Survival of Campylobacter spp. on inoculated pork skin or meat.
Campylobacter is one of the main causes of human foodborne bacterial zoonoses due to food consumption in developed countries. Nine to 32% of pig carcasses are contaminated by Campylobacter. The purpose of the study was to improve our knowledge of the survival of implanted campylobacters from the two kinds of pork matrix meat (skin, muscle) during meat cold domestic storage. One hundred and twenty pork skin and 120 skinless chine samples (25 cm2/sample) were inoculated with two C. jejuni and four C. coli strains and stored in closed box at 4 oc for 1, 4, 8, 15 and 22 days. Campylobacter were isolated from sample suspensions after mechanical pummeling and numbered by direct plating. We calculated the shoulder time (ST), the D value (the time for one log decrease} and the R, value (the time to reach 10% of the initial population R, = ST +D). We compared them in a stratified approach according to pork matrix and strain. According to matrixes, mean D, TS and R, value varied significantly between pork skin (4.3 days, 1.3 days, 5.6 days, respectively} and spare rib (7 .2 days, 3.5 days, 10.8 days, respectively}. On spare rib, R1 was higher (16 days) with one C. coli strain (CCV55). Statistical effects between TS and R, value on spare rib and strain were noticed. This study shows that the survival of campylobacters on pork meat is similar to the survival of Campylobacter on poultry meat. Consequently, good hygiene practices are needed to manage the risk of pork Campylobacter contamination and further studies focusing on survival factors may complete this risk analysis on the pork food chain

Campylobacter in the Pork Food Chain : a quantitative hazard analysis
Campylobacter are one of the most frequent causes of bacterial enteritis in industrialized countries and are widespread in food animals. Pigs are known to be largely contaminated in farms, but few data exist about the status of the pork food chain. The purpose of this study was to quantify the Campylobacter contamination of the French pork food chain: prevalence, contamination level, bactenal species in primary production (piglets and fattening pigs when slaughtered), and in first and second transformation process (from carcasses before chilling to deboned meat cuts)
Meat microbiological safety: new quantitative data. How can controls be improved?
Meat is frequently involved in foodborne zoonoses. To improve the control of biological hazards to
meat, these hazards must be graded and the consumer’s risk of exposure must be assessed scientifically.
Characterization of the contamination status helps evaluate the risk of hazard introduction in
the food chain and the level of transfer. For meat, status of contamination of carcasses is mainly
explained by the level of hygiene control at slaughterhouse combined with the status of infection
of slaughter animals, particularly for meat-borne hazards lowly detected due to macroscopic examination
of carcasses. The overall health control of high-risk operations could be quantified by calculating
the transfer ratio and the farm risk profil.Les viandes restent
fréquemment incriminées dans les zoonoses d'origine alimentaire. Une meilleure maîtrise de
leur contamination par les dangers biologiques passe donc par une hiérarchisation de ces
dangers pour ensuite conduire une évaluation scientifique des risques d'exposition du
consommateur, pour des couples danger/denrée. La localisation et la quantification de la
contamination permet d'évaluer le risque d'introduction du danger dans la chaîne et le
niveau de son transfert. Pour les viandes, l'abattoir peut maîtriser ce transfert, lequel
sera cependant affecté par la prévalence de la contamination des carcasses par les dangers
bactériens portés par les animaux et non détectables à l'examen macroscopique. Le niveau
global de maîtrise hygiénique des opérations à risque pourrait être quantifié par le calcul
du ratio de transfert et le profil de risque des élevages
HACCP andfresh fish production : application in a marine farm
At the end of the nineties, the French marine farming industry was faced with new European regulations
on food safety, recommending risk analysis and control based on HACCP (Hazard Analysis and Critical
Control Point) guidelines. However, at the time, the marine farming industry had no good hygiene practice
guidelines, and no index in French listing the hazards associated with fresh fish consumption. A marine
farm then decided to apply the HACCP guidelines to its production, i.e. the growing of seabass
(Dicentrarchus labrax) sold fresh, ungutted and shipped chilled on ice. This required a description of the
product and production process, followed by a risk analysis contextualized to the company.A la fin des années 90, la
filière aquacole marine se retrouve confrontée à la nouvelle approche réglementaire
européenne en matière de sécurité des aliments, préconisant une analyse et une maîtrise des
risques inspirées de la démarche HACCP (Analyse des Dangers avec Maîtrise des Points
Sensibles). Cependant, la filière aquacole marine était dépourvue de guides de bonnes
pratiques hygiéniques, ainsi que d'un répertoire synthétique, en français, des dangers liés
à la consommation de poisson frais. C'est dans ce contexte qu'une ferme marine aquacole a
souhaité appliquer la démarche HACCP à sa production : le grossissement de bars
(Dicentrarchus labrax) vendus frais non éviscérés, expédiés sous glace. Cela supposait tout
d'abord une description du produit et du procédé de production, puis une identification des
dangers associés à la consommation de poissons, avant d'envisager l'analyse contextualisée Ã
