Avaliação sensorial e microbiológica de linguiça de frango frescal não curada com reduzido teor de gordura
The purpose of this study was to evaluate the acceptability and the microbiological safety of uncured fresh chicken sausages with reduced fat content, considering the scientific evidence that correlated cancer and cardiovascular diseases to this diet. Two formulations of uncured fresh chicken sausage were processed using different concentrations of cochineal carmine pigment, rosemary extracts and synthetic antioxidants, which are used to give color, appearance and pleasant flavor to the products. Then, instrumental color (L*, a*, b*, C* and h*), microbial contamination and sensory tests (ranking and acceptance) were used to evaluate the quality of the uncured chicken sausages. The instrumental color (chroma and hue) and the sensory properties of the A and B uncured sausages were similar to the commercial cured sausage (C). However, the sensory color and appearance of samples A and B were statistically higher than those of the commercial uncured sausages D, which are prepared without the addition of nitrite or pigments. The results showed that it is possible to produce safe and high-quality uncured fresh chicken sausage with reduced fat content, using natural pigments and antioxidants.O objetivo deste trabalho foi avaliar a aceitabilidade e a segurança microbiológica de linguiça de frango frescal não curada formulada com baixo teor de gordura, considerando as evidências científicas que correlacionam câncer e doenças cardiovasculares à dieta. Duas formulações de linguiça frescal de frango foram processadas, usando diferentes concentrações de carmim cochonilha, extrato de alecrim e antioxidantes sintéticos utilizados para dar cor, aparência e sabor agradáveis aos produtos. Então, a cor instrumental (L*, a*, b*, C* e h*), contaminação microbiana e testes sensoriais (ordenação-preferência e aceitação) foram utilizados para avaliar a qualidade das linguiças de frango não curadas. A cor instrumental (chroma e hue), as propriedades sensoriais das linguiças não curadas A e B foram similares ao da linguiça comercial curada (C). Porém, a cor sensorial e a aparência das amostras A e B foram estatisticamente superiores às das linguiças comerciais não curadas D, elaboradas sem a adição de nitrito ou pigmentos. Os resultados mostraram que é possível produzir linguiça de frango frescal não curada contendo reduzido teor de gordura com segurança e alta qualidade, utilizando pigmentos e antioxidantes naturais
Effect of treatments and washing cycles on the quality of Nile tilapia (Oreochromis niloticus) protein concentrate
The extraction of proteins from wastes reduces production costs and environmental pollution. The aim of this work was to evaluate the effect of two treatments involving decanting/sieving or centrifugation and the number of washing cycles on the quality of protein concentrate obtained from mechanically separated meat (MSM) of Nile tilapia (Oreochromis niloticus). Results were analyzed in terms of final yield and proximate composition (moisture, protein, fat and ash) after each washing cycle. Moisture did not vary statistically with the treatments and after the third washing cycle. However, the process involving centrifugation was more efficient for protein concentration because the final protein content increased 2.0 folds (79.82%, dry basis) and fat decreased 6.1 folds (8.29%, dry basis). After four washing cycles, it was obtained a protein concentrate with 79.82% protein, 8.29% lipid and 0.45% ash (dry basis), and 80.0% yield, using the centrifugation procedure. Visual whiteness was highly improved after four washing cycles using both processes. It was concluded that the centrifugation process with four washing cycles was the most appropriate method for producing protein concentrate from MSM of Nile tilapia
Marinados com soluções alcalinas para a melhoria da qualidade da carne suína
The objective of this work was to evaluate the effects of alkaline solution marinades on the characteristics of pork subjected to post‑mortem pH decrease in pig muscle. The pH of carcasses was measured in a commercial slaughterhouse (n = 526), 45 min after slaughtering (pH45) and, then, the carcasses were divided into the groups with pH45≤5.7 or pH45>5.7. Ten samples of the longissimus dorsi muscles of each group were collected and distributed in an entirely randomized design, in a 2x4 factorial arrangement, with two conditions (pH45≤5.7 or pH45>5.7), and four marinade solutions: TC, no marinade; TM1, sodium bicarbonate and sodium chloride; TM2, sodium tripolyphosphate and sodium chloride; TM3, sodium bicarbonate, sodium tripolyphosphate and sodium chloride. There was no interaction between pH45 of the meat and the marinade treatments. Meat with pH45≤5.7 showed higher values for lightness, and for purge loss (PL), exudate loss (EL), cooking loss (CL) and shear force (SF). Marinating increased the pH, reduced the lightness, EL, CL and SF, and improved tenderness, juiciness and flavor of meat. Marinades with solutions containing chloride, bicarbonate, and sodium tripolyphosphate are effective in the improvement of pork quality, making physical characteristics of marinated meat similar to those of fresh pork, as a consequence of accelerated postmortem glycolysis.O objetivo deste trabalho foi avaliar os efeitos de marinadas com soluções alcalinas sobre características da carne de porco submetida a quedas do pH post‑mortem, em músculo de porco. O pH das carcaças foi medido em abatedouro comercial (n = 526), aos 45 min pós‑abate (pH45) e, em seguida, as carcaças foram divididas em grupos com pH45≤5,7 ou pH45>5,7. Dez amostras do músculo longissimus dorsi de cada grupo foram coletadas e distribuídas em delineamento inteiramente casualizado, em arranjo fatorial 2x4, com duas condições (pH45≤5,7 ou pH45>5,7) e quatro soluções de marinação: TC, controle sem marinação; TM1, bicarbonato de sódio e cloreto de sódio; TM2, tripolifosfato de sódio e cloreto de sódio; TM3, bicarbonato de sódio, tripolifosfato de sódio e cloreto de sódio. Não houve interação entre o pH45 da carne e os tratamentos marinados. As carnes com pH45≤5,7 apresentaram maior luminosidade, perda por purga (PP), perda de exsudato (PE), perda de peso por cozimento (PC) e força de cisalhamento (FC). A marinação aumentou o pH da carne, reduziu a luminosidade, PE, PC e FC, e melhorou a maciez, suculência e palatabilidade. As marinadas com soluções alcalinas de cloreto, bicarbonato e tripolifosfato de sódio são eficazes no melhoramento da qualidade da carne suína, o que torna as características físicas das carnes processadas com marinadas semelhantes às da carne in natura, em consequência da acelerada glicólise post‑mortem
