Remote near infrared spectrometry in the food industry with the use of silica and fluoride glasses fibers

In order to respond to the food industry and agriculture needs of on-line control, a NIR spectrometer was developed and coupled with optical fibers. Silica and fluoride glasses were tested. Different geometrical configurations of the optodes were used and compared. The aim was to measure non-destructively the sugar of the fruit (apples and nectarines) and the humidity of the flour. Good results were obtained on the nectarines (sugar) on the flour (humidity) but the determination of the sugar content of the apples was not satisfying. The depth of penetration of the light and the influence of fruit firmness on spectral characteristics are also discussed. / Un spectromètre couplé à des fibres optiques a été développé pour répondre aux besoins de contrôle en ligne des industries agricoles et alimentaires. Des fibres en silice et en verre fluoré ont été testées et différentes configurations ont été mises au point et comparées. Le but est de mesurer de manière non destructive la teneur en sucre dans les fruits et l'humidité dans les farines. De bons résultats ont été obtenus pour le sucre dans les nectarines ou l'humidité dans les farines mais pas pour le taux de sucre des pommes. La profondeur de pénétration de la radiation et l'influence de la fermeté sont également discutés
