    Nutrient Contribution of the Dinner Meal Consumed by Low-Income Minority Preschool Children

    Objective: To examine the energy and nutrient intake of dinner of low income preschool minority groups, African-Americans and Mexican-Americans, attending Head Start (HS). Design: Cross-sectional study of intake at dinner using digital photography. Pictorial records were converted to energy and nutrient intakes using NDS-R Nutritional software. Means±SE for total grams of food and beverages, energy, and macro- and micro-nutrients were determined and compared with recommendations. Setting: Home assessment dinner of children enrolled in HS in Houston, TX. Subjects: Low-income children (n=214), 3 to 5 years (mean age 4.4 ± 0.7 years; 48% boys; 53% Mexican-American). Results: Energy from food and beverages and food was 350.29±10.36 kcals and 302.35±10.46 kcals, respectively. Mean protein, carbohydrate, and total fat intakes were 14.22±0.52 g (16.32% of total energy), 44.33±1.25 g (52.24%), and 13.18±0.56 g (32.29%), respectively, which provided 95.4±0.52%, 44.5±1.25%, and 10.4±0.11% of the requirements for protein, carbohydrate, and dietary fiber, respectively; these were consistent with recommendations. Intakes of vitamin D, calcium, and potassium were 0.66±0.08 mcg, 102.61±5.03 mg, and 404.42±13.63 mg, respectively; which constituted only 6.6±0.08%, 12.7±5.03%, and 10.7±13.63% of these nutrients of public health concern. Conclusions: Children participating in HS had low intakes of nutrients of public health concern at the dinner meal. The dinner meal is an integral part of the daily intake of preschool children and this study suggests that micronutrient intakes could be improved. It is important to educate mothers and children as to what constitutes a nutrient-dense meal and to confront barriers to consumption of these meals

    Resemblance of Dinner Meal Consumption among Mother and Preschool-Aged Child Dyads from Families with Limited Incomes

    Parents’ eating habits are associated with food and nutrient intake of their children; yet, the associations have not always been very strong. The objective of this study was to expand the current literature to include an examination of resemblance in intakes of foods, within the context of a meal, among mother and preschool-aged child dyads from families of limited incomes. Mother-child dyads (n=112; 41% Hispanic and 59% African-American) participated in the study. During the two home observations of each mother-child dyad, a digital photography method plus actual weighing of plate waste was used to assess the amount of food served and consumed by the mothers and children. There were significant correlations between the mother-child dyad intakes of food/beverages consumed at the dinner meal; ranging from 0.298 (total beverages, p<0.01) to 0.687 (100% fruit juice or milk, p<0.01). There was a significant linear association between the amount of total food/beverages served and the amount consumed for both the mothers (R2=0.72, p<0.0001) and the children (R2=0.55, p<0.0001). Mothers-children who were served larger amounts of total food/beverages consumed more. There was a positive association (p<0.05) between the amount of total energy consumed in the mother-child dyads. Portion sizes may be an important strategy that can be used by parents to promote intake of fruits and vegetables and to decrease intake of energy-dense foods. It is important that food and nutrition professionals provide the guidance needed that encourages intake of major food groups in mothers so they can model healthier food consumption behaviors for their children

    Association between sleep duration and body mass index among US low-income preschoolers

    Objective. To verify whether sleep duration was related to body mass index z scores (zBMI) and bedtimes or ethnicity were moderators of the sleep duration-zBMI association among preschoolers from low-income families. Methods. 228 African-American and Hispanic parents and their preschoolers were recruited from Head Start Centers. Parents reported their preschoolers’ sleep duration and bedtimes using the Children’s Sleep Habits Questionnaire and their television watching. Food intake was measured using multiple days of digital photography to estimate energy intake at dinner. The Parenting Stress Index and the Center for Epidemiologic Studies Depression Scale were used to measure stress and depression. Parents’ and preschoolers’ height and weight were measured by trained staff. Results. Longer sleep duration was significantly associated with lower zBMI when controlling for demographics, bedtimes, energy intake at dinner and television watching, but not when also controlling for parents’ demographics, BMI, stress and depression. Preschoolers’ sleep duration-zBMI association was not moderated by bedtimes or ethnicity. Conclusions. Longer sleep duration was associated with lower zBMI among low-income preschoolers when controlling for preschoolers’ characteristics but this was no longer the case when also controlling for parents’ characteristics. Additional studies are needed on the moderators of the sleep duration-zBMI association among low-income preschoolers

    Household food insecurity status and Hispanic immigrant children’s body mass index and adiposity

    Objectives: Despite the high prevalence rates of food insecurity and obesity among children of Hispanic immigrants, there has been a dearth of research on the direct relationship between food insecurity and obesity among this population. Further, prior research examining the association between food insecurity and body composition among children of Hispanic immigrants have not considered adiposity, specifically percent body fat (%BF) and waist circumference (WC), as outcome measurements. The following study contributes to the literature by examining the association between food insecurity and two adiposity measurements, %BF and WC, along with body mass index (BMI) among a sample of young Hispanic immigrant children. Methods: Cross-sectional survey and direct body composition assessments were collected among 49 low-income Hispanic immigrant children (mean age = 5.5. years) and their 44 mothers (mean age = 35.5 years) from two Houston-area community centers. Data were collected on household food security status using the 18-item USDA scale, demographic characteristics, and measured height, weight, body fat percentage, and waist circumference from children and mothers. Results: Sixty-five percent of children resided in a food insecure household, 31% of the children were obese in terms of %BF, and 24% were obese in terms of BMI. A greater percentage of food secure children were classified as obese in terms of %BF, BMI, and had an elevated waist circumference. A direct relationship was not observed between food insecurity and elevated waist circumference (OR = .08, p = .10); however, children living in food insecure households had 89% lower odds of having an elevated %BF (OR = 0.11, p \u3c .01), 93% lower odds of being obese (OR = 0.07, p \u3c .05), and 87% lower odds of being overweight/obese (OR = 0.13, p \u3c .05). Conclusions: In young children of Hispanic immigrants, food insecurity was related to healthier levels of %BF and BMI. Studies that track adiposity and weight status of children of Hispanic immigrants in relation to food insecurity over time are needed to further understand why food insecurity and obesity co-exist for some groups but not others

    Parent-child interactions and objectively measured child physical activity: a cross-sectional study

    <p>Abstract</p> <p>Background</p> <p>Parents influence their children's behaviors directly through specific parenting practices and indirectly through their parenting style. Some practices such as logistical and emotional support have been shown to be positively associated with child physical activity (PA) levels, while for others (e.g. monitoring) the relationship is not clear. The objectives of this study were to determine the relationship between parent's PA-related practices, general parenting style, and children's PA level.</p> <p>Methods</p> <p>During the spring of 2007 a diverse group of 99 parent-child dyads (29% White, 49% Black, 22% Hispanic; 89% mothers) living in low-income rural areas of the US participated in a cross-sectional study. Using validated questionnaires, parents self-reported their parenting style (authoritative, authoritarian, permissive, and uninvolved) and activity-related parenting practices. Height and weight were measured for each dyad and parents reported demographic information. Child PA was measured objectively through accelerometers and expressed as absolute counts and minutes engaged in intensity-specific activity.</p> <p>Results</p> <p>Seventy-six children had valid accelerometer data. Children engaged in 113.4 ± 37.0 min. of moderate-vigorous physical activity (MVPA) per day. Children of <it>permissive </it>parents accumulated more minutes of MVPA than those of <it>uninvolved </it>parents (127.5 vs. 97.1, <it>p </it>< 0.05), while parents who provided above average levels of support had children who participated in more minutes of MVPA (114.2 vs. 98.3, <it>p </it>= 0.03). While controlling for known covariates, an <it>uninvolved </it>parenting style was the only parenting behavior associated with child physical activity. Parenting style moderated the association between two parenting practices - reinforcement and monitoring - and child physical activity. Specifically, post-hoc analyses revealed that for the <it>permissive </it>parenting style group, higher levels of parental reinforcement or monitoring were associated with higher levels of child physical activity.</p> <p>Conclusions</p> <p>This work extends the current literature by demonstrating the potential moderating role of parenting style on the relationship between activity-related parenting practices and children's objectively measured physical activity, while controlling for known covariates. Future studies in this area are warranted and, if confirmed, may help to identify the mechanism by which parents influence their child's physical activity behavior.</p

    Associations among parental feeding styles and children's food intake in families with limited incomes

    <p>Abstract</p> <p>Background</p> <p>Although general parenting styles and restrictive parental feeding practices have been associated with children's weight status, few studies have examined the association between feeding styles and proximal outcomes such as children's food intake, especially in multi-ethnic families with limited incomes. The purpose of this study was to evaluate the association of parental feeding styles and young children's evening food intake in a multiethnic sample of families in Head Start.</p> <p>Methods</p> <p>Participants were 715 Head Start children and their parents from Texas and Alabama representing three ethnic groups: African-American (43%), Hispanic (29%), and White (28%). The Caregivers Feeding Styles Questionnaire (Hughes) was used to characterize authoritative, authoritarian (referent), indulgent or uninvolved feeding styles. Food intake in several food groups was calculated from 3 days of dietary recalls for the child for evening food intakes from 3 PM until bedtime.</p> <p>Results</p> <p>Compared to children of authoritarian parents, intakes of fruits, juice and vegetables were lowest among children of indulgent or uninvolved parents (1.77 ± 0.09 vs 1.45 ± 0.09 and 1.42 ± 0.11 cups) as were intakes of dairy foods (0.84 ± 0.05 vs 0.67 ± 0.05 and 0.63+0.06 cups), respectively.</p> <p>Conclusion</p> <p>Findings suggest that permissive parent feeding styles like indulgent or uninvolved relate negatively to children's intake of nutrient-rich foods fruit, 100% fruit juice, vegetables and dairy foods from 3 PM until bedtime.</p

    Parental Influences on Children's Self-Regulation of Energy Intake: Insights from Developmental Literature on Emotion Regulation

    The following article examines the role of parents in the development of children's self-regulation of energy intake. Various paths of parental influence are offered based on the literature on parental influences on children's emotion self-regulation. The parental paths include modeling, responses to children's behavior, assistance in helping children self-regulate, and motivating children through rewards and punishments. Additionally, sources of variation in parental influences on regulation are examined, including parenting style, child temperament, and child-parent attachment security. Parallels in the nature of parents' role in socializing children's regulation of emotions and energy intake are examined. Implications for future research are discussed

    Food Parenting Measurement Issues: Working Group Consensus Report

    Childhood obesity is a growing problem. As more researchers become involved in the study of parenting influences on childhood obesity, there appears to be a lack of agreement regarding the most important parenting constructs of interest, definitions of those constructs, and measurement of those constructs in a consistent manner across studies. This article aims to summarize findings from a working group that convened specifically to discuss measurement issues related to parental influences on childhood obesity. Six subgroups were formed to address key measurement issues. The conceptualization subgroup proposed to define and distinguish constructs of general parenting styles, feeding styles, and food parenting practices with the goal of understanding interrelating levels of parental influence on child eating behaviors. The observational subgroup identified the need to map constructs for use in coding direct observations and create observational measures that can capture the bidirectional effects of parent?child interactions. The self-regulation subgroup proposed an operational definition of child self-regulation of energy intake and suggested future measures of self-regulation across different stages of development. The translational/community involvement subgroup proposed the involvement of community in the development of surveys so that measures adequately reflect cultural understanding and practices of the community. The qualitative methods subgroup proposed qualitative methods as a way to better understand the breadth of food parenting practices and motivations for the use of such practices. The longitudinal subgroup stressed the importance of food parenting measures sensitive to change for use in longitudinal studies. In the creation of new measures, it is important to consider cultural sensitivity and context-specific food parenting domains.     Relating Use of Effective Responsive, Structure, and Non-Directive Control Vegetable Parenting Practices to Subscales from the Model of Goal Directed Behavior

    Parents may positively influence children’s vegetable consumption through effective vegetable parenting practices (VPP). Research has demonstrated three dimensions of effective VPP: Effective Responsiveness, Structure, and Non-Directive Control, but there is limited research investigating each separately. This study presents the modeling of Effective Responsive, Structure, and Non-Directive Control VPP using constructs from the Model of Goal Directed Vegetable Parenting Practices (MGDVPP). Parents (n=307) completed a survey on demographics, MGDVPP constructs, and effective VPP. Block regression modeling tested three models: one for each dimension of effective VPP as the dependent variable. Independent variables included validated subscales representing MGDVPP constructs: Intention, Desire, Perceived Barriers, Autonomy, Relatedness, Self-Efficacy, Habit, Anticipated Emotions, Perceived Behavioral Control, Attitudes, and Norms. Participants were racially diverse, and a majority was female, of higher socioeconomic status, and with a male child. Effective Responsive VPP was positively related to a Habit subscale. Effective Structure VPP was positively related to a Barrier, two Habit, and an Attitude subscales. Effective Non-Directive Control VPP was positively related to being a high school or GED graduate, having younger children, a Habit, and two Intentions subscales, and negatively related to an Intentions and a Perceived Behavioral Control subscales. The adjusted R2 for the Effective Responsive, Structure, and Non-Directive Control VPP models were 0.432, 0.310, and 0.515, respectively. This was the first study to relate constructs from a theoretical model to effective VPP dimensions. Research is needed to longitudinally assess the MGDVPP and test its utility in vegetable-related interventions

    HISPANIC AND BLACK CHILDREN’S ABILITY TO REGULATE ENERGY INTAKE ACROSS PARENT FEEDING STYLES

    Purpose: Satiety Responsiveness (SR) is an individual’s sensitivity to feelings of fullness and hunger (Carnell and Wardle, 2007). Enjoyment of Food (EF) is how responsive a person is to food cues (Carnell and Wardle, 2008). Higher levels of SR and EF are related to BMI (Carnell and Wardle, 2008) and less eating in the absence of hunger (Wardle, Llewellyn, Sanderson and Plomin, 2009) in children. However, little is known about the relationship between these two appetitive traits and parent feeding style, especially amongst low income minority samples. Method: 160 Hispanic and 141 Black parents (62.58% underweight/healthy weight, 18.71% overweight, 18.71% obese) with children between the ages of 3 and 5 were recruited from Head Start Centers in the Houston area. Parents filled out surveys on their feeding behaviors and their children’s eating behaviors. Trained observers weighed and measured children. ANCOVAs for EF by Child BMI category and SR by Child BMI category and EF by parent feeding style and SR by parent feeding style were run using appropriate controls. Results: All ANCOVAs were significant or highly significant. LSD post hoc analyses indicate that parents of underweight/healthy weight children rated their children as lower in EF than parents of obese children (p≤.001). LSD post hoc analyses indicate that parents of obese children rated their children as significantly lower in SR compared to underweight/healthy weight children (p≤.001). LSD post hoc analyses indicate that parents with an authoritarian feeding style rated their children as higher in SR than parents with indulgent (p≤.001) and uninvolved feeding styles (p≤.05). Parents with authoritative feeding styles also rated their children higher in SR than indulgent parents (p≤.001). LSD post hoc analysis indicates that children of parents with an indulgent feeding style were rated as higher in EF than authoritarian (p≤.001) and uninvolved feeding styles (p≤.05). Parents with authoritative feeding styles rated children as higher in EF than parents with authoritarian feeding styles (p≤.001). Conclusions: Results indicate that parent feeding styles influence children’s ability to regulate energy intake and differences in regulation of energy intake across child weight categories
