Analysis of meat products supplemented with omega-3 fatty acid sources
Summary Our research goal was to increase the n-3 fatty acid content of three meat products (letscho sausage, Kaiserroulade, duck liver pâté), so that the added value can be declared on the product labels. Increasing the amount of n-3 fatty acids was performed by the addition of flax seed sprout oil rich in alpha-linolenic acid (min. 300 mg of alphalinolenic acid/100 g or 100 kcal product) or fish oil rich in EPA (eicosapentaenoic acid) and DHA (docosahexaenoic acid) (min. 40 mg EPA + DHA/100 g or 100 kcal product). We found that the n-3 fatty acid proportion of the products tested were increased significantly (p < 0.05) by the oil supplements used. Of the products supplemented by bio flax seed sprout oil, letscho sausage performed the best, with an alpha-linolenic acid content of 644 mg/100 kcal, sufficient to be able to claim „rich in omega-3 fatty acids” on the label. The value was 575 for the Kaiserroulade and 504 mg for the duck liver pâté. These values allow the legitimate use of the statement „omega-3 fatty acid source”. The measured EPA + DHA content of the Kaiserroulade supplemented with fish oil was 99 mg/100 kcal, sufficient to be able to claim „rich in omega-3 fatty acids” on the label. The EPA + DHA contents of letscho sausage and duck liver pâté failed to reach the level required to be able to claim the above statement on the label by 1 and 4 mg/100 kcal, respectively. The more important microbiological parameters of the finished products were not affected negatively by the oil supplements used, and the shelf lives of the products did not decrease either. The appearance of the products was not influenced by the supplements, however, foreign flavors and odors were identified by testers in several instances, due to the fish oil and bio flax seed sprout oil supplements
Omega-3 zsírsavforrásokkal kiegészített húskészítmények vizsgálata
Kutatásunk célja az volt, hogy három húskészítmény (lecsókolbász, császár rolád, kacsamájas) n-3-zsírsav-tartalmát megnöveljük úgy, hogy a hozzáadott érték deklarálható legyen a termékek jelölésén. Az n-3-zsírsavak szintjének növelését alfa-linolénsavban gazdag bio lenmagcsíra-olajjal (legalább 300 mg alfa-linolénsav/100 g vagy 100 kcal termék) valamint EPA-ban (eikozapentaénsavban) és DHA-ban (dokozahexaénsavban) gazdag halolajjal (min. 40 mg EPA + DHA/100 g vagy 100 kcal termék) végeztük el. Megállapítottuk, hogy az alkalmazott olajkiegészítések szignifikánsan (p < 0,05) növelték a vizsgált termékek n-3-zsírsavarányát. A lenmagcsíraolajjal kiegészített termékek közül a lecsókolbász szerepelt a legjobban 644 mg/100 kcal alfa-linolénsav tartalmával, ami elegendő az „omega-3 zsírsavban gazdag” címkén feltüntethető állítás használatához. A császár rolád 575, míg a kacsamájas 504 mg értéket ért el. Ezek az értékek lehetővé teszik az „omega-3-zsírsavak forrása” állítás jogszerű használatát. A halolajjal kiegészített császár rolád termékben 99 mg/100 kcal EPA + DHA-tartalmat mértek, ami elegendő az „omega-3-zsírsavakban gazdag” állítás címkén történő feltüntetéséhez. A lecsókolbász és a kacsamájas EPA + DHA tartalma 1, illetve 4 mg/100 kcal-val elmarad attól a szinttől, hogy az előbbi állítás e terméknél a jelölésen feltüntethető legyen. Az alkalmazott olajkiegészítések a késztermékek fontosabb mikrobiológiai jellemzőit nem befolyásolták negatívan és a termékek minőségmegőrzési ideje sem csökkent. A kiegészítések a termékek megjelenésére sem voltak hatással, ugyanakkor a bírálók a halolaj és a lenmagcsíraolaj kiegészítés hatására több esetben idegen ízt és illatot azonosítottak
Light Control of Salt-Induced Proline Accumulation Is Mediated by ELONGATED HYPOCOTYL 5 in Arabidopsis
Plants have to adapt their metabolism to constantly changing environmental conditions, among which the availability of light and water is crucial in determining growth and development. Proline accumulation is one of the sensitive metabolic responses to extreme conditions; it is triggered by salinity or drought and is regulated by light. Here we show that red and blue but not far-red light is essential for salt-induced proline accumulation, upregulation of Delta 1-PYRROLINE-5-CARBOXYLATE SYNTHASE 1 (P5CS1) and downregulation of PROLINE DEHYDROGENASE 1 (PDH1) genes, which control proline biosynthetic and catabolic pathways, respectively. Chromatin immunoprecipitation and electrophoretic mobility shift assays demonstrated that the transcription factor ELONGATED HYPOCOTYL 5 (HY5) binds to G-box and C-box elements of P5CS1 and a C-box motif of PDH1. Salt-induced proline accumulation and P5CS1 expression were reduced in the hy5hyh double mutant, suggesting that HY5 promotes proline biosynthesis through connecting light and stress signals. Our results improve our understanding on interactions between stress and light signals, confirming HY5 as a key regulator in proline metabolism
3D nyomtatás alapú cranioplasztika szilikon öntészeti módszerek és csontcement alkalmazásával
Due to the special physiological circumstances of the intracranial space, it is especially important to repair congenital or acquired defects of the cranial bone. The aesthetic impact of the surgery is also not negligible. At our Institute we developed a cranioplasty procedure in which the 3D reconstruction of a thin-layer computed tomography (CT) scan of the skull is used to reflect the intact side onto the defective side and subtract the overlapping points from one another. In this way a 3D model can be constructed of the implant with the exact shape and size needed to substitute the defective part. By printing the defective part of the skull, the precise fit of the implant can be easily checked and if necessary, the model can be modified. Based on the finalized model we fabricated a sterilizable silicone mold that can be used for molding the appropriate replacement from poly(methyl methacrylate) (PMMA) bone cement in an aseptic environment during the surgery.Between 2013 and 2020, in collaboration with the Department of Neurosurgery, Faculty of Medicine, University of Szeged, and the Division of Neurosurgery, Hospital of the Health Center of the Hungarian Defence Forces we created such cranioplasty molds for 29 patients. We experienced no technical problems during the surgery. Septic complications, not connected to this special procedure, occurred in two cases (regarding three implants) and in these cases theimplants had to be removed.In our opinion, custom made bone cement implants, molded in silicone molds that are fabricated with 3D printing technology, can be used with good results to repair defects of the skull.A koponyacsont veleszületett, vagy szerzett hiányainak pótlása az intracraniális tér különleges fizikai és élettani viszonyai miatt rendkívül fontos. Nem hanyagolható el a műtét esztétikai hatása sem. Az intézetünkben kidolgozott cranioplasztikai eljárás folyamán, a koponyáról készült vékony réteg CT felvételek 3D rekonstrukciója során az ép oldalt szoftveresen a sérült régióratükrözzük, majd az átfedő pontokat kivonjuk egymásból. Így előállítható a defektus pótlására alkalmas alak-és méretpontos 3D modell. A sérült koponyarészletet kinyomtatva a pótlás pontos illeszkedése könnyen ellenőrizhető, probléma esetén a modell módosítható. A végleges modellrőlsterilizálható szilikon öntőmintát készítünk, melynek felhasználásával műtét közben a megfelelő pótlás poly(methyl methacrylate) (PMMA) alapú csontcementből steril körülmények között kiönthető és beültethető.2013-tól 2020-ig a Szegedi Tudományegyetem Általános Orvostudományi Karának Idegsebészeti Tanszékével és a Magyar Honvédség Egészségügyi Központ Honvédkórház Idegsebészeti Osztályával együttműködve 51 esetben készítettünk ezzel a módszerrel cranioplasztika öntőformát.Műtéttechnikai probléma nem volt. 2 beteg esetében 3 pótlást érintően lépett fel szeptikus, a bemutatott implantátum-előállító eljárástól független szövődmény, emiatt a pótlások eltávolítására kényszerültünk.Véleményünk szerint a 3D nyomtatási technológiával előállított szilikon öntőformában, csontcementből készülő egyedi implantátumok igen jó eredménnyel alkalmazhatóak a koponya csontos hiányainak pótlására
A Néprajzi Múzeum tárgykatalógusai = Catalogues of collections of the Museum of Ethnography
A kutatási program egy hosszú évek óta sikeresen folyó kutatás és feldolgozás továbbvitele, amely a Néprajzi Múzeum rendkívül gazdag tárgyi gyűjteményének minél szélesebb körű feltárását, bemutatását és elemzését tűzte célul. Az előző két kutatási program folytatásaként, annak és nemzetközi katalógusmunkák eredményeinek felhasználásával, a műtárgykatalógus elméleti és módszertani alapjainak továbbgondolásával öt katalógust jelentettünk meg, háromnak pedig előkészületi munkái részben vagy egészében befejeződtek. Az elnyert pályázat keretében a program vállalásait teljesítettük: Gráfik Imre Céhemlékek, Selmeczi-Kovács Attila: A tokmány, Főzy Vilma: A piaroa gyűjtemény, Csupor István Céhes kerámiák és Kerezsi Ágnes Obi ugor viseletek című tárgykatalógusa megjelent. Nyomdakész állapotban van Szacsvay Éva Szobrok című munkája, kéziratos formában elkészült Szarvas Zsuzsa A vászonfeszítő című katalógusa és jelentős mértékben előrehaladtak Fejős Zoltán A kéregedény című összefoglalásának munkálatai is. A megjelent katalógusok bevezető tanulmánya – illetőleg a nemzetközi gyűjteményekből származó munkáknál a tárgyleírás – kétnyelvű, ami lehetővé teszi, hogy eredményeink a nemzetközi kutatás számára is hasznosuljanak. | Following in the footsteps of a successful and long-running research and processing project, this study program has set the goal of comprehensive exploration, presentation and analysis of the extremely rich collection of objects housed by the Museum of Ethnography. Building on earlier experience, in determining the topics and the methodology of the catalogues we strove to take multiple considerations into account. We have published five catalogues: Imre Gráfik: Guild Relics, Attila Selmeczi Kovács: The Whetstone Holder, Vilma Főzy: The Piaroa Collection, István Csupor: Guild Pottery, Ágnes Kerezsi: Ob-Ugrian costume. The Statues by Éva Szacsvay is ready for print and serious preparation works for two other catalogues (Zsuzsa Szarvas: The Canvas Strainer and Zoltán Fejős: The bark pot) has been made. The introductory part in all catalogues – and in some cases the descriptions of the objects as well – have been translated into English, which makes the result of this study program available for the international scientific field
Note on the distribution of Geolycosa vultuosa (Araneae: Lycosidae) in the "Câmpia Careiului" Natura 2000 site, north-western Romania
Abstract. We identified Geolycosa vultuosa in 11 grassland patches, most of them located in the centre of the protected natural area. These habitats are sandy grasslands with a moderate or high grazing intensity as well as fallow or abandoned lands and a sand pit. The expansion of the species in the area is favoured by the continuously increasing number of sheep flocks which produce suitable habitats for G. vultuosa through grazing
