    Discrimination vs. Acceptance of Homosexuality at Valparaiso University

    Views of homosexuality have been a major issue for many years and still are to this day. As stated in the Declaration of Independence, all citizens should be granted equal rights and respect. However, many still are struggling to offer their acceptance to those of diverse populations, especially to those who identify themselves as members of the GLBTQ community. This lack of equality has escalated to a nation full of discriminating views, attitudes, and stereotypes. While all ages have portrayed negative attitudes towards members of the GLBTQ population, it is most visually prevalent among students at college campuses. Because of the prevalence in college, this study was targeted towards students of both heterosexual and homosexual orientation at Valparaiso University. The study was generated in order to obtain varying perspectives on the topic of homosexuality. With the knowledge gleaned, results were expected that there is not an overall acceptance of the homosexual population as there is for the heterosexual population on the Valparaiso University campus. With or without an overall accepting population, it is imperative that the homosexual community be treated with integrity and respect

    Controlling Listeria monocytogenes on ready-to-eat poultry products using carboxymethylcellulose film coatings containing green tea extract (GTE) combined with nisin and malic acid

    The ability to control Listeria monocytogenes on ready-to-eat poultry products using carboxymethyl-cellulose film coatings containing green tea extract (GTE), malic acid (M), nisin (N), and their combinations was evaluated. The antimicrobials (GTE: 1.0%, nisin: 10,000 IU/g, malic acid: 1.0%) were incorporated alone or in combination into a carboxymethyl cellulose film coating. Pre-inoculated, fully cooked chicken pieces (~1g, 1cm x 1cm x 1cm) were coated with the film solution. The coated chicken pieces were stored at 4°C and the inhibitory activity against Listeria monocytogenes was evaluated at 0, 7, 14, 21, and 28 days. The highest inhibitory activity was found in the sample containing GTE, nisin, and malic acid in combination with a reduction of 3.3 log CFU/mL. These data demonstrate that GTE—combined with nisin and malic acid and incorporated into a carboxymethyl-cellulose film coating, multiple-hurdle technology—is effective in inhibiting L. monocytogenes growth on fully cooked chicken pieces at 4°C. Research in the area of finding natural antimicrobials to aid in the prevention of food-borne illnesses is necessary to improve safety and shelf life of products such as ready-to-eat meats. This project provides an effective combination of natural anti-microbials to control L. monocytogenes in ready-to-eat chicken pieces

    Classroom Social Support: A Multiple Phenomenological Case Study of Mathematics Graduate Teaching Assistants’ Decision Making in the Classroom

    Research suggests that support offered by an instructor can have a significant impact on the student experience, both in terms of classroom performance and affective well-being. Research also suggests that there are different types of support that instructors can offer (e.g., emotional support, instrumental support, informational support, and appraisal support). Although such research suggests that students perceive and are affected by these different types of support in different ways, there does not appear to be research surrounding the decision-making process behind instructors offering the support or the extent to which social support is a priority for them in the classroom. The present study is a qualitative phenomenological multiple case study in which the decision making of six mathematics Graduate Teaching Assistants (GTAs) was analyzed through the lens of support. This study consisted of both interviews and classroom observations and aimed to understand the goals and beliefs held by the GTAs in order to explain the decisions they made to offer support in particular ways. The findings of this study are presented in three chapters: Chapter 4 discusses two GTAs whose goals and beliefs provide clear insight into the types of support they offer their students. Chapter 5 discusses two GTAs whose decision making is more nuanced and examines their goals and beliefs through existing frameworks in the literature. Chapter 6 discusses two more experienced GTAs in order to better understand how the constructs explored throughout this dissertation can change over time. The findings of this dissertation suggest that GTAs possess a wide variety of goals and beliefs that impact their decision making in complex ways and that GTAs’ goals, beliefs, and decision-making practices evolve over time. The conclusions from this research can help inform individual instructors’ reflections on their teaching as well as professional development efforts of novice mathematics instructors.     Effectiveness of Physical Therapy in an Elderly Man with Lyme Disease: A Case Report

    Background and Purpose. Lyme disease is the most prevalent tick-borne infectious disease in the United States and presents with symptoms that can be treated with physical therapy intervention. The purposes of this case report are to present (1) an example of physical therapy intervention as treatment for a 61 year old male diagnosed with late stage Lyme disease with multiple impairments; (2) to report the patient\u27s functional outcomes; and (3) to provide basis for further research on the effects of physical therapy intervention as it relates to late stage Lyme disease. Case Description. The 60 year old, male patient was treated for a primary complaint of globalized weakness and inability to ambulate. Further impairments included deconditioning as a result of being bedridden for 4 weeks, gross muscle weakness, high fall risk, decreased functional mobility, pelvic fracture, migratory joint pain and arthritis, fatigue, incontinence, disturbed sleep pattems and benign paroxysmal positional vertigo (BPPV). Intervention. The patient was treated over the course of six weeks with physical therapy interventions which included: transfer training exercise, home exercise program, therapeutic exercise, manual therapy, and gait training. Outcomes. Patient showed a clinically significant increase in areas of strength, functional independence measure, functional mobility, transfer safety and technique, and ambulation distance. Discussion. This case report supplies evidence that physical therapy intervention can produce favorable outcomes following Chronic Lyme disease. Future research should include the use of various functional outcome assessments
