    CREATED OF AN INTEGRATED QUALITY SYSTEM FOR THE PRODUCTION OF CANNED MEAT FOR CHILD NUTRITION

    The development of an integrated safety and quality system at enterprises for the production of baby food includes measures  thataimed at analyzing risks and identifying critical control points throughout the process. The article presents studies on the identification and analysis of hazards and assessing the severity of the consequences of their manifestation. In order to integrate, the international standards ISO 9001 and ISO 22000 were selected, on the basis of which the quality system processes were identified, the resources and requirements for them were determined, as well as the parameters for monitoring these processes, the criteria for evaluating the effectiveness and efficiency of the developed system were established. Within the framework of the integrated system, the main and interior processes were identified. The main processes include organization management processes, planning and implementation processes for safe and quality products, and processes for monitoring, analysis and improvement. Support processes include processes for managing the organization’s personnel, its infrastructure and production environment, as well as processes for managing documentation and records of the system

    Fusing best international and local quality management and control practices is one of the most effective ways to gain competitive advantage. Among other things, this includes implementing "customer focus" and "factual decision-making", the key principles of Universal Quality Management, through qualimetric models. The authors have identified qualimtric models with the best quality management potential across the food processing industry, at different product life cycle stages. They especially emphasize the potential of applying qualimetric forecast to food quality and safety. The authors have identified the main stages of product quality metrics forecasting to predict and achieve the desirable food quality in the most effective way possible. The proposed methods are a combination of qualifying methods and world’s best quality management tools and techniques. With the example of quality management in curd products at the development stage the authorship points out the indicators defining product quality and safety, ranks value in building product quality, gives a math formula to describe product quality and an algorithm to assess product quality based on a comprehensive quality indicator and deduce recommendations to achieve desirable and predictable product properties. The proposed stages of qualimetric forecasting, based on the integration of qualimetric models in quality management, have been tested on some curd products in production and proven to be practically effective

    Modern methods aimed to ensure the quality of foods require to implement and certify quality management systems in processing plants. In this case, to measure the effectiveness of existing QMS is often a very difficult task for the leadership due to the fragmentation of the measured metrics, or even lack thereof. This points to the relevance of the conducted research.The criteria for effectiveness assessment of the production process of meat processing plants with the use of scaling methods and Shewhart control charts are presented in the article. The authors developed and presented the formulae for the calculation of single indicators used for the further comprehensive assessment. The algorithm of statistical evaluation of the process controllability, which allows in an accessible form to estimate the statistical control of production processes and to organize statistical quality control in the development of quality management systems, is presented The proposed procedure is based on a process approach, the essence of which is the application of the Deming cycle: “Plan — Do — Check — Act”, which makes it easy to integrate it into any existing quality management system.Современный подход формирования качества продуктов питания, основанный на стандартах ИСО серии 9000, указывает на необходимость внедрения и  сертификации систем менеджмента качества на перерабатывающих предприятиях. При этом оценка результативности уже действующих СМК зачастую оказывается весьма сложной задачей для руководства в силу разрозненности измеримых показателей или даже их отсутствия.В статье предложены критерии оценки результативности процесса производства мясоперерабатывающего предприятия с использованием методов шкалирования и контрольных карт Шухарта. Представлены разработанные авторами формулы расчета единичных показателей, используемые в дальнейшем для комплексной оценки. Приведен алгоритм статистической оценки управляемости процесса, который позволяет в доступной форме количественно оценить статистическую управляемость процессов производства и  организовать статистический контроль качества при построении систем менеджмента качества. В  основе предложенной процедуры лежит процессный подход, суть которого в  применении цикла Деминга: «Планируй  — Делай — Проверяй — Действуй», что позволяет легко ее интегрировать в любую действующую систему менеджмента качества

    The article calculated the indicators of the coefficient of imbalance of the amino acid composition, the difference in the amino acid score and the biological value of proteins in dietary meat raw materials. Significant differences in the content of essential amino acids in different parts of the carcasses of the selected dietary meat raw materials were determined using the analysis of variance of a one-way uneven complex. In 2010, ideas to increase the life expectancy of citizens of the RF and improve its quality reached a new level – with the adoption by the Government of the RF of a number of strategic documents – «The Doctrine of food security of the Russian Federation until 2030»; «Fundamentals of state policy of the Russian Federation in the field of healthy nutrition of the population»; and etc. The main priority in solving the problem of the formation of the concept of a healthy lifestyle in Russia, citizens of Russia consider compliance with the principles of proper and nutritious nutrition. State measures to promote a healthy lifestyle for the population of Russia are consistent with the global concept of health promotion, according to which citizens participate in maintaining and strengthening their own health

    One of the primary tasks for today is the production of high quality and safe products according to the legislation of Russian Federation. There are a number of risks within the production process. The common problem is the heat treatment process. This problem is for fish preserves. Such products can classify as perishable. It is necessary to carefully approach the choice of raw materials and compliance with all technological regimes. Since there is always the possibility of various dangers. In order to minimize dangerous factors, it is important to use a quality method with identifying the most important of them for factors matrix for production process of fish preserves proposed to develop a diagram of quality and safety indicators and identify the most important of them for further use to form a matrix of technological factors that have a direct impact on quality and safety indicators in the production of fish preserves
