    Cambios en contenido de compuestos fenólicos y color de extractos de Jamaica (Hibiscus sabdariffa) sometidos a calentamiento con energía de microondas

    En este trabajo se realizó la extracción acuosa de compuestos fenólicos, principalmente antocianinas, provenientes de cálices de jamaica (Hibiscus sabdariffa). El extracto fue calentado por microondas a diferentes temperaturas (30, 40, 50, 60, 70 y 80°C) durante 20 min, tomando una alícuota cada 5 min. En el extracto con y sin calentamiento se determinó el contenido de compuestos fenólicos y los parámetros colorimétricos. Para el contenido de compuestos fenólicos totales se observaron pérdidas al incrementarse la temperatura, las pérdidas fueron del orden de 9.28, 8.22 y 11.34% a 60, 70 y 80°C respectivamente. Los parámetros de color a* y b* disminuyeron después de los tratamiento con, microondas mientras que L* aumentó, presentándose el cambio mayor fue observado en el extracto sometido a 80°C

    Coffee (Coffea arabica L.) is one of the most popular and widely consumed products throughout the world, mainly due to its taste, aroma, caffeine content, and natural antioxidants. Among those antioxidants, anthocyanins are one of the most important natural pigments, which can be found in coffee husks. It is widely known that anthocyanins have multiple health benefits partially linked to their antioxidant properties. However, anthocyanins have low stability and are sensitive to all types of changes. In order to prevent its degradation, anthocyanins can be stabilized with nanoparticles. Thus, the main objective of this study was to evaluate the stability of the anthocyanins extracted from coffee husks, using three different extracting agents (ethanol, methanol, and water) and stabilizing them through conjugation with zinc oxide nanoparticles. The anthocyanins extracts were mainly composed of cyanidin-3-rutinoside (97%) and the total phenolic compounds of the fresh extracts were 458.97 ± 11.32 (methanol), 373.53 ± 12.74 (ethanol), and 369.85 ± 15.93 (water) mg GAE/g. On the other hand, the total phenolic compounds of the nanoparticle–anthocyanin conjugates underwent no significant changes after stabilization as the major loss was less than 3%. Furthermore, the percentage of anthocyanins’ degradation was less than 5% after 12 weeks of storage. On top of that, fresh anthocyanin extracts and anthocyanin–nanoparticle conjugates exhibited a strong protective effect against oxidative stress and increased the survival rate of Caenorhabditis elegans

    Analysis of Caloric and Noncaloric Sweeteners Present in Dairy Products Aimed at the School Market and Their Possible Effects on Health

    Over the past decades, Mexico has become one of the main sweetener-consuming countries in the world. Large amounts of these sweeteners are in dairy products aimed at the children’s market in various presentations such as yogurt, flavored milk, flan, and cheeses. Although numerous studies have shown the impact of sweeteners in adults, the current evidence for children is insufficient and discordant to determine if these substances have any risk or benefit on their well-being. Therefore, this study aimed to describe the sweeteners present in 15 dairy products belonging to the school-age children’s market in Mexico and their impact on health. These dairy products were selected through a couple of surveys directed at parents of school-age children. After that, the list of ingredients of each product was analyzed to identify their sweetener content. From there, exhaustive bibliographic research on sweeteners and their possible health effects was carried out, which included 109 articles and 18 studies. The results showed that at a neurological, endocrinological, cardiovascular, metabolic, osseous, renal, hepatic, dental, reticular, carcinogenic, and gut microbiota level; sucrose, fructose, high-fructose corn syrup, maltodextrins, sucralose, and acesulfame K, have a negative effect. While maltodextrins, stevia, polydextrose, and modified starch have a positive one. For these reasons, it is necessary to evaluate the advantages and disadvantages that the consumption of each sweetener entails, as well as a determination of the appropriate acceptable daily intake (ADI)

    Recent Advances in the Therapeutic Potential of Carotenoids in Preventing and Managing Metabolic Disorders

    Carotenoids constitute compounds of significant biological interest due to their multiple biological activities, such as antimicrobial, anticancer, antiadipogenic, antidiabetic, and antioxidant properties. Metabolic syndrome (MetS) comprehends a series of metabolic abnormalities (e.g., hypertension, obesity, and atherogenic dyslipidemia) that can affect children, adolescents, and the elderly. The treatment of MetS involves numerous medications, which, despite their efficacy, pose challenges due to prolonged use, high costs, and various side effects. Carotenoids and their derivatives have been proposed as alternative treatments to MetS because they reduce serum triglyceride concentrations, promote insulin response, inhibit adipogenesis, and downregulate angiotensin-converting enzyme activity. However, carotenoids are notably sensitive to pH, light exposure, and temperature. This review addresses the activity of carotenoids such as lycopene, lutein, fucoxanthin, astaxanthin, crocin, and β-carotene towards MetS. It includes a discussion of sources, extraction methods, and characterization techniques for analyzing carotenoids. Encapsulation approaches are critically reviewed as alternatives to prevent degradation and improve the biological performance of carotenoids. A brief overview of the physiopathology and epidemiology of the diseases, including MetS, is also provided

    Videira 'Syrah' sobre diferentes porta-enxertos em ciclo de inverno no sul de Minas Gerais

    O objetivo deste trabalho foi avaliar a influência de porta-enxertos sobre as características agronômicas, ecofisiológicas e qualitativas da videira 'Syrah' manejada por meio da técnica da dupla poda. As videiras foram enxertadas nos porta-enxertos 'SO4', '110 Richter' e '1103 Paulsen', e sustentadas em sistema espaldeira sem irrigação. Foram avaliadas as características ecofisiológicas, de produção e de composição físico-química das bagas maduras em três safras (2007, 2008 e 2010). Os porta-enxertos não exerceram influência sobre o potencial hídrico de base, que apresentou valores próximos a -0,2 MPa, o que indica que não houve restrição hídrica no solo ao final da maturação (junho). Também não houve diferença significativa quanto à produção. O porta-enxerto '1103 Paulsen' conferiu menor vigor, menor taxa fotossintética e melhores resultados de maturação, para as safras com menores precipitações. Os porta-enxertos '110 Richter' e 'SO4' apresentaram maior vigor nas condições meteorológicas de 2010 e as maiores taxas fotossintéticas para o mesmo período. As condições meteorológicas tiveram efeito significativo na maturação tecnológica e fenólica, com os melhores resultados para os anos mais secos. O porta-enxerto '1103 Paulsen' fornece melhor equilíbrio entre vigor e produção, o que aumenta a qualidade da uva
