    EFFECT OF SUBSTITUTION OF WHEAT FLOUR WITH QUINOA FLOUR ON QUALITY OF PAN BREAD AND BISCUIT

    This study was carried out to investigate the effect of partial substitution (5, 10 and15%) of wheat flour (72% ext.) by whole meal quinoa flour (QF) on quality parameter of pan bread. QF contained the highest percentage of protein, Lipids, ash and crude fiber. Also, QF contained the highest amount of essential amino acids such as (threonine, methionine, lysine and histidine). From the results, it could be seen that, water absorption and degree of softening increased by increasing the substitution levels, but stability, resistance to extensions and energy of dough decreased. The addition of QF adversely affected on the specific volume of pan bread. The lightness (L*) and yellowness (b*) of pan bread decreased, but redness (a*) increased gradually by increasing QF. Evaluation of the organoleptic properties of pan bread revealed that no significant differences (P≥0.05) between control sample and bread samples contained QF for taste and summitry form. The bread contained QF had higher score for crust color, pore size and overall acceptability than control sample. Hardness (g) of pan bread increased and springiness decreased gradually during storage of bread at (25˚c ±2). The rate of staling of bread contained QF lower than control sample. Gluten – free biscuit made from 100%QF contained the highest percentage of protein, lipids, ash and crude fiber compared to that of corn and rice – quinoa composite flour. The addition of corn and rice flour adversely affected on the thickness, diameter and  spread ratio. The highest spread ratio was noticed in the biscuit made from 100% QF. It is worth mentioning that the biscuit made from 100 % QF or that of corn and rice – quinoa composite flour gave the biscuit with sensory acceptable. On the other hand, it could be noticed to that the biscuit contained high level of quinoa flour was darker in compared to another samples

    Efficiency of selenium in attenuating epididymal histopathological changes in hypercholesterolaemic adult rat

    Background: Studies on sperm maturation, epididymal histology, or epididymal tubule physiology are significant parts in reproductive researches. The present study was aimed to evaluate the effect of induced hypercholesterolaemia on the epididymis of adult albino rats and to clarify the possible protective role of selenium. Materials and methods: Forty adult albino Wistar rats were divided into four groups; untreated control group (group I), sham control (group II), group with induced hypercholesterolaemia (group III), group with induced hypercholesterolaemia treated with selenium 0.25 mg/kg/day (group IV). Results: Histological and ultrastructural examination of the epididymal epithelial cells of hypercholesterolaemic rats (group III) showed loss of cilia with many vacuolations, fatty degenerative changes and increased collagen fibres. Morphometrically significant increase (p < 0.0001) in the per cent area of collagen fibres with no significant change in the optical density of periodic acid Schiff reaction (p > 0.05). Selenium treated group (group IV) produced marked improvement in histological, ultrastructural and morphometric results as compared with group III. Conclusions: It could be concluded that hypercholesterolaemia produced deleterious effects to the epididymis and selenium could attenuate these effects

    OSIRIS-Rex OCAMS Detector Assembly Characterization

    The OSIRIS-REx asteroid sample return mission carries a suite of three cameras referred to as OCAMS. The Space Dynamics Laboratory (SDL) at Utah State University is providing the CCD-based detector assemblies for OCAMS to the Lunar Planetary Lab (LPL) at the University of Arizona. Working with the LPL, SDL has designed the electronics to operate a 1K by 1K frame transfer Teledyne DALSA Multi-Pinned Phase (MPP) CCD. The detector assembly electronics provides the CCD clocking, biasing, and digital interface with the OCAMS payload Command Control Module (CCM). A prototype system was built to verify the functionality of the detector assembly design and to characterize the detector system performance at the intended operating temperatures. The characterization results are described in this paper

    Extraction of certain heavy metals from sewage sludge using different types of acids

    The removal of heavy metal from sludge before disposal or application to farmland is a necessary step to achieve a more safe sludge usage or disposal. Chemical extraction using inorganic acids (nitric, hydrochloric) and organic acids (citric, oxalic) were tested for extraction of chromium, copper, nickel, lead and zinc from contaminated sewage sludge at different pH and reaction time. Results revealed that solubilization of metals using inorganic acids achieved its maximum extraction efficiency (Cr-88%, Cu-82%, Ni-86%, Pb-94%, Zn-89%) at pH value lower than 2 and acid contact times of 1hour. while in case of organic acids oxalic acid does not show good results comparing to citric acid that at pH 2.43 citric acid seemed to be highly effective in extracting Cu (86%), Zn(88%), mostly after 1 day of extraction time, Cr (90%), Ni (96%) at 5 days leaching time, while Pb(85%) removal at the same pH was at a longer leaching time 10 days. At pH 3, citric acid seemed to be also highly effective in extracting Cr (66%), Cu(48%), Pb (66%), Zn(69%) at 1 day, while higher removal was also attained for Ni(68%) at only 4 h leaching time. Finally the extraction efficiencies of citric acid for Cr, Cu, Ni, Pb, Zn, are high enough to reduce the heavy metal content in sludge to levels below the legal standards

    QUALITY CHARACTERISTICS OF SPONGE CAKE AND BISCUIT PREPARED USING COMPOSITE FLOUR

    This study was carried out to investigate the effect of partial substitution (10 and 15%) of wheat flour by sorghum or chickpea flour on quality parameters of sponge cake and biscuit. Chickpea flour contained the highest percentage of protein, lipids, ash and crude fiber. Water absorption was increased by replacement of wheat flour with sorghum or chickpea flour. From the obtained data, it could be seen that the deleterious effect of adding sorghum flour to wheat flour on the rheological properties was more pronounced than that happened when chickpea flour was added. Cake prepared with sorghum flour had less pronounced improvements in its chemical composition rather than those of chickpea. With regard to volume and specific volume, cake prepared with 10% chickpea flour with or without cake improver recorded the highest values. Cake prepared by chickpea flour had no any unfavorable sensory change especially for the cake produced by cake improver.  Crude protein, lipids, ash and crude fiber contents were increased progressively in all biscuit samples with increasing of either the sorghum or chickpea flour levels. Also, there were no significant differences (P>0.05) between the thickness and spread ratio of control biscuit compared to that of sorghum or chickpea- wheat composite flour.  It is worth mentioning that the substitution of wheat flour with chickpea flour gave biscuit more sensory acceptable

    ASSOCIATION OF OBESITY WITH RS1421085 AND RS9939609 POLYMORPHISMS OF FTO GENE WITH T2DM IN EGYPTIAN FEMALES

    Objective: Obesity has been described as a worldwide increasing health problem and risk factor of various disorders including type 2 diabetes mellitus (T2DM). So, our study aim to determine of common variants of fat mass and obesity associated gene polymorphisms rs1421085 and rs 9939609; confers risk of obesity and type 2 diabetic mellitus in Egyptian females.Methods: In this population rs1421085 and rs9939609 polymorphisms of fat mass and obesity (FTO) gene were genotyped in 105 obese patients and 100 healthy controls with ages 14-60 y were collected from Medicine Specialized Hospital, Mansoura University, Egypt during the period between Jul.-Oct. 2016, genotyping of SNPs was performed by restriction fragment length polymorphism (RFLP) assay, fasting blood glucose, homeostasis model assessment of insulin resistance (HOMA IR), body mass index (BMI), waist-to-hip ratio (WHR) lipid profile was determined.Results: There was the significantly higher frequency of the AA compared to controls p=0.0001) of genotypers9939609. Also, cases have shown a significantly higher frequency of the C allele, p<0.00001) of rs1421085 genotype polymorphisms increased the risks of obesity. On the other hand, there were no significant correlations between genotypes and obesity-related (anthropometric body composition) parameters. Only the fasting blood glucose was significantly higher in the TA p=0.004).Conclusion: The FTO rs9939609 and rs1421085 single nucleotide polymorphisms (SNPs) was associated with increased risk of obesity in type 2 diabetic populations on Egyptian females

    SALT TOLERANCE INDEX OF TWENTY TWO SUGAR BEET (Beta vulgaris L.) VARIETIES AT EARLY STAGES OF GROWTH

    A laboratory experiment was carried out to study the early growth response of 22 sugar beet (Beta vulgaris, L.) varieties to four salt concentrations of seawater i.e. 2000, 4000, 8000 and 16000 ppm. Germination and seedling growth traits (germination percentage (%), germination rate, seedling length (cm), seedling fresh weight (mg) and seedling vigor) were determined at the end of the experiment after 30 days from planting. The results showed that increasing the salinity level decreased the germination %, germination rate, seedling length, seedling fresh weight and seedling vigor of all sugar beet varieties under investigation to different extents. The results also clearly revealed that the response of the investigated varieties to salt concentrations was not the same, some varieties approved to be highly salt tolerant i.e. Soultan, Kawmira and Desprez; others were very sensitivity tolerant i.e. Helsiniki and LP16. However most of the investigated varieties were moderately salt tolerant. Results revealed clearly that the interaction effect between sugar beet varieties and salt concentrations was significant. This significant effect means that the tested varieties do not behave the same under the different levels of salinity stress

    Synthesis of novel heterocycles using 1,2,3‐triazole‐4‐carbohydrazides as precursors

    Herein, we report the synthesis of various heterocyclic ring systems containing 1,2,3‐triazole from the reactions of acid hydrazides and commercially available reagents, using efficient and simple procedures. Reactions of certain 1,2,3‐triazole‐4‐carbohydrazides and α‐bromoketones in boiling ethanol afforded the corresponding hydrazones rather than the expected triazines. The hydrazones could also be synthesized in 85‐90% yield via an alternative pathway that involved the reaction of 1,2,3‐triazole‐4‐carbohydrazides and 4‐acetyl‐1,2,3‐triazoles in boiling ethanol containing glacial acetic acid. Reaction of one of the 4‐carbohydrazides with carbon disulfide, followed by the reaction with hydrazine hydrate, gave 4H‐1,2,4‐triazole‐3‐thiol in 73% yield, which further reacted with other α‐bromoketones in boiling ethanol to afford 7H‐[1,2,4]triazolo[3,4‐b][1,3,4]thiadiazines in 82‐84% yields. Additionally, reactions of certain carbohydrazides with ethyl 2‐cyano‐3,3‐bis(methylthio)acrylate gave 1‐aryl‐1H‐1,2,3‐triazole‐4‐carbohydrazides rather than the expected 1H‐pyrazole‐4‐carboxylates

    Facile, mild and efficient synthesis of azines using phosphonic dihydrazide

    Several bis(N'-arylpropanehydrazonoyl chlorides) were synthesized in good yields from condensation reactions of hydrazonoyl chlorides and phosphonic dihydrazide. Under the conditions employed, none of the expected phosphorylhydrazines were isolated. Nucleophilic substitution of bis(N'-arylpropanehydrazonoyl chlorides) with thiophenol, sodium phenylsulfinate, hydroxyl amine, and piperidine afforded the corresponding azines. Similarly, 1,2-bis(heteroaryl)ethylidene)hydrazines were produced from reaction of phosphonic dihydrazide and heteroaryl methyl ketones. The structures of the products were confirmed by NMR and IR spectral data along with X-ray crystal structure determination and their purities were confirmed by the elemental analyses
