    Dimensions of Community Change: How the Community of Sudbury Responded to Industrial Exposures and Cleaned up its Environment

    A city in northern Ontario, which has suffered more than a century of pollution from mining, went from being internationally notorious for its pollution to winning awards for its environmental restoration. The inquiry was into the levers of change that led from an awareness of environmental destruction to taking action. Semi-structured interviews were conducted with 60 people from the community, politicians, industry, miners, and academics. The theory-based analysis led to a community-change model that has helped identify the multiple layers of change required for the re-greening of the environment. With reference to the collective impact literature, this city-level case study found that the city has embraced change based upon agreement on an emerging vision, taking advantage of a confluence of timing and events, adopting evidence-based knowledge, building a sense of pride and place, and having a diffuse yet linked leadership. The Sudbury story is helpful for other industrial communities looking to achieve change

In hierdie studie sal daar ook klem gelê word op die sosiopolitieke faktore wat tot die opbloei van die Afrikaanse musiekbedryf gelei het. Deur die analise van dié kunstenaars se lirieke, sal ek vasstel of hulle wel betekenisvolle werk van literêre gehalte lewer.     Developing final product specifications for long-grain parboiled rice (Oryza sativa L.) based on South African consumer preference

    Thesis (MScFoodSc) -- Stellenbosch University, 2014.ENGLISH ABSTRACT: The objective of this study was to determine the sensory and physicochemical characteristics of long grain parboiled rice that drive consumer liking, in order to generate a product specification that could ultimately be used for setting up a protocol, of processing parameters for long grain parboiled rice. A trained panel applied descriptive sensory analysis (DSA) to characterise the sensory attributes of 12 imported, commercially produced long grain, parboiled, rice samples. The rice samples were differentiated in both its raw and cooked format, by characterising its appearance, aroma, flavour and textural attributes. A consumer panel, comprising of 75 target consumers, rated preference for eight of the parboiled rice samples, in both its raw and cooked format, on a 9-point hedonic scale. Consumers, screened for the task, represented the key rice consuming ethnic groups from three major provinces within South Africa. In-depth consumer opinions and attitudes towards long grain parboiled rice were also examined, using the focus group technique. Physicochemical analysis were performed on all the rice samples, including colour measurement of both raw and cooked rice samples; firmness and stickiness measurement, viscosity measurement, degree of gelatinisation and the protein and amylose content of the samples. Analysis of variance (ANOVA) was conducted on the sensory and physicochemical data, as well as the consumer liking data. Multivariate analyses were performed on the sensory and consumer data, to determine whether relationships existed between the sensory and physicochemical sample attributes and consumer liking. Partial least squares regression (PLS) was performed, in an attempt to relate consumer degree of liking data, and the sensory and physicochemical data.AFRIKAANSE OPSOMMING: The preferred raw rice samples were characterised mainly by the primary attribute of appearance, as having high whiteness intensity. The preferred cooked rice samples were mainly characterised by the primary attributes of appearance, (high whiteness intensity and swollen/plump appearance), and texture (slight stickiness in mouth, starchy mouthfeel after 5 chews and slight grain-to-grain stickiness). Sensory attributes of high firmness and springy/rubbery, and oily aroma mainly characterised the cooked samples that were not preferred. From a sensory perspective, the whiteness intensity, therefore, drives raw rice liking, whereas cooked rice liking is driven by a high degree of swollen/plump appearance, high whiteness intensity, and a relative amount of stickiness in mouth, starchy mouthfeel after 5 chews and grain-to-grain stickiness. Results show that consumers are not similar in their sensory requirements; attitudes and behaviour towards long grain parboiled rice therefore, differ. The physicochemical drivers, associated with both the raw and cooked preferred rice samples, were colour, degree of gelatinisation and viscosity properties. Based on the consumer preference for specific sensory characteristics of long grain parboiled rice, together with analytical measurements, consumer sensory demands can be translated into final product specifications. These specifications, in turn, can then be used as a first step toward setting up processing parameters, to ultimately achieve the desired quality of long grain parboiled rice

    'The horror without object' : a philosophical enquiry into photography, archives, and absence in Project Coast

    Thesis MA(VA)--Stellenbosch University, 2017.ENGLISH ABSTRACT: Following the 1997 arrest of Wouter Basson, South Africans watched in horror how the TRC began to unravel one of apartheid South Africa’s most sordid secrets: Project Coast, South Africa’s chemical and biological warfare programme. Although a surprising number of documents survived the various archival purges, there is a conspicuous lack of photographs pertaining directly to the project. Thus, envisioning what the project would have looked like falls largely into the realm of the imaginary. In this study, I consider the work of photographs in the service of the archive. By situating Project Coast within the visual economies of similar clandestine international CBW programmes, I argue that the lack of photographic evidence speaks to an ideology of absence, and secrecy as ideological. In the first section, I address the pictures that we do have from private and public archives in the form of news media reports and the narrativised account of Basson’s criminal trial, Secrets and Lies: Wouter Basson and South Africa’s Chemical and Biological Warfare Programme (Burger & Gould, 2002). As supplements and placeholders, those photographs which we do have fail to make present the largely fragmented project. However, I argue that this is not tantamount to the failure of the visual. In the second section, I examine the South African History Archive’s CBW Project Collection, AL2922, and begin to tease out how to recognise absence. By thinking of the absences as productive spaces, accessible by considering them as a Thirdspace (Soja, 1996), and engaging with them by seeing a-visually, I argue that the layers of secrecy can be able to be peeled back, leaving the absences that haunt the archive as potentially affective spaces. The absences in the archive have implications for trauma studies and nation-building, and as such, could be considered as imagined documents wherein we are able to project an image of what Project Coast may have looked like. The absences are far reaching, and exist not only in this archive. As such, I posit that by considering these absences as ‘sites’ worthy of critical engagement, we are able to think anew about how the secrecy of apartheid continues to haunt post-apartheid archives.AFRIKAANSE OPSOMMING: Voor die aanvang van die Waarheids- en Versoeningskommissie (WVK) se ondersoeke in 1998 was daar bitter min oor Suid-Afrika se chemiese en biologiese oorlogsvoering- (CBO) vermoëns bekend. Ná die inhegtenisname van Wouter Basson in 1997 het Suid-Afrikaners met afsku aanskou hoe die WVK een van apartheid se mees afstootlike geheime, Project Coast, begin ontrafel het. Daar is 'n beduidende gebrek aan foto's wat direk met die projek verband hou, ten spyte van die feit dat 'n noemenswaardige aantal dokumente die onderskeie suiwerings van argiefmateriaal oorleef het. Visualisering van hoe die projek sou lyk gebeur dus grootliks binne die sfeer van die denkbeeldige. Ek oorweeg in hierdie studie die werk wat foto's in diens van die argief doen. Deur Project Coast binne huidige visuele sisteme van soortgelyke geheime internasionale CBO-programme te posisioneer, argumenteer ek dat die gebrek aan fotografiese bewyse aanduidend is van 'n ideologie van afwesigheid, en van geheimhouding as ideologies gefundeerd.     Le thème de cette thèse s'inscrit dans l'étude et le développement de la technologie de l'enregistrement optique réversible par changement de phase (technologie des DVD-RAM). La compréhension des phénomènes physiques intervenant dans les processus d'écriture et d'effacement des dommées est aujourd'hui indispensable pour permettre le développement des DVD de demain. La très forte interactions entre les aspects optique, thermique, thermodynamique et cinétique des transitions de phase impliqués dans des systèmes e couches minces nous a conduit à mettre en place des modèles pour chacun de ces aspects puis à coupler ces différents phénomènes dans une simulation globale; celle-ci permettant d'analyser avec précision les mécanismes et les paramètres influençant les processus d'amorphisation et de cristallisation qui régissent respectivement les opérations d'écriture et d'effacement.     A partir d'arguments thermodynamiques simples, nous démontrons que les forts gradients de concentration ∇C présents dans les multicouches facilitent l'amorphisation par reaction en phase solide en réduisant ou supprimant le moteur thermodynamique ƊGac de la cristallisation. Lorsque ces gradients baissent avec la croissance de la couche amorphe, le moteur pour la cristallisation est rétabli ; ce qui donne une épaisseur critique maximum pour la couche amorphe comme on observe expérimentalement. Les mécanismes de nucléation homogène et hétérogène sont considérés, l'effet mis en évidence croît avec la courbure dans l'espace concentration de l'énergie libre ƊG de la formation de l'alliage amorphe. Dans le cas de la germination hétérogène de composés de concentration ayant un écart ƊC* avec celle de l'amorphe à l'interface site de germination, nous traçons la région dans l'espace (ƊC, ∇C) dans laquelle le moteur thermodynamique pour la cristallisation est nul. Le développement est applique au système modèle NiZr.Using simple thermodynamic arguments, it is shown that sharp concentration gradients ∇C occuring during diffusive mixing in multilayers facilitate amorphisation by solid state reaction by reducing or suppressing the driving force for crystallisation ƊGac. As the concentration gradients diminish during the amorphous layer growth, the driving force for crystallisation is restored. This evolution yields a critical maximum amorphous layer thickness as observed experimentally. Both homogeneous and heterogeneous nucleation of compounds are considered. It is shown that the effect increases with the second concentration derivation of the Gibbs free energy ƊG of formation of the amorphous phase. For heterogeneous nucleation of a compound of nominal concentration differing by ƊC* for that of the amorphous phase at interface serving as nucleation site, the contours of the domain in (ƊC, ∇C*) space where no driving force for nucleation is available have been derived out and applied to the Ni-Zr system
