    Comparison of two rapid descriptive sensory techniques for profiling and screening of drivers of liking of sorghum breads.

    Rapid descriptive methods have emerged as a relatively simple alternative for screening the sensory attributes of products that drive their liking, and may contribute to identify sorghum genotypes with potential for development of gluten-free breads with higher consumer acceptance. Two rapid techniques, Check-All-That-Apply (CATA) and Optimized Descriptive Profile (ODP), were herein compared on their ability to describe, discriminate and identify the drivers of liking of sorghum breads. Gluten-free bread formulations were developed using flours from selected sorghum genotypes (CMSS005, BR 501, BRS 332, BRS 330, BRS 305 and 1167048), besides commercial sorghum and rice flours. A semi-trained panel (n = 18) evaluated the samples using the ODP method, whereas consumers (n = 124) completed the CATA questionnaire and rated the liking in a 9-point hedonic scale. A total of 24 and 11 sensory descriptors were perceived by assessors as different among samples for CATA and ODP, respectively, with color and appearance-related attributes critical to discriminate samples in CATA, whereas flavor and texture descriptors had also prominent contribution in ODP. A similar pattern of sample distribution was noticed for both methods, which were shown to be highly and positively correlated (RV = 0.92, p < 0.002). Genotypes influenced the consumer perception of sorghum breads, being the BRS 332 and the CMSS005 breads among the most and the least accepted samples for either consumer segment, respectively. While 10 drivers of liking were identified by CATA, including ?appearance of whole flour breads?, ?uniform alveoli?, ?neutral flavor? and ?soft aroma?, in ODP 'crumb color', 'crust color', 'spots' and traditional bread aroma? drove bread acceptance. In summary, both methods were successfully applied and provided similar pattern of sample discrimination, whereas the attributes used for sample characterization, as well as those identified as drivers of liking were generally different. The ODP offers a simpler option for a quantitative perspective, while CATA remains as an easy method considering qualitative aspects, being clearly faster than ODP

    Qualidade sensorial de néctares de maracujás BRS Ouro Vermelho produzidos em diferentes sistemas de cultivo.

    O objetivo deste trabalho foi avaliar o perfil sensorial e a aceitabilidade de néctares de maracujás obtidos de plantas submetidas a diferentes sistemas de produção, orgânico e convencional, com ou sem sombreamento pelo consórcio com mandioca. As amostras foram avaliadas por Análise Descritiva Quantitativa e por teste de aceitação com escala hedônica. Os dados do perfil descritivo e de aceitação foram analisados por Mapa de Preferência Externo, Análise de Variância e teste de comparação de médias de Fisher. Observou-se que os frutos que não foram submetidos ao sombreamento apresentaram néctares com perfil sensorial bastante semelhante e maior aceitação. Néctares de maracujá convencional não sombreado e orgânico não sombreado apresentaram correlação com os atributos aroma verde, homogeneidade e gosto ácido. As maiores diferenças na aceitação foram observadas entre as amostras convencional sombreada e orgânico não sombreada, com diferenças significativas nos atributos de cor, sabor e qualidade global. O Mapa de Preferência Externo apontou que a amostra de néctar convencional sombreado, com menor aceitação, foi correlacionada com os atributos fibrosidade e viscosidade

    Wild species of vaccinium composition, nutritional value and utilization

    There are still, in many parts of the globe, some edible fruit collects from the wild for human feeding and other uses. These fruits are utilised either in their raw nature or after some form of processing. One of these wild fruits are Vaccinium species such as Vaccinium myrtoides (Blume) Miq., Vaccinium cylindraceum, Vaccinium padifolium, Vaccinium corymbosum, Vaccinium myrtillus and others from the plant family Ericaceae. The term wild infers non-cultivated plants found in plantation felids or the forest. The species Vaccinium myrtoides and the others are small trees (shrubs) that are well known in Southeast Asian countries such as Philippines, Indonesia and other neighbouring islands. The plants classified as wild growing shrubs. However, the locals have made it be fully utilized in some areas as the wood that are used in grafting utensils and cutleries, or as fuel and fruits. The small-sized berry-like fruits with an average diameter of about 4–5 mm turn black when ripe. They have a delicious flavour that makes it edible and used in the making of other delicacies such as tart and pies to add flavour and as preservatives as well. A few published researches were done on Vaccinium myrtoides showing that it is still used in folkloric medicine. Leaves and fruits extracts showed strong antioxidant activity when tested in-vitro using DPPH (2, 2-diphenyl-1-picrylhydrazyl) free radical scavenging activity as part of a preliminary phytochemical screening for V. myrtoides. The study revealed that the antioxidant activity is due to the presence of flavonoids and other phenolic compounds in the plant leaves and fruit extracts
