern between pleasant and unpleasant stimuli. These preliminary results are very encouraging and confirm the effectiveness of this device in conveying emotional-like haptic stimuli in a controllable and wearable fashion

    The Frailty of the Invincible

The COVID-19 pandemic has unveiled the frailty of our societies from too many points of view to look away. We need to understand why we were all caught unprepared. On the one hand, we have all short memories. As we forget too quickly, we were unable to recognize key factors influencing response and preparedness to public health threats. For many years, economic evaluation pushed governments all over the world to cut resources for public health systems, with COVID-19 pandemic the question arises: do we spend too much or too little on health care? What is the right amount to spend on health? Moreover, in many countries, the privatisation, or semi-privatisation, of healthcare may give rise to inequitable access to health care for everyone. Although COVID-19 is very "democratic", its consequences aren't. According to OECD, income inequality in OECD countries is at its highest level for the past half century. Three main causes have been recognized, technological revolution, globalization, and "financialisation". In this scenario, lockdown measures adopted to save lives are showing dramatic economic consequences. To address post COVID-19 reconstruction we need to go beyond GDP. As an economic measure this has many shortcomings in describing the real well-being of a country, and since what we measure affects what we do, new paradigms will have to guide the post COVID-19 reconstruction strategies, as the fate of countries and their citizens is at stake

Improving household air, drinking water and hygiene in rural Peru : a community-randomized-controlled trial of an integrated environmental home-based intervention package to improve child health

Diarrhoea and acute lower respiratory infections are leading causes of childhood morbidity and mortality, which can be prevented by simple low-cost interventions. Integrated strategies can provide additional benefits by addressing multiple health burdens simultaneously.; We conducted a community-randomized-controlled trial in 51 rural communities in Peru to evaluate whether an environmental home-based intervention package, consisting of improved solid-fuel stoves, kitchen sinks, solar disinfection of drinking water and hygiene promotion, reduces lower respiratory infections, diarrhoeal disease and improves growth in children younger than 36 months. The attention control group received an early child stimulation programme.; We recorded 24 647 child-days of observation from 250 households in the intervention and 253 in the attention control group during 12-month follow-up. Mean diarrhoea incidence was 2.8 episodes per child-year in the intervention compared with 3.1 episodes in the control arm. This corresponds to a relative rate of 0.78 [95% confidence interval (CI): 0.58-1.05] for diarrhoea incidence and an odds ratio of 0.71 (95% CI: 0.47-1.06) for diarrhoea prevalence. No effects on acute lower respiratory infections or children's growth rates were observed.; Combined home-based environmental interventions slightly reduced childhood diarrhoea, but the confidence interval included unity. Effects on growth and respiratory outcomes were not observed, despite high user compliance of the interventions. The absent effect on respiratory health might be due to insufficient household air quality improvements of the improved stoves and additional time needed to achieve attitudinal and behaviour change when providing composite interventions

Instantaneous Assessment of Hedonic Olfactory Perception using Heartbeat Nonlinear Dynamics: A Preliminary Study

    Get PDF
Emotional perception to hedonic olfactory stimuli is un- der direct control of the limbic system, whose dynam- ics is known to affect autonomic nervous system activity on cardiovascular control. Mainly due to methodologi- cal limitations, previous investigations failed to uncover specific trends in heartbeat dynamics between ultra short- time (i.e., lasting < 10s), pleasant and unpleasant olfac- tory stimuli. To this extent, in this study we computed in- stantaneous estimates from heartbeat series gathered from 32 healthy subjects (age: 26±2; 16M) undergoing hedo- nic olfactory elicitation. Each subject exhibited a simi- lar olfactory perception threshold, and scored five 5s stim- uli in terms of arousal and valence level using the self- assessment manikin test. We analyzed the heartbeat series using our recently proposed inhomogeneous point-process nonlinear framework, obtaining instantaneous estimates defined in the time (mean and standard deviation), fre- quency (power in the LF and HF bands, as well as LF/HF ratio), and nonlinear/complexity (bispectra, sample and approximate entropy, and Lyapunov exponent) domains. A feature set comprising average estimates within the 5s win- dows was taken as an input of a K-Nearest Neighborhood classification algorithm, whose cross-validation relied on a leave-one-subject-out procedure. Results demonstrate that our framework allows to finely characterize affective olfactory elicitation with an average recognition accuracy of 71.88%. Feature selection highlighted that the most dis- criminating power was contributed by instantaneous LF power, instantaneous Lyapunov exponents, and instanta- neous approximate entropy
