Antioxidant activity some endemic Iranian medicinal plants (Lamiaceae)

Oxidation, deterioration, and microbial reactions occurring in food products may cause economic loss. Deterioration of lipids is catalysed by different internal and external factors, such as free radicals, metal ions, light, and heat.
