    Feed interventions and skatole deposition

    Skatole produced in the large intestine of the pig and the testicular steroid androstenone are the main substances contributing to boar tainted meat from entire male pigs. Boar taint decreases the quality of the meat and is not accepted by consumers. Until now boar taint has been avoided by castrating male pigs. Surgical castration reduces lean meat percentage, growth rate and feed efficiency, and it causes pain to the animal. This constitutes a problem in relation to productivity and welfare. Different attempts on avoiding surgical castration were either not fully effective, not accepted by the market, or they have a long time horizon for implementation. However, when focusing on the effect of feed interventions on boar taint, previous studies have showed a reducing effect through reduced skatole production in the large intestine after a one week application period. Skatole is produced from the microbial fermentation of L-tryptophan in the large intestine. In the literature it is well documented that skatole production in the large intestine is positively correlated with skatole deposition in adipose tissue. Moreover skatole production can be decreased by adding non-digestible and easy fermentable carbohydrates to the feed. However, little is known about skatole producing bacteria from the large intestine of pigs, and how these bacteria can be affected. This thesis reviews skatole production and metabolism in the pig, and how skatole production can be reduced by affecting the microbial production of skatole in the large intestine. A skatole producing bacterium SK9 K4 was isolated from the gastrointestinal tract of pigs. No such bacterium has previously been described. The bacterium was characterised by 16S RNA sequencing, gram stain, analysis of DNA G-C content, cellular fatty acids composition and DNA hybridisation with closely related bacteria. The fermentation of different carbohydrate sources, the growth pattern, the production of organic acids and the skatole production were studied in vitro. The production of skatole in the large intestine was correlated with skatole deposition in adipose tissue. Skatole production could be reduced when adding a minimum of 20 % raw potato starch or 9 % inulin to the feed. The problem concerning deposition of skatole in adipose tissue seems to be solved through the introduction of feed interventions. However high concentrations of androstenone deposited in adipose tissue remains a challenge. Thus, the feed interventions were not fully effective against boar taint. SK9 K4 was described as cells being strictly anaerobic, occurred singly or in pairs and were gram positive. It was identical with an Olsenella sp. strain isolated from the rumen, an uncultured Olsenella sp. clone isolated from sludge and an uncultured bacterium colon isolated from the oral cavity. Moreover SK9 K4 was closely related to Olsenella uli, Olsenella profusa, Olsenella umbonata and Atopobium parvulum. SK9 K4 and O. uli produced skatole from idole-3-acetic acid but not from L-tryptophan. The major fermentation products were lactic acid together with acetic acid and formic acid. SK9 K4 was not able to ferment raw potato starch, inulin and raw corn starch. Thus, when feeding resistant starch or inulin, the growth of skatole producing bacteria might be reduced followed by a reduced ability to produce skatole. The characterisation of a skatole producing bacterium isolated from the gastrointestinal tract of pigs gives the opportunity to further study the bacterium in vivo.     Participatory plant breeding in Denmark

    Plant breeding gets more and more concentrated on a couple of multinational companies, and financing plant breeding via the traditional royalty founded certification system exclusive for the specific needs in organic farming is not profitable in most field crops. The seed certification system only allows pure line varieties, and the royalty funded breeding system tend to focus on monogenic resistance with s short durability on the marked. To develop new plant genetic material for organic farmers with durable stability and resistance, the Danish Organic Farmers Association has initiated a participatory plant breeding program with the aim to develop varieties and diverse populations for the organic farmers. The project is based within the advisory service in the organisation in cooperation with plant breeding research projects. In this way, it is the hope to overcome the economic and legal barrier for implementation of crop diversity and targeted selection for the different needs in the diverse organic sector

    Job Creation and Destruction over the Business Cycles and the Impact on Individual Job Flows in Denmark 1980-2001

    Job creation and destruction should be considered as key success or failure criteria of the economic policy. Job creation and destruction are both effects of economic policy, the degree of out- and in-sourcing, and the ability to create new ideas that can be transformed into jobs. Job creation and destruction are results of businesses attempting to maximize their economic outcome. One of the costs of this process is that employees have to move from destroyed jobs to created jobs. The development of this process probably depends on labor protection laws, habits, the educational system, and the whole UI-system. A flexible labor market ensures that scarce labor resources are used where they are most in demand. Thus, labor turnover is an essential factor in a well-functioning economy. This paper uses employer-employee data from the Danish registers of persons and workplaces to show where jobs have been destroyed and where they have been created over the last couple of business cycles. Jobs are in general destroyed and created simultaneously within each industry, but at the same time a major restructuring has taken place, so that jobs have been lost in Textile and Clothing, Manufacturing and the other “old industries”, while jobs have been created in Trade and Service industries. Out-sourcing has been one of the causes. This restructuring has caused a tremendous pressure on workers and their ability to find employment in expanding sectors. The paper shows how this has been accomplished. Especially, the paper shows what has happened to employees involved.     Job Creation by Firms in Denmark

    In this paper we will look at job creation and destruction in firms. We will answer the question if it is the large companies that create jobs, while the smaller companies are contributing much less. Or is it the young companies that create jobs? And who destroys the most jobs? In the crisis Denmark lost 186,000 jobs in the private sector. The question is where and how could these jobs be recreated. Are these issues specific to industries or are they universal? The data used is register data on workplaces and firms for the period 1980-2007. The base unit of data is the workplace. The company (firm) is the legal entity. A company can have many sites, and one of the ways companies can grow is by expanding with multiple sites. This can happen by mergers and acquisitions but can also happen by creating "daughter workplaces". It is therefore essential to look at workplaces and firms at the same time. A complication here is that firms switch ID over time because of change of ownership, mergers and divisions. Data must be corrected so that these administrative issues will not affect the survival of firms. The data are used in a way where we can cover firm birth and firm death, spin-offs and mergers. The analysis will make it possible to differentiate between net and gross creation of jobs because we can follow each single individual in and out of jobs. We have for Denmark found that size on its own does not have a big impact, but young firms are much more likely to contribute to a positive growth. For the U.S. it has been found that the growth in jobs comes from small businesses. A closer analysis though shows that the main factor here is the firm age. Thus, it is found that young firms net create the most jobs, but they are also responsible for the most job destructions.job creation, job destruction, firm age, firm size, education, employer-employee data

    Design and pilot testing of a dietary assessment methodology for children at school

    Nutrition's impact on an individual's health and sustainable consumption of food are issues that have long been on both the public and political agenda but are often viewed as two separate debates. This is surprising since many innovation projects in food service systems are concerned with both healthy eating and sustainable consumption (organic food). The relationship between them forms the background in this study. Evidence has shown that caterers serving organic food tend to also serve healthier meals than their non-organic counterparts but, so far, no studies have been carried out in school food environments. The aim of this report was to investigate and develop appropriate methods for studying the link between healthy eating practices and organic food procurement policies using Danish public elementary schools as a setting. Based on relevant scientific literature, the Danish Dietary Recommendations, and inspired by other successful studies, a self-administered questionnaire investigating children‟s eating habits was designed. After testing by an Expert Evaluation Panel and Think Aloud Interviews adjustments were integrated. Conclusion: If special attention is given to literacy skills and cognitive development, children in Danish 6th grade classes can be used as respondents in studies of the relation between food procurement policies and eating practice

    Effects of Cultivation Conditions for Apples on Growth Rates of Fruit Fly Larvae and Contents of Phenolics

    Apples were grown with 3 different alleyway groundcover management strategies, providing a wide range of nutrient availabilities to the trees, spanning the ranges normally found in both conventional and organic orchards. These treatments had significant effects on both yields and incidence of fungal diseases. However, the differences in yields and disease incidence cancelled each other out, resulting in identical average yields of marketable fruit, as reported earlier (Lindhard Petersen & Bertelsen 2002). These results indicated that the composition of the fruit may also differ, and that this material is useful as a model for investigating how growth conditions influence the content of nutritionally relevant compounds, and thus may affect the health of humans and animals. In a preliminary study, two species of fruit flies were reared on material from each of the 3 cultivation treatments, and the time when 50% of the flies in each vial had emerged was calculated. The number of flies produced in each treatment did not differ systematically, but observations indicate that the fastest development also resulted in the heaviest animals. It should be pointed out that excessive growth rates (obesity) is a major health risk in affluent human societies. This material is also used in ongoing rat feeding experiments

    Job Mobility and Skill Transferability. Some Evidences from Denmark and a Large Italian Region

    This paper investigates the effect of job mobility and tenure on wage dynamics. In this respect, theory assesses that high job mobility and low tenure are associated to lower wage drop when workers experience a job change. We test this theory first comparing two labour market (i.e. Denmark and a large Italian region, Veneto) characterized by different job mobility and tenure, as a consequence of different level of EPL. Secondly, we perform a within Veneto analysis, comparing the different effects when workers are employed in small rather than big firms. Data drawn from the VWH (Veneto Workers History) and IDA (for Denmark) registered data, from 1987 to 2001, are used. In Denmark job mobility has a positive effect on wage increases, while built up on firm-specific human capital has a negative effect. In Veneto, instead, it appears that long tenure are more rewarding.
