    Use of potassium polyaspartate for the tartaric stabilization of Sicilian white wines

    Cold stabilization is a common method used to avoid tartaric acid crystals from forming in bottled wine, but this technique shows some inconveniences on the sensory characteristics and energy cost. In the present research, the tartaric stabilization in Sicilian white wines, with a recently permissible molecule in oenology, was studied: the potassium polyaspartate (PAK). The PAK has a negative charge at wine pH and allows to sequester the K+ cations; consequently it inhibits the formation and the growth of potassium bitartrate crystals. PAK is a relatively small polymer; perfectly microfiltrated and does not allow the filling phenomena in filtration membranes. The adding of PAK allowed to reduce almost all the tartaric precipitations on very unstable wines, regardless of the chemical-physical characteristics of the treated white wines. The stability of PAK, after thermal stress of the wine added to this polymer, was confirmed evaluating different analytical parameters such as pH, total acidity and buffer power, while variations in the conductivity of wines seemed to indicate a residual tartaric instability. In conclusion, the use of PAK makes possible to improve the sensory characteristics of wines, considering lower losses of tartaric acid and potassium, which are important for acid perception and acid persistence (buffer power), as well as reducing production costs and low environmental impact

    A Method to Discriminate Between the Candida stellata and Saccharomyces cerevisiae in Mixed Fermentation on WLD and Lysine Agar Media

    This paper presents a simple method to distinguish between Candida stellata and Saccharomyces cerevisiaeyeasts during microbiological analyses. The method is based on differential yeast growth on a mediumcontaining cycloheximide and a medium containing lysine as only nitrogen source (lysine agar). Thecycloheximide resistance of 45 yeast strains belonging to Candida stellata, Hanseniaspora uvarum, Hanseniasporaguilliermondii, Metschnikowia pulcherrima, Torulaspora delbrueckii, Zygosaccharomyces bailii, Kluyveromycesthermotolerans and Zygoascus hellenicus, and 14 strains of Saccharomyces cerevisiae and Saccharomycesbayanus on WL nutrient agar, was assayed. Cycloheximide resistance is characteristic of the species H. uvarum,H. guilliermondii and Z. hellenicus, while for the other yeasts it depends on the strain and the concentrationof cycloheximide used. Two mg/L of cycloheximide allows selective counting of a strain of C. stellata (Cs3)compared to one of the sensitive S. cerevisiae strain (NDA21). Similar results can be obtained on lysine agar,but counts are reliable only with the additional spreading of a monolayer of Saccharomyces cells. The differentcycloheximide resistance of C. stellata and S. cerevisiae can be used in the microbiological analysis of mixedcultures to monitor the individual growth of the two yeast species. This method can be applied to the studyof mixed fermentations with other non-Saccharomyces species. The modified use of lysine agar is useful to acertain extent in the distinction of multistarter yeasts from the indigenous yeasts

    Microencapsulation of Phenolic Extracts from Cocoa Shells to Enrich Chocolate Bars

    Cocoa bean shells were subjected to green extraction technologies, based on the absence of toxic organic solvents, to recover polyphenols; the extract was then encapsulated using a spray dryer and maltodextrin as coating agent. The best conditions observed in the spray drying tests (core-to-coating ratio 1:5; inlet temperature 150 Â°C; flow rate 6 ml min-1) were applied to produce the microcapsules used to enrich the same cocoa mass as the shells and processed for the preparation of the chocolate bars. Sensory analysis showed no significant differences between enriched chocolate bar and the unenriched reference one, except for the appearance. Both samples were then subjected to accelerated storage tests, at the end of which the polyphenols in the control chocolate bar (0.85 g 100 g-1) were reduced by about 50% (0.42 g 100 g-1), while in the enriched chocolate (1.17 g 100 g-1) by only 22% (0.97 g 100 g-1). The proposed process significantly enriched the chocolate bars with phenolic antioxidants recovered from cocoa waste without increasing the sensations of bitterness and astringency

    Effect of nucleon exchange on projectile multifragmentation in the reactions of 28Si + 112Sn and 124Sn at 30 and 50 MeV/nucleon

    Multifragmentation of quasiprojectiles was studied in reactions of 28Si beam with 112Sn and 124Sn targets at projectile energies 30 and 50 MeV/nucleon. The quasiprojectile observables were reconstructed using isotopically identified charged particles with Z_f <= 5 detected at forward angles. The nucleon exchange between projectile and target was investigated using isospin and excitation energy of reconstructed quasiprojectile. For events with total reconstructed charge equal to the charge of the beam (Z_tot = 14) the influence of beam energy and target isospin on neutron transfer was studied in detail. Simulations employing subsequently model of deep inelastic transfer, statistical model of multifragmentation and software replica of FAUST detector array were carried out. A concept of deep inelastic transfer provides good description of production of highly excited quasiprojectiles. The isospin and excitation energy of quasiprojectile were described with good overall agreement. The fragment multiplicity, charge and isospin were reproduced satisfactorily.     Moscato Cerletti, a rediscovered aromatic cultivar with oenological potential in warm and dry areas

    Baron Antonio Mendola was devoted to the study of grapevine, applying ampelography and dabbling in crosses between cultivars in order to select new ones, of which Moscato Cerletti, obtained in 1869, was the most interesting. Grillo, one of the most important white cultivars in Sicily, was ascertained to be an offspring of Catarratto Comune and Zibibbo, the same parents which Mendola claimed he used to obtain Moscato Cerletti. Thus the hypothesis of synonymy between Moscato Cerletti and Grillo or the same parentage for both sets of parents needs to be verified. In the present study, historical documents were consulted and genetic analyses and ampelographic, agronomic and qualitative characterisation carried out to determine the distinctiveness of each cultivars. These were also compared with Catarratto Comune and Zibibbo in order to establish the Moscato Cerletti pedigree. Due to their different SSR profiles, Grillo and Moscato Cerletti were confirmed as two distinct cultivars; they also differed in ripening times and sugar storage ability, as well as in the aromatic grape produced by Moscato Cerletti only. The trio genotype genetic analysis confirmed that Zibibbo is a parent of Moscato Cerletti (justifying the aromatic grape), whilst the SSR profiles did not show Catarratto Comune to be a second parent. Moscato Cerletti was found to have oenological potential in the production of sparkling muscat wines due to its ability to adapt to a changing climate in warm and dry environments and in different winegrowing regions

    Centrality dependence of charged-particle pseudorapidity distributions from d+Au collisions at sqrt(s_{NN})=200 GeV

    Charged-particle pseudorapidity densities are presented for the d+Au reaction at sqrt{s_{NN}}=200 GeV with -4.2 <= eta <= 4.2$. The results, from the BRAHMS experiment at RHIC, are shown for minimum-bias events and 0-30%, 30-60%, and 60-80% centrality classes. Models incorporating both soft physics and hard, perturbative QCD-based scattering physics agree well with the experimental results. The data do not support predictions based on strong-coupling, semi-classical QCD. In the deuteron-fragmentation region the central 200 GeV data show behavior similar to full-overlap d+Au results at sqrt{s_{NN}}=19.4 GeV.Comment: 4 pages, 3figures; expanded discussion of uncertainties; added 60-80% centrality range; added additional discussion on centrality selection bia

    BRAHMS has the ability to study relativistic heavy ion collisions from the final freeze-out of hadrons all the way back to the initial wave-function of the gold nuclei. This is accomplished by studying hadrons with a very wide range of momenta and angles.     We report the measurement of charged hadron production at different pseudo-rapidity values in deuteron+gold as well as proton+proton collisions at sqrtsNNsqrt{s_{NN}} = 200GeV at RHIC.
