Programa de auditoría para el Sistema de Gestión HACCP Productos Alimenticios “Carnecitas”
Apéndice A. Informe de auditoría fase 2.El siguiente plan de auditoria esta aplicado al sistema de gestión HACCP, verificando el cumplimiento por procesos, ejecutado por la empresa Productos Alimenticios “carnecitas”, teniendo en cuenta los estándares sanitarios reglamentarios en la Resolución 2674 del 2013 y del Decreto 60 del 2002. Se establece el cumplimiento de los procesos de calidad, planes de mejora y acciones correctivas para dar cumplimiento al plan HACCP.
Para la ejecución del plan de auditoria se tomó como referente la norma ISO 19011: 2018. Durante el desarrollo, se determinaron diferentes hallazgos de gran impacto para la gestión de calidad, dando prioridad a los impactos relacionados con BPM y HACCP, teniendo en cuenta la pirámide de calidad, es imprescindible cumplir con los programar prerrequisitos, para poder implementar un sistema gestión de calidad e inocuidad de los alimentos.
El Plan HACCP de la empresa Productos Alimenticios “Carnecitas", evidencio falencias asociadas a los programas prerrequisitos, BPM y sistema HACCP, por lo tanto, se revisaron los hallazgos encontrados frente a la normatividad relacionada, estableciendo acciones correctivas, principalmente con los temas relacionados al personal manipulador de alimentos, ya que se evidencio que las falencias vienen principalmente del personal.The following audit plan is applied to the HACCP management system, verifying compliance by processes, executed by the company food products "Carnecitas", taking into account the regulatory health standards in Resolution 2674 of 2013 and Decree 60 of 2002. It establishes compliance with quality processes, improvement plans and corrective actions to comply with the HACCP plan.
The ISO 19011: 2018 standard was used as a reference for the execution of the audit plan. During the development, different findings of great impact for quality management were determined, giving priority to the impacts related to BPM and HACCP, taking into account the quality pyramid, it is essential to comply with the prerequisite program, in order to implement a quality management system and food safety.
The HACCP Plan of the company food products "Carnecitas", evidenced deficiencies associated with prerequisite programs, BPM and HACCP system, therefore, the findings were reviewed against the related regulations, establishing corrective actions, mainly with issues related to food handling personnel, since it was evident that the shortcomings come mainly from the staff
Ongoing harlequin toad declines suggest the amphibian extinction crisis is still an emergency
Biodiversity loss is extreme in amphibians. Despite ongoing conservation action, it is difficult to determine where we stand in overcoming their extinction crisis. Among the most threatened amphibians are the 131 Neotropical harlequin toads. Many of them declined since the 1980s with several considered possibly extinct. Recently, more than 30 species have been rediscovered, raising hope for a reversing trend in the amphibian extinction crisis. We use past and present data available for harlequin toads (Atelopus), to examine whether the amphibian extinction crisis is still in an emergency state. Since 2004 no species has improved its population status, suggesting that recovery efforts have not been successful. Threats include habitat change, pathogen spread and climate change. More mitigation strategies need implementation, especially habitat protection and disease management, combined with captive conservation breeding. With harlequin toads serving as a model, it is clear that the amphibian extinction crisis is still underway.
The status of the harlequin toads has not improved since 2004 despite species rediscoveries accompanied by increasing conservation efforts, and habitat destruction and degradation continue to threaten them today, according to an analysis of population status records over the period 2004-2022
