Efecto prebiótico de la fibra y quitina de Acheta domesticus sobre Lactobacillus bulgaricus

Acheta domesticus forma parte de la dieta de diversos animales. Además del aporte proteínico, provee de fibra como la quitina, que al no ser digeridas facilitan la digestión. A las moléculas de los alimentos que no son digeribles se les denomina prebióticos, éstas mejoran la proliferación de bacterias ácido lácticas, y contribuyen a la salud del huésped. Se evaluó el efecto prebiótico de la fibra y quitina de Acheta domesticus sobre Lactobacillus bulgaricus. La bacteria se creció en caldo MRS suplementado con 43 y 175 mg de fibra y quitina (65 y 130 mg), respectivamente, obtenidos de Acheta domesticus, y quitosano (1 y 2 mg). Los cultivos se incubaron a 37ºC durante 10h. Las tres macromoléculas promovieron la proliferación bacteriana, incrementaron el contenido de ácido láctico y peróxido de hidrógeno, con una disminución en el pH. Los resultados mostraron que la quitina y fibra de A. domesticus tuvieron efecto prebiótico similar al del quitosano sobre L. bulgaricus.Acheta domesticus is part of the diet of different animals. Besides protein intake, it provides them with fiber such as chitin, which eases digestion when they are not digested. We call probiotics to those food’s molecules that aren’t digestible; these ones improve the proliferation of lactic acid bacteria, contributing to the host health. We evaluated the probiotic effect of fiber and chitin of Acheta domesticus upon Lactobacillus bulgaricus. The bacteria grew within MRS broth supplemented with 43 and 175 mg of fiber and chitin (65 and 130 mg), respectively, obtained from A. domesticus and chitosan (1.25 and 2.5 mg). Broths were incubated to 37ºC during 10 hours. The three macromolecules promoted the bacterial proliferation; they increased the acid lactic content and hydrogen peroxide with a decrease in pH. The results showed that chitin and fiber of A. domesticus had a probiotic effect that was similar to that from the chitosan upon L. bulgaricus
