    The Effect of Adding Purple Yam Flour on the Organoleptic Properties of Biscuits

    Biscuit is a type of dry food that is popular among the community. In the making of biscuits, additional ingredients are added to increase nutritional value, such as the addition of purple yam tuber. Purple yam contains high levels of carbohydrates and calories. Its carbohydrate content has a high amylose level of 26.98-31.02%. One of the food products that can be made into a healthy snack with high fiber and nutritional value is biscuits. The aim of this study is to determine the effect of adding purple yam flour to the acceptability of biscuits as a high fiber snack. This study is experimental using a Completely Randomized Design (CRD) Non-Factorial with 3 treatments and 3 replications. To influence acceptability, sensory tests were conducted on taste, aroma, texture, and color using 25 panelists. The results showed that the acceptability of biscuits with the addition of purple yam flour from the color aspect was most preferred by panelists in treatment A (150 g) compared to B (125 g) and C (100). The addition of purple yam flour has no significant effect on taste, aroma, and texture, while there is a significant effect on color

    Anemia and Wasting in Adolescent Girls: A Cross-Sectional Study in Aceh, Indonesia

    The purpose of this study was to assess the anemia and nutritional status in adolescent girls. A cross-sectional study was conducted on 348 senior high school girls. Nutritional status was determined by BMI-for-age Z-score for those younger than 19 years and BMI for those older than 19 years. Anemia was determined using the standard of severely low hemoglobin level of less than 12 mg/dL. Data analysis used the logistic regression test at the 95% confidence interval. The results showed that 40.5% of adolescent girls had anemia, 50.9% were wasted, and 14.4% were overweight/obese. Wasting and obesity are risk factors for anemia in adolescent girls. Intervention is needed to prevent anemia and wasting by improving balanced diet and nutrition education

    Pre-conception Nutrition Care, Nutritional Knowledge, Nutritional Practices, and cultural Belief among pregnant women: A Qualitative Study in Aceh

    Health care during pre-conception and pregnancy is one of the important factors that can improve pregnancy outcomes. This study aims to explore how pre-conception care, nutrition knowledge and practices, and the factors that influence it in pregnant women. This study used a cross-sectional design with a qualitative study approach. The subject was 11 pregnant women who were selected as well as 5 health workers. The data pre-conception of care and nutrition practices before pregnant, nutrition knowledge and nutrition practices, food taboo and suggestion, cultural belief influence, and data sources of information and nutritional information needs was carried out using the Focus Group Discussion. The results showed that most of the pregnant women did not get and done pre-conception nutrition care, had insufficient nutritional knowledge and the practice of balanced nutrition was still low. There is still an influence of cultural belief in the form of food taboos and food suggestions, and the lack of sources of information and nutritional information towards nutrition practice. It is necessary to develop media and nutrition educational methods to improve nutrition and health care  during pre-conception and pregnancy, and further studies are needed specifically on the role of family factors, especially grandmothers, mothers in-laws, and family members on nutrition practices in pregnant women
