    Based on their ability, vitamin C can be used as antioxidant to prevent aging process, but vitamin C unstable at high temperatures. Because of the instability,vitamin C has been developed to several derivatives, such as 3-OEthyl Ascorbic Acid ( EAA). EAA is derived from vitamin C with ethyl groups tied to position carbon third and more stable than vitamin C or ascorbic acids in general . This research was conducted to study the kinetics of degradation of EAA in citrate buffer pH 3,00; 4,00; 6,00; 6,50, 9,00 and 10,00 The study is done to study kinetics degradation eaa in citrate buffer pH 3,00; 4,00; 6,00; 6,50, 9,00 and 10,00 which stored at a temperature of 30 , 40 and 55 ° C for 21 days using accelerated stability test . The assay is done by using KCKT at λ maximum of 245 nm . From this research can be concluded that EAA most stable at pH 3,00 with a storage temperature of 30 ° C
