    Elaboración de una bebida alcohólica usando subproductos del proceso de beneficio del café (pulpa de café)

    The development of a fermented alcoholic beverage was sought, using the pulp of the coffee to achieve a product with pleasant sensorial characteristics that when consumed, evidences the origin. Coffee pulp is used as raw material, taking into account the high environmental impact that this byproduct generates in coffee ecosystems. It is known that during the process of benefit of coffee are obtained a large number of byproducts that are not used, exceeding 60% of the grain weight and in a high percentage correspond to the pulp.The development of the product was based on the characterization of the raw material, both physicochemical and microbiological, three beverage prototypes were developed using various pulp­mucilage blends. The results of the prototypes were evaluated taking into account the sensory profile and the production process. The best behavior prototype was chosen and finally the standardization of the production process was made. It was possible to obtain as a final result, a drink that sensorially conserves characteristics to coffee and according to its productive process, is easy to implement and produce.Se buscó el desarrollo de una bebida alcohólica fermentada usando la pulpa del café, para lograr un producto con características sensoriales agradables que al ser consumido evidencie el origen. Se usa la pulpa de café como materia prima teniendo en cuenta el alto impacto ambiental que este subproducto genera en los ecosistemas cafeteros; se sabe que durante el proceso de beneficio del café se obtienen gran cantidad de subproductos que no son aprovechados, que superan el 60% del peso del grano y que en un alto porcentaje corresponden a la pulpa.Para el desarrollo del producto se partió de la caracterización de la materia prima, tanto físico-química como microbiológica, se desarrollaron tres prototipos de bebidas usando diversas mezclas pulpa-mucilago, se evaluaron los resultados de los prototipos teniendo en cuenta el perfil sensorial arrojado y el proceso productivo del mismo, se escogió el prototipo de mejor comportamiento y finalmente se hizo la estandarización del proceso de producción del mismo.Se logró obtener como resultado final una bebida que sensorialmente conserva características a café y que de acuerdo a su proceso productivo es de fácil implementación y producción

    Se presenta el plan tecnológico del Centro de Diseño e Innovación Tecnológico Industrial del SENA para la vigencia 2002 - 2030. Comprende el análisis y diagnóstico de la industria risaraldense, sus necesidades y tendencias, con enfoque a la industria 4.0. Se provee información para: identificar tecnologías y ocupaciones emergentes que permitan anticipar la definición de perfiles de instructores, determinar requerimientos de modernización de infraestructura física y tecnológica del Centro de formación, actualizar, crear o eliminar programas de formación, establecer el tipo de formación, servicios tecnológicos e innovación que el centro de formación ofrecerá en un horizonte de 10 años e identificar los proyectos y actores estratégicos para el centro de formación.The technological plan of the SENA Industrial Technological Design and Innovation Center for the period 2002-2030 is presented. It includes the analysis and diagnosis of the Risaralda industry, its needs and trends, with a focus on industry 4.0.     Evidence of spatial clustering of childhood acute lymphoblastic leukemia cases in Greater Mexico City: report from the Mexican Inter-Institutional Group for the identification of the causes of childhood leukemia

    BackgroundA heterogeneous geographic distribution of childhood acute lymphoblastic leukemia (ALL) cases has been described, possibly, related to the presence of different environmental factors. The aim of the present study was to explore the geographical distribution of childhood ALL cases in Greater Mexico City (GMC).MethodsA population-based case-control study was conducted. Children <18 years old, newly diagnosed with ALL and residents of GMC were included. Controls were patients without leukemia recruited from second-level public hospitals, frequency-matched by sex, age, and health institution with the cases. The residence address where the patients lived during the last year before diagnosis (cases) or the interview (controls) was used for geolocation. Kulldorff’s spatial scan statistic was used to detect spatial clusters (SCs). Relative risks (RR), associated p-value and number of cases included for each cluster were obtained.ResultsA total of 1054 cases with ALL were analyzed. Of these, 408 (38.7%) were distributed across eight SCs detected. A relative risk of 1.61 (p<0.0001) was observed for the main cluster. Similar results were noted for the remaining seven ones. Additionally, a proximity between SCs, electrical installations and petrochemical facilities was observed.ConclusionsThe identification of SCs in certain regions of GMC suggest the possible role of environmental factors in the etiology of childhood ALL

    An alternative for prevention and treatment for cardiovascular diseases (CVD) is increasing the intake of bioactive compounds as omega-3. However, several countries as México do not consume regularly foods with high content of omega-3, mainly fish products due to cultural, social, and economic factors. Therefore, the addition of omega-3 in other food sources could contribute to completing the requirements established of these fatty acids. To evaluate the effect of the consumption of poultry products supplemented with omega-3 in healthy population, a phase 1, double blind randomized, controlled parallel-group trial was carried out. After 14 weeks, the supplemented group had an increase in HDL, reducing the atherogenic index. The supplementation with omega-3 in poultry products could contribute to a cardioprotective effect. It is necessary to complete studies with a higher evaluation period to determine the improvement in anthropometric and cardiovascular parameters
