    Christian college teacher education program faculties face the challenge of employing a Christian epistemology that includes a pedagogy that embraces today’s learners. The authors seek to communicate the foundations of modernism and postmodernism and their impact on the epistemology and pedagogies employed in university classrooms. How the postmodern thinking claims have influenced the lives of Christian students will also be examined. The paper concludes with a discussion of the challenges for Christian teacher education faculties

    Ensiled product from fish by microbial fermentation

    Fish ensilage for animal feed stuff was prepared from Jew fish (Pseudosciaena spp.) and Silver bellies (Leiognathus spp.) by fermentation with pure culture of Lactobacillus piantarum NCIB 6105. The precooked ensiled product gave better product of fish silage (high content of lactic acid, about 5%). Protein Nitrogen content ranged between 1.76 to 1.94%. During storage for one year, the Protein Nitrogen loss was not significant. The material can be used as a supplemental animal ration

    Quality deterioration of seer held directly in contact with ice, in different forms, fillets and chunks, and of chunks held in ice but without direct contact, was studied for a period of 15 days. While the chunks held out of contact with ice were acceptable up to 13 days based on organoleptic evaluations, the chunks and fillets held in direct contact with ice were acceptable only up to 10 days. The order of preference of the samples at any interval of ice storage was chunks held out of contact with ice>chunks held directly in ice>fillets held directly in ice. The changes in the chemical quality of these samples were also in the same order, the deterioration being maximum in fillets and least in chunks kept out of contact with ice

    The proximate compositions and amino acid make-up of silver jew fish (Johnius argentatus), Indian halibut (Psettodes erumei), grey mullet (Mugil cephalus) and pearl spot (Etroplus suratensis) are reported. Calorific values of these fishes have been calculated from their proximate compositions and their amino acid make-up compared with the available data for beef and egg. From the study, pearl spot is adjudged to be the most nutritive among the fishes studied, followed by Indian halibut, grey mullet and silver jew fish

    A method for the preparation of energy food incorporating fish hydrolysates, sugar, cocoa, malt extract etc. is described. The product has good consumer appeal. The preparation does not impart any bitter taste of the hydrolysate to the final product irrespective of the type of fish used for preparing the hydrolysate.
