Validation by in-vitro digestion and sensory analysis of incorporating vegetable oil encapsulates in cottage cheese
Malnutrition is a global issue linked to energy or nutrient imbalances, often resulting in deficiencies or overweight. Dairy products, rich in macronutrients and micronutrients, are a potential solution. However, processing, storage, and digestion can lead to nutrient loss. To enhance nutritional value, functional ingredients like microencapsulated compounds are used. This study focused on assessing the bioaccessibility of microencapsulated ingredients in cottage cheese, their impact on sensory attributes, and shelf-life. Two microencapsulated ingredients were studied: high oleic palm oil (HOPO), encapsulated using spray drying (SD) and a refractive window (RW) drying technique. The bioaccessibility of these ingredients was evaluated using the INFOGEST in-vitro digestion model. Results showed that HOPO encapsulated via SD in cottage cheese (CSD) preserved oleic and linoleic acids best, and via RW in cottage cheese (CRW) preserve vitamins in 63 % and antioxidants in 96 %. This highlights the effectiveness of microencapsulation techniques in enhancing dairy product functionality and a 72 % of fatty acids release suggesting potential strategies for combating malnutrition through fortified dairy products. © 2024 The Author
Art in movement, art as movement: Collective action and collective gathering for intangible cultural heritage sustainability
Carnaval de Negros y Blancos is a mixed-race festive act inscribed on UNESCO's list of intangible cultural heritage (ICH). It hosts collective gatherings that provide opportunities for identity emergence and reaffirmation, where heritage owners lead top-down and bottom-up safeguarding efforts. This study aims to document the processes of collective action for sustainability, by analyzing top-down and bottom-up initiatives for safeguarding. We conducted a mixed-methods study in Pasto, Colombia, using data from interviews with ICH stakeholders (n = 59) and from surveys with carnival players (n = 403). Heritage safeguarding, peacebuilding, human expression, transcendent experience, and evolving identities are the main themes within safeguarding movements. Additionally, the quality of participation in the event, either as performer or not performer at Senda del Carnaval, relates to sociocognitive and emotional processes of both social movements and collective gatherings. Findings portray ICH as a context for sustainable cities and communities, as well as increased peace, justice, and responsive institutions. © 2024 International Society of Political Psychology
Metric Properties of the Test of Infant Motor Performance in Colombian Children; [Propiedades métricas del Test de Desarrollo Motor en niños colombianos]
Objective. The objective of this research was to determine the metric properties of the Test of Infant Motor Performance (TIMP) adapted to Colombian Spanish. Methods. This study evaluated a diagnostic test through analyses of metric properties, i.e., internal consistency, interrater reliability and concurrent validity. The unit of analysis was the Test of Infant Motor Performance. A sample of 112 children between 36 weeks postmenstrual age and 4 months of age was assessed. Two expert evaluators in the area of child neurorehabilitation, with expertise and training in the application of the instrument, participated. The internal consistency analysis was performed using Cronbach’s alpha coefficient. The interrater reliability evaluation was performed by calculating intraclass correlation coefficients. The Pearson correlation coefficient was used to determine concurrent validity. The analyses of the data obtained were performed using SPSS version 27.0. Results. The Cronbach’s α was between 0.61 and 0.84. For the reliability, the instrument revealed an intraclass correlation coefficient between 0.54 and 0.93. The concurrent validity showed a Pearson correlation coefficient of 0.82. Conclusions. The TIMP adapted to Colombian Spanish is a valid and reliable instrument that can be used for the assessment of motor performance in children. © 2025. María Cano University
Social, cultural and institutional forces in corporate and patrimonial states and their relations with corporate governance: a North–South contrast
Purpose: This study aims to examine two questions that contribute to understanding the organizational corporate governance forms of the so-called New World: What have been the social and cultural forces that gave rise to the institutional features of the Anglo-Saxon corporate states and the Hispanic patrimonial states? And how have these traits influenced the governance forms of North American and Latin American firms? Design/methodology/approach: A comparative historical analysis methodology that dates back to the colonial foundations of the New World was used. Analysis categories were derived to allow us to reflect on the phenomenon studied and support the hypotheses while deriving observations that explain the historical relationships of the state types and their capitalisms with contemporary corporate governance. The research also considered case analysis in context, presented as specific empirical evidence. Findings: The paper maintains that the historical social and cultural forces that were configured in the New World shaped the institutional features of the Anglo-Saxon corporate states with liberal capitalism and the Hispanic patrimonial states with hierarchical capitalism, and that these features are related to the predominant organizational corporate governance forms in North American and Latin American firms, respectively. Originality/value: This paper provides insights into the social, cultural and institutional factors that gave rise to corporate and patrimonial states and their relationships with the different types of organizational corporate governance. It introduces a categorization into the literature with three types of organizational corporate governance (e.g. corporatist, patrimonial and hybrid). This allows progress in linking corporate governance theories with a managerial focus and governance perspectives oriented to economic and social development. © 2024, Emerald Publishing Limited
