drobiarskiego Wspólnoty i stał się jego częścią. Integracja przyczyniła się z jednej strony do wzrostu
cen drobiu, ale z drugiej strony wpłynęła na wzrost jego spożycia. Mięso drobiowe jest często
wybierane przez konsumentów ze względu na niższą cenę, w porównaniu z wołowiną czy
wieprzowiną, oraz posiadane walory odżywcze.After the Polish accession to the EU, the Polish poultry market was incorporated into the
common organization of poultry market in the Community and became a part of it. This integration
has contributed to higher prices of poultry meat, but it also contributed to an increase in its
consumption. Poultry meat is often chosen by consumers because of its lower price in comparison to
beef or pork prices and its nutritional value
Selected issues of transportation and loading animals on the farm in the opinion of farmer
The paper aims to present opinions of farmers on selected issues related to transportation and loading animals on the farm. The research was conducted in 2017 using a questionnaire survey in 68 farms, mainly keeping cattle and pigs. Farmers declared more frequent use of specialized vehicles for transporting animals that provide such services (mainly for slaughter) than their own means of transport. According to the respondents, the family and drivers of vehicles transporting animals provided evidence of assistance in loading animals. During the loading, ramps of various types were used most often, mainly car with full covers (less frequent elevators), and various devices supporting the movement of animals. Loading usually took place in silence, although there was a difference between the loading of pigs and cattle. Pigs made loud noises much more often, and the urging of animals to move is usually done by voice. In terms of interest in the fate of animals leaving the farm, there was a significant difference.</jats:p
The process of reducing the fat content as a factor in the development of the meat industry
Ewolucja w sposobie odżywiania się Polaków, związana z większą świadomością żywieniowo-
-zdrowotną wymusza na producentach żywności konieczność wprowadzania nowych metod produkcji i
przetwórstwa żywności. Przykładem innowacyjnego produktu jest mięso o obniżonej zawartości tłuszczu,
które znajduje coraz więcej zwolenników na świecie, a także w Polsce. Celem badań była ocena poziomu
akceptacji przez konsumentów procesu obniżania poziomu tłuszczu w mięsie. Badanie ilościowe przeprowadzono
na próbie 1000 respondentów w 2011 roku. Stwierdzono, że 70,6% badanych akceptuje proces
obniżenia zawartości tłuszczu w mięsie, przy czym ponad ½ respondentów wyraża swoją chęć do kupowania
takiego mięsa. Uzyskane wyniki mogą być sygnałem dla producentów, że współcześni konsumenci oczekują
innowacyjnych i prozdrowotnych zmian na rynku mięsa.Evolution in the diet of the Poles, associated with a greater awareness of the nutritional-health, forced food
producers new ways of production and food processing. An example of an innovative product is the meat with
reduced fat content, which is more and more popular in the world. The purpose of the article was to assess the
level of consumer acceptance process of lowering the level of fat in the meat and to understand the benefits that
may result from this process. The quantitative study was conducted on a sample of 1,000 respondents in 2011. It
was found that 70.6% of respondents accept the process of reducing the fat content of the meat, and more than
½ of the respondents expressed their willingness to buy such meat. The results may be a signal to producers of
modern consumers expect innovative changes in the meat market
Wpływ kryzysu gospodarczego na zachowania konsumentów wobec mięsa
The economic crisis with its origin in 2008 has influenced many areas of consumer
life. It also determines their behaviour related to purchasing and consuming products,
including food products. An example of an important product in the human diet is meat consumed
by the Poles at the level of more than 75 kg per person per year, which on one hand
has adequate nutritional value and is consumed by the consumers because of the reasons
related to a tradition, habits and pleasure, but on the other hand, it is an expensive product
and therefore, in the time of the crisis, its consumption level is decreased and consumers
look for cheaper alternatives. The aim of the research carried out within the framework of
a NCN in Kraków research project “Determinants of selection and consumption of meat
in Poland – diagnosis and forecasts” was to assess the impact of the economic crisis on
consumers’ behaviour towards meat. The statistical analysis led to the conclusion that for
18.1% of the respondents it was the economic crisis that contributed to the changes in the
consumption of meat. As calculated based on the 7-point scale (where 1 rating – the lack
of any changes, and evaluation of 7 – changes with high intensity) in the past few years,
consumers have noticed reduce the level of total meat consumption (5.02), an increase in
the level of consumption of cheaper types of meat (4.85), reducing consumption of more
expensive meats (4.48), buying a one-off smaller portions of meat than it was 2–5 years ago
(4.23). They also began to pay more attention to the price of buying.Kryzys gospodarczy zapoczątkowany w 2008 roku ma wpływ na wiele sfer
życia konsumentów i istotnie warunkuje ich zachowania związane z nabywaniem i konsumowaniem
produktów, w tym produktów żywnościowych. Przykładem ważnego w diecie
człowieka produktu jest mięso spożywane przez Polaków na poziomie ponad 75 kg na osobę
rocznie, które z jednej strony ma odpowiednie walory odżywcze i spożywane jest przez konsumentów
ze względu na tradycję, przyzwyczajenie i sprawianie przyjemności głównie przez
odczuwanie pozytywnych wrażeń smakowych, ale z drugiej strony jest produktem drogim,
którego spożycie ogranicza się lub poszukuje się tańszych zamienników w niekorzystnych
ekonomicznie warunkach. Celem podjętych badań realizowanych w ramach projektu badawczego
NCN w Krakowie pt. „Uwarunkowania wyboru i konsumpcji mięsa w Polsce – diagnoza
i prognozy” była ocena wpływu kryzysu gospodarczego na zachowania konsumentów
wobec mięsa. Przeprowadzona analiza statystyczna pozwoliła na stwierdzenie, że dla 18,1%
badanych to właśnie kryzys gospodarczy przyczynił się do zmian w zakresie spożywania
mięsa. Jak obliczono na podstawie 7-stopniowej skali ocen (gdzie: ocena 1 – brak jakichkolwiek
zmian, a ocena 7 – zmiany o dużym natężeniu), w ostatnich kilku latach konsumenci
zauważyli obniżenie poziomu spożycia mięsa ogółem (5,02), zwiększenie poziomu spożycia
tańszych rodzajów mięs (4,85), zmniejszenie poziomu spożycia droższych rodzajów mięs
(4,48), kupowanie jednorazowo mniejszych porcji mięsa niż to miało miejsce 2–5 lat temu
(4,23). Zaczęto także bardziej zwracać uwagę na cenę kupowanego mięsa
Assessment of the level of understanding and satisfaction with the product traceability system in dairy industry factories
Celem pracy była ocena poziomu zrozumienia istoty pojęcia identyfikowalności produktu (traceability)
oraz ocena poziomu zadowolenia z prowadzenia tego systemu realizowanego w 20 wylosowanych
zakładach mleczarskich dobranych do badania na podstawie Polskiej Klasyfikacji Działalności (PKD) oraz
liczby zatrudnionych w przedsiębiorstwie osób. Obowiązek identyfikowalności pochodzenia oraz ruchu żywności
i pasz w Unii Europejskiej wynikają z Rozporządzenia (WE) nr 178/2002 Parlamentu Europejskiego
i Rady oraz kolejnych aktów prawnych. Obowiązek śledzenia produktów ma na celu odtworzenie drogi,
którą przebył produkt w łańcuchu logistycznym, identyfikację surowców użytych do jego produkcji oraz ich
dostawców, w przypadku wykrycia jakichkolwiek zagrożeń czy nieprawidłowości w nim występujących.
Stwierdzono, że przedsiębiorcy z branży mleczarskiej, a szczególnie przedstawiciele zakładów zatrudniających
więcej niż 50 pracowników, potrafią zinterpretować istotę systemu identyfikowalności. Oceniając
poziom zadowolenia ekspertów z wprowadzanego na różnych etapach produkcji mleka systemu jego identyfikowalności
stwierdzono, że najwyższą ocenę średnią uzyskały procesy pasteryzacji (6,27) i paczkowania
(6,06), a najniższą etap przyjęcia mleka (4,26).The obligation of traceability of food and feed in the European Union results from the Regulation (EC) No
178/2002 of the European Parliament and of the Council and the successive acts. Traceability obligation is to restore
the road traveled by the product in the logistics chain, identification of raw materials used for its manufacture and
its suppliers, in case of detection of any risks or irregularities occurring in it. The aim of the study was to assess
the degree of comprehensibility essence of the concept of product tracking (traceability) and the assessment of the
level of satisfaction with the conduct of the system implemented in 50 dairy plants selected for testing based on
the Polish Classification of Activities (PKD) and the number of persons employed in the enterprise. It was found
that entrepreneurs from the dairy industry, and especially the representatives of establishments employing
more than 50 employees, are able to interpret the essence of the traceability system. In assessing the level
of satisfaction with the input of experts in various stages of milk production system, its traceability, it was
found that the highest average grade obtained pasteurization processes (6.27) and packaging (6.06), and
the lowest - the stage of adoption of milk (4.26)
The influence of quality features on consumers’ behavior meat
Celem badań było wyodrębnienie i uszeregowanie najważniejszych cech wpływających na konsumencką ocenę jakości dla poszczególnych rodzajów mięs oraz ryb, a także określenie wpływu tych wyróżników na proces podejmowania decyzji o nabywaniu mięsa i ryb. Materiał badawczy pochodził z ogólnopolskiego badania ilościowego przeprowadzonego w 2012 roku na próbie 1500 respondentów, dorosłych mieszkańców Polski, w 16 województwach, proporcjonalnie do liczby ich mieszkańców. Polski konsument, pomimo zmieniających się na przestrzeni lat wzorców konsumpcji i zwyczajów żywieniowych, nadal jest zwolennikiem mięsa wieprzowego, które stanowi około 60% konsumpcji mięsa ogółem. Zmniejszeniu uległo spożycie wołowiny. Natomiast w latach 1990-2013 zwiększyło się spożycie mięsa drobiowego o prawie 20 kg/osobę/rok. Jedną z determinant wpływających na kształtowanie się zachowań konsumentów względem mięsajest jego jakość, a szczególnie sposób jej postrzegania, charakteryzowania i oceniania przez konsumentów. Jak dowiodły wyniki ilościowego badania empirycznego, polscy konsumenci najrzadziej deklarowali spożywanie dziczyzny, ryb oraz mięsa wołowego. Ponadto stwierdzono, że inna jest siła oddziaływania poszczególnych cech konsumenckiej oceny jakości na podejmowanie ostatecznej decyzji o zakupie mięsa i ryb. Dla większości konsumentów najważniejszym wyróżnikiem był wygląd ogólny. Dla osób kupujących wieprzowinę istotną cechą była zawartość tłuszczu.
