    Plastične PE folije upotrebljavaju se kao ambalaža za različite prehrambene proizvode. Za konačnu kakvoću ambalaže vrlo je važna količina plina, vlage, vodene pare i vode, koja prelazi kroz foliju i time mijenja prvobitna svojstva proizvoda. U ovom radu pokuÅ”alo se dovesti u vezu neke fizikalno-kemijske parametre i primjenu dodatne pektinske membrane za vrijeme skladiÅ”tenja tako ambalažiranih uzoraka rezanog sira. Primijenjena pektinska membrana povoljno utječe na kakvoću sira, Å”to je potvrđeno provedenim mjerenjima.Plastic (PE) foils are used as packaging material for various food products. Final quality of a product packed in plastic foil greatly depends on the quality of gas, moisture, vapour and water penetrating the foil and changing the original properties of the product. In this study related are some physical and chemical parameters and the application of additional pectic membrane during storage of sliced cheese sample packed in a plastic foil. Applied pectic membrane has positive effects on cheese quality which has been verified through performed determinations

    Comparison of Zn Content in Rapid-acting Insulin and Biphasic Suspension by FAAS

    Various insulin analogs (rapid-acting and intermediate-acting insulin) have been investigated for the determination of zinc content by flame atomic absorption spectrometry. This paper presents the validation of a method and comparison of zinc content in the insulin samples studied. The method was linear (r)(^2) = 0.9997), the limit of detection was 0.0098 mg L(^{ā€“1}) and the limit of quantification was 0.0296 mg L(^{ā€“1}), the precision (as relative standard deviation) was up to 7.4 %, and the accuracy was within a range of 95.6 % to 100.1 % for the recovery of fortified insulin samples. The zinc content in the insulin samples ranged from 14.9 mg L(^{ā€“1}) to 16.3 mg L(^{ā€“1}) for rapid-acting insulin and 18.7 mg L(^{ā€“1}) to 19.9 mg L(^{ā€“1}) for intermediate-acting insulin. A higher zinc content was found in the intermediate-acting insulins than in the rapid-acting insulin analogs ((p) < 0.05). The obtained results should be considered in the establishment of new or improvement of currently available procedures used to assure the quality, safety and efficacy of insulin products.     Observing of physical and chemical changes of milk desserts-puddings during the storage

    U ovom radu su uz pomoć Brookfield-ovog rotacionog viskozimetra istražena reoloÅ”ka svojstva mliječnih deserata - pudinga. Izračunate su vrijednosti viskoziteta mliječnih deserata i prikazane logaritamske ovisnosti vrijednosti viskoziteta o brzinama smicanja. Ova je analiza omogućila promatranje kvalitativnih promjena u sistemima za vrijeme skladiÅ”tenja u hladnjaku kod temperature 8 Ā°C. Metoda određivanja pokazala se vrlo jednostavnom, prikladnom i tehnoloÅ”ki dobro primjenjivom za kontrolu kvalitete proizvoda za vrijeme skladiÅ”tenja.In this work have been tested milk desserts - pudding reologic characteristics with Brookfield o rotational viscosymeter. Viscosity values for milk desserts have been calculated and log-aritmic functions of viscosity values and shear velocities have been presented. This analysis has enabled the observing of qualitative changes in the systems during storage in the refrigerator at 281 K (8 Ā°C). This determination method has proved itself to be very simple technologically, convenient and applicable for products quality control during storage

    Dodatkom pÅ”eničnih klica u fermentirane mliječne proizvode mogu se pripraviti nove vrste napitaka. U laboratorijskim uvjetima, a prema uobičajenom (tradicionalnom) postupku koji se koristi u domaćinstvu, pripravljeni su uzorci jogurta, čija se kvaliteta i održivost pratila određivanjem reoloÅ”kih parametara (indeksa tečenja, koeficijenta konzistencije) i mjerenjem volumena izdvojene sirutke. Za pripravu se koristilo mlijeko individualnog proizvođača sa 4,1% mliječne masti i industrijski obrađeno pasterizirano i homogenizirano mlijeko s 3,2% mliječne masti. Pripravljeni uzorci s dodatkom pÅ”eničnih klica imaju viÅ”e vrijednosti određivanih reoloÅ”kih parametara u odnosu na uzorke bez dodatka klica. PÅ”enične klice imaju povoljan utjecaj na strukturu, teksturu i održivost koaguluma pripravljenih uzoraka jer dolazi do njihovog bubrenja Å”to povećava plastičnost uzoraka. Uzorci pripravljeni od industrijski obrađenog mlijeka rjeđe su konzistencije, izdvajaju viÅ”e sirutke, a posljedica je manja trajnost uzoraka.By adding wheat germs into the fermented dairy products new sorts of beverages are prepared. Samples were prepared according to household recipe in the laboratory conditions. Their quality and maintenance were followed by determination of rheological parameters (flow index, consistency coefficient) and measuring the volume of separated whey. For yoghurt preparation the milk from individual manufacturer (containing 0.041 w/w milk fat) and from pasteurized and homogenized milk under industrial conditions containing 0.032 w/w milk fat were used. The samples prepared with wheat germs addition showed higher values of determined parameters in comparison to reference samples (without wheat germs). This indicates the positive effect of wheat germs on structure, texture and maintenance of coagulum samples due to swelling, which increases samples plasticity. The consistency of samples prepared from industrial milk is poorer in comparison to reference samples, and also more whey was separated, thus decreasing shelf life of the products occured

    Stone crayfish, an endangered and protected species in Republic of Serbia, inhabits mountain areas of the country. The knowledge and attitude of children, from two primary schools (Pirot and Bosilegrad) towards this species was tested. Two surveys with the same questionnaire were conducted. The first one was held at the end of the 6th grade, and the second was conducted a year later. The second survey has shown a moderate increase in children's knowledge. To better protect and conserve rare and endangered taxa it is necessary to raise awareness of the public, particularly in the areas where these species are present. Attitudes, values, behavior, knowledge of citizens and especially young generations form a good basis for the protection and sustainable development planning in local community

    Length-Weight Relationship And Condition Factor Of The Cactus Roach (Rutilus Virgo) In The Perućac Reservoir (Serbia)

    The length-weight relationship and condition of 35 individuals of the cactus roach, caught in June 2017 in the Perućac reservoir, were analysed. The average length (Ā± SD) of the sampled individuals was 29.8 Ā± 6.1cm and the average weight (Ā± SD) was 334 Ā± 215 g. Age ranged from 2+ to 5+ years, and almost half of individuals were aged 2+. The regres-sion coefficient of the length-weight relationship was b > 3, which indicates a positive allometric growth. The Fultonā€™s condition factor ranged from 0.94 to 1.27, with the mean value (Ā± SD) of 1.09 Ā± 0.09. Allometric condition factor ranged from 0.49 to 0.62, with the mean value (Ā± SD) of 0.56 Ā± 0.04

    Toxicity of carvacrol and its potential in preventing L-arginine-induced pancreatic damage

    Carvacrol (5-isopropyl-2-methylphenol) is a monoterpene present in the essential oils of many aromatic plants of the Lamiaceae family, including the genera Origanum, Thymus, Thymbra, and Satureja. Carvacrol is reported to have a variety of biological properties and its activity might partially be responsible for the activity of ethnomedicinal plants rich in this monoterpene. Our present work aims to estimate the damaging effect of carvacrol on Wistar rat pancreatic tissue, as well as to evaluate its protective action in preventing pancreas damage induced by L-arginine. The toxic and beneficial (in a low dose of 10 mg/kg) properties of carvacrol were assessed by measuring serum Ī±-amylase and lipase activities and tissue malondialdehyde (MDA) content. Also, the pathohistological appearance of pancreatic tissue was assessed, where the presence of edema, inflammation, necrosis, and hemorrhage was scored. The application of higher doses of carvacrol (100 and 500 mg/kg) produced a significant increase in serum Ī±-amylase activity, followed by inflammatory cell infiltration and patchy interlobular edema. In the L-arginine-induced pancreatitis model, a dose of 10 mg/kg of carvacrol was able to prevent the increase in serum Ī±-amylase and lipase activities, as well as to prevent MDA formation compared to the animals that received L-arginine only. Pathological changes also followed the biochemical picture, where mild edema and inflammatory infiltration, with few necrotic areas, could be seen in the tissues of animals treated with carvacrol prior to L-arginine treatment. On the contrary, the tissues of the animals that received L-arginine only displayed massive leukocyte infiltration with edema and significant necrotic areas. One can speculate that the activity of carvacrol is probably arising from its ability to affect the function of multiple cellular mediators, as well as to prevent oxidative tissue damage by mitigating cell oxidative mechanisms

    Effects of a combined thymol and carvacrol application on rat kidney damage parameters after L-arginine application

    Thymol and carvacrol are two frequently abundant volatile monoterpene phenols found as constituents of different, widely used medicinal plants mainly belonging to the Lamiaceae family. The two compounds were previously proven to possess a large number of pharmacological/toxicological activities, including the nephroprotective activity. The present study aims to evaluate the nephroprotective potential of the two mentioned monoterpenes in L-arginine-induced rat kidney damage model. The potentials of thymol and carvacrol to alleviate kidney impairment were investigated using a different serum (urea, creatinine, sodium, potassium) and homogenate (neutrophil gelatinase-associated lipocalin-NGAL) parameters that reflect kidney tissue damage. Significant rat kidney damage, increased serum urea, creatinine, sodium and potassium levels, as well as NGAL tissue activity, followed the application of L-arginine (3.5 g/kg). Thymol (10 mg/kg), carvacrol (10 mg/kg) or their combination (1:1, w/w, 10 mg/kg) application prior to L-arginine reduced the kidney tissue damage based on the determined values of the previously mentioned parameters. The activity of the combination of the two monoterpenes was found to be more pronounced than the activity of the individual ones at the same total dose. These differences were clearly visible in the urea and potassium serum levels and in the NGAL tissue activity obtained from the corresponding experimental groups. Such greater nephroprotective potential of the combination of the two compounds could be attributed to a possible synergistic effect of the two volatile phenols, since they were proven alone to both possess antioxidant, anti-inflammatory, immunomodulatory, anti-apoptotic, etc. activities
