    The aim of this research is to investigate natural food composition of varioussea cucumber. Samples were collected in the coastal waters of Natuna, Riau Islandsin June 2009. Samples were taken from 2 location: Sepempang dan Pengadah beach.The analysis methods use is identification of phytoplankton, frequency of presencephytoplankton and percentage volume of phytoplankton. Of ten10 species found 19genus and detritus, include two families : Chrysophyta and Chyanophyta. The highestfrequency of presence is 100% by detritus from Sepempang and Pengadah beach.Thehighest percentage volume of food is 13,5% by Cymbella from Sepempang beachand 13,6% by Cymbella from Pengadah beach

    Characteristics of catfish oil, red palm oil and shark liver oil as functional foods

    Functional food is a food ingredient in addition to basic needs as nutrients that can also play a functional role in health. This research aimed to determine the physicochemical characteristics and fatty acid composition of catfish oil, red palm oil, and shark liver oil as functional food ingredients. The research method was to extract fish oil from belly flap, purify catfish oil, and process red palm oil (RPO) from crude palm oil (CPO). The analysis parameters consisted of sensory analysis, oil chemical characteristics (free fatty acid analysis, peroxide, iodine, saponification, and acid numbers), total carotene, tocopherol, and analysis of fatty acid composition. The results showed that the catfish oil after being purified had sensory characteristics, smelled slightly fishy and semi-solid, and had a bright yellow color. The results of the analysis of chemical characteristics showed that the free fatty acid numbers of catfish oil and shark liver oil were following IFOS standards (1.33 and 0.62%), and the RPO numbers for peroxide and free fatty acids according to the SNI standards (9.56 meq kg and 1.44%). The highest ω-3 and ω- 6 fatty acids were in shark liver oil (3.56 and 35.35%), followed by catfish oil (1.72 and 19.9%). and RPO does not contain ω-3 and ω-6. Catfish oil, RPO, and shark liver oil act as functional foods. The fatty acid composition of catfish, shark liver and red palm oil contains saturated and the fatty acid composition of catfish, shark liver and red palm oil contains saturated and unsaturated fatty acids. Mono and poly unsaturated fatty acid (FUFA anf MUFA) in crude catfish oil, pure catfish oil, shark liver oil, and red palm oils were 56.71, 58.12, 63.81 and 47.39% respectively. The result of analysis showed composition of in catfish oil 1.72 and 19.9 %. The content of and of shark liver oil was 3.5 and 35.5%.  Whereas in red palm oil does not Ω 3 and Ω 6. The content of EPA and DHA in shark liver oil was 0.08, 0.09 but not in catfish and red palm oil. The total content of carotene and tocopherol in red palm oil was 513.86 and 925.80 mg/kg, respectively.     Hasil pelaksanaan penyuluhan dan pelatihan ditemukan permasalahan dari cerobong asap yang mitra gunakan menimbulkan polusi pada daerah sekitarnya. Kemudian Tim mencoba mengganti pengasapan tradisonal dengan mengunakan bahan bakar kayu yang langsung dibakar dengan mengunakan alat pirolisator melalui metode pengasapan cair, sehingga asap tidak muncul akibat pembakaran kayu. Permasalahan selanjutnya ditemukan pada mitra adalah kurangnya pemahaman tentang cara produksi produk pangan yang baik dan manajemen wirausaha mikro yang terintegrasi. Telah dilakukan penyuluhan cara produksi produk pangan yang baik (CPPB) dan manajemen wirausaha mikro yang terintegrasi untuk kedua mitra. Metode yang digunakan dalam pengabdian ini adalah penyuluhan, pelatihan dan pendampingan tentang pelaksanaan manajemen wirausaha. Kesimpulan dari pengabdian ini adalah telah dilaksanakan penyuluhan pembuatan desain pelabelan, pencetakan kemasan ikan Lele Asap dan pengurusan izin produksi (P-IRT) ditandai dengan telah diperoleh sertifikat P-IRT. Target yang hendak dicapai pada produk ikan asap yang dijual ke pasaran harus sesuai spesifikasi produk (SNI  2013) ikan asap. Then the team tried to replace traditional smoking by using wood fuel which was directly burned using a pyrolysis device through the liquid smoking method, so that smoke did not appear due to burning wood. The next problem found in partners is the lack of understanding of how to produce good food products and integrated micro-entrepreneurial management. There has been counseling on how to produce good food products and integrated micro-entrepreneur management for both partners. The method used in this service was counseling, training and assistance on the implementation of entrepreneurial management. The conclusion of this service was that counseling has been carried out on the manufacture of labeling designs, printing of smoked catfish packaging and processing of production permits marked by having obtained Home Industry Products certificate. The target to be achieved on smoked fish products sold to the market must be in accordance with the product specifications (INS 2013) of smoked fish.     Antioxidant potential of squid ink (Loligo duvauceli)

    Squid ink has secondary metabolites to avoid enemy attacks. Secondary metabolite compounds have been able to determine the presence of antioxidant activity. Maceration is a way to get extracts and secondary metabolites in a sample. This study aimed to identify secondary metabolites and determine antioxidant activity in L. duvauceli ink extract. The method in this research was descriptive. The treatments used were solvents with different polarity levels, n-hexane, ethyl acetate, and ethanol. The parameters carried out in this study were yield, qualitative and quantitative secondary metabolites compound testing, and antioxidant activity testing. The results showed that n-hexane extract showed the presence of saponin compounds, ethyl acetate extract contained steroid compounds, and ethanol extract contained alkaloids and phenolic compounds. Saponin content in n-hexane extract was 0.23%. The levels of alkaloids and phenolics in the ethanol extract were 0.02% and 0.72%, respectively. The results show that L. duvauceli ink has antioxidant activity obtained from the IC50 value, n-hexane extract was 128.35 ppm, ethyl acetate extract was 78.81 ppm, and ethanol extract was 75.68 ppm

    The Effect of the Using of Extraction Solutionhclat Different Concentrations on the Mineral Content of Black Sea Cucumbar (Holothuria Edulis)

    The purpose of the research was to know the effect of the using of HCl at the different concentrations on the extraction of the mineral content of black sea cucumber (Holothuria edulis). The design used was completely randomized design (CRD). The treatment conducted was consisting of three varied concentrations of HCl, namely: P1 (HCl with concentration of 4%), P2 (HCl with concentration of 5%), and P3 (HCl with concentration of 6%). The results showed that the black sea cucumber contained moisture of(86,42%), ash of (3,94%), fat of (0,83%), protein of (7,87%), carbohydrate of (0,94%), calcium of (6,82 mg/100), potassium of (1,04 mg/100), sodium of (9,51 mg/100), magnesium of (11,90 mg/100), phosphor of (0,31 mg/100), and the iron of (4,02 mg/100).Keywoard: Black sea cucumber, Hydrochloric acid, Minera
