    Preparation of Antioxidant Enzymatic Hydrolysates from Honeybee-Collected Pollen Using Plant Enzymes

    Enzymatic hydrolysates of honeybee-collected pollen were prepared using food-grade proteinase and aminopeptidases entirely of plant origin. Bromelain from pineapple stem was applied (8 mAU/g substrate) in the first hydrolysis stage. Aminopeptidase (0.05 U/g substrate) and proline iminopeptidase (0.03 U/g substrate) from cabbage leaves (Brassica oleracea var. capitata), and aminopeptidase (0.2 U/g substrate) from chick-pea cotyledons (Cicer arietinum L.) were involved in the additional hydrolysis of the peptide mixtures. The degree of hydrolysis (DH), total phenolic contents, and protein contents of these hydrolysates were as follows: DH (about 20–28%), total phenolics (15.3–27.2 μg/mg sample powder), and proteins (162.7–242.8 μg/mg sample powder), respectively. The hydrolysates possessed high antiradical scavenging activity determined with DPPH (42–46% inhibition). The prepared hydrolysates of bee-collected flower pollen may be regarded as effective natural and functional dietary food supplements due to their remarkable content of polyphenol substances and significant radical-scavenging capacity with special regard to their nutritional-physiological implications

    Recently рарег electrophoresis is widely pгacticed to deteгmine the qualitative and quantitative changes in the pгotein fractions of blооd serum in animals inoculated with antigen-containing substances.In our pгevious studies an incгease was encountered of alpha-globulins in rats inoculated with influenza viгus at the expence of the albumin fraction. It was also established that the high aпtihemagglutination titгe does not always parallel with alpha-globulin increase. The present studies were initiated in order to prove whether such а regulaгity will bе obseгved also with stгains of influenza viгus isolated in 1963. These investigations are substantiated also bу the fact that strains isolated this уеаг exhibit loweг antihemagglutination titгes.Eighty medium aged аlbinо rats were used in the experimeпts and the influenza stгains isolated in Vaгna in 1963 (Panayotov, Mitov, Kaprelyan and Mitova et al.). The first group of rats included 6 subgroups of 10 rats each, inoculated with one of the influenza strains type A2 isolated in 1963. The second group comprised 10 rats from the same breeding inoculated with alantoic fluid which did not contain any influenza virus and the third group consisted of another 10 rats untreated and left under the same environmental conditions

Determination of some haze forming complexes could be very useful for prediction of beer colloidal stability. We study the repeatability and reproducibility of a method for determination of some haze forming complexes in beer. The method was tested in 10 laboratories. All of theme analyzed the same beer samples and carried out two measurements for each. Statistical evaluation of results was according ISO 5725 and previous experience. The applied ISO 5725 statistical analyzes ensured high quality and possibility of international recognition of the measurement method.Partially supported by Mathind IST-2000-26015 and by Pro-enbis GTC1-2001-43031

    In March 1963, 7 strains of influenza virus type А2 were isolated at the virological laboratory of the Higher Medical Institute - Vaгna from local inhabitants, suffering from influenza. Their etiologic signif icance in the disorders, observed in this period, was proved bу examination of the haemagglutination inhibtion test (Н.I.Т.) bу means of paired samples оfblооd sera, obtained from sick individuals as well as from those who have already suffered fгom the disease.     Effect of Acute Heat Stress on Some Hematological Parameters, Trace Elements and Meat Quality in Rabbits

    The aim of the present study was to investigate the effect of acute heat stress on some hematological parameters, trace elements and meat quality traits in rabbits. Twelve male rabbits at the age of 4 months were allocated into 2 groups: control and experimental. The experimental rabbits were exposed to intermittent solar radiation for 4 hours at 36 °C. The following parameters were determined: white blood cells (WBC) count, red blood cells (RBC) count, hematocrit, neutrophil and lymphocyte percentages, liver and meat content of chromium (Cr) and selenium (Se), pH of meat at 60 min and 24 h post mortem, meat color, myoglobin and water holding capacity (WHC). Exposure to heat increased neutrophil to lymphocyte ratio (P<0.01) and liver content of Cr (P<0.01), while WBC count, RBC count, hematocrit, liver Se, muscle Cr and Se, pH of meat at 24 h, meat color, myoglobin and WHC were not affected by the applied heat load. The experimental rabbits had significantly lower meat pH at 60 min after slaughter relative to the control rabbits (P<0.05). It was suggested that experimental rabbits had sufficient muscle glycogen at the time of slaughter needed to produce the lactic acid that reduced the ultimate pH of post-mortem muscle within the range observed in the control rabbits
