Nutrition, hedonic or environmental? The effect of front-of-pack messages on consumers\u2019 perception and purchase intention of a novel food product with multiple attributes
The present study aims to assess the effect of different Front-Of-Pack messages on consumer perception, willingness to buy and willingness to pay for a new food product, with multiple attributes, such as particular nutritional information, sensory characteristics, and a potentially positive environmental impact. Furthermore, this study explores the differences between consumers based on their individual latent traits in order to evaluate how these factors affect the willingness to buy the new product, as well as to outline a profile of target consumers attracted by innovative food products. A consumer survey was conducted on a representative sample of 1250 Italian consumers, using a between-subject design with different Front-Of-Pack messages as stimuli. Messages were related to different attributes: nutrition, environmental impact, hedonic characteristics, and process innovation. Empirical findings show that Front-Of-Pack messages do not directly affect consumer willingness to buy, but they do influence consumer perception of the product. The most effective message is the nutrition one. Consumer willingness to buy is particularly influenced by product perception and by their novelty seeking orientation in consumption. Furthermore, consumers were segmented through hierarchical clustering based on their novelty seeking orientation. The results obtained provide valuable suggestions for the design of new products\u2019 labeling and for the outline of the profile of potential target customers for innovative food products
Individual transferable effort quotas for Italian fisheries? A preliminary analysis
In the context of transferable fishing concessions, the most well-known tool is probably the individual transferable quota, whereas the case of individual transferable effort quotas (ITEs) is much less often discussed. This study is the result of a project realized in collaboration with Italian fishery associations with the objective of evaluating, in a participatory framework, the possible consequences of the introduction of ITEs. A semi-quantitative survey was carried out over a sample of key stakeholders being experts of bottom trawling fisheries in the Tyrrhenian and Adriatic Seas and the pelagic trawling fishery in the Adriatic Sea. The results and elaborations of the surveys were discussed and validated by a focus group composed of delegates of fishery associations. Two aspects were investigated: the relationships between fishing capacity (i.e. engine power and gross tonnage), fishing activity (i.e. fishing days and fishing hours), revenues, and variable costs (e.g. fuel) and the suitability of different proposals and alternative approaches for the introduction of ITEs. The participation of stakeholders allowed the building of some simple pedagogical tools based on realistic figures collected through the surveys that could be used by managers of associations, cooperatives, and producer organizations to better understand the functioning and possible consequences of ITEs schemes
Stakeholder perception of EU food safety governance: the case of EU fruit and vegetable imports from Southern Mediterranean Countries
Despite the advantages ensuing from preferential market access agreements, trade exchanges between Southern Mediterranean Countries (SMCs) and the EU are often hindered by food safety issues. These are particularly relevant for fruit and vegetables, which are subject to heterogeneous regulations in SMCs. This paper seeks to outline governance solutions to improve ex-ante compliance capacity of SMCs produc-tion and to enhance integration with the EU market. A set of research hypotheses, concerning the difficul-ties and benefits related with food safety compliance, are formulated. These hypotheses are then discussed in the light of the empirical evidence gathered from (i) public bodies involved in food safety enforcement and (ii) a direct survey conducted on 37 stakeholders in the fruit and vegetable supply chain in Italy. The main problems identified relate to the scarce harmonization among control systems in EU Member States and insufficient checks in exporting countries. The main benefits include the reduction of sanitary risk and the reinforcement of long-term trust-based relations along the supply chain. The most promising strategies encompass the improvement of inspections on production sites and of infrastructures in the countries of origin. Further areas of intervention concern the harmonization of food safety regulation between EU countries and SMCs and the development of bilateral cooperation and technical training programs
Fattorizzazione Matriciale Non Negativa: algoritmi e applicazioni
La fattorizzazione matriciale non negativa (NMF) è un metodo di riduzione di dimensione lineare recentemente studiato nell'ambito dell'analisi dei dati per le sue proprietà di estrazione di informazioni facilmente interpretabili da una matrice dei dati non negativa. Dopo una breve rassegna sulle approssimazioni matriciali a rango ridotto passiamo allo studio di alcuni algoritmi standard per la risoluzione della NMF. Sfruttiamo poi gli stessi per effettuare esperimenti in due ambiti applicativi: il text mining e il riconoscimento facciale. Infine introduciamo una variante ortogonale del problema, chiamata ONMF, di cui riportiamo l'equivalenza matematica con una variante pesata del metodo delle k-medie sferiche. Questo risultato consente di svolgere un confronto tra i risultati ottenuti da diversi algoritmi nel clustering di immagini iperspettrali
PREFERENCES AND BUYING BEHAVIOUR OF BEEF CONSUMERS IN TUSCANY
Tuscany, probably the most famous Italian region, is known because of many typical food specialities. One of them is the “fi orentina” - a thick, fi rst quality beef, called after the name of the city of Florence. However, recent trends in consumers’ behaviour and the BSE crisis have affected the attitude of consumers toward such products. In this study are presented the results of a mail survey about beef consumption and preferences that was conducted in Tuscany in May 2002. The survey showed that, despite recent food scares and new consumption behaviour, Tuscany consumers still like and prefer beef that has guarantees of quality. Therefore, there are good market opportunities for the Italian and foreign beef producers in Tuscany if they will provide consumers with not only good quality beef, but also more information about the meat
Hopfield model with planted patterns: a teacher-student self-supervised learning model
While Hopfield networks are known as paradigmatic models for memory storage
and retrieval, modern artificial intelligence systems mainly stand on the
machine learning paradigm. We show that it is possible to formulate a
teacher-student self-supervised learning problem with Boltzmann machines in
terms of a suitable generalization of the Hopfield model with structured
patterns, where the spin variables are the machine weights and patterns
correspond to the training set's examples. We analyze the learning performance
by studying the phase diagram in terms of the training set size, the dataset
noise and the inference temperature (i.e. the weight regularization). With a
small but informative dataset the machine can learn by memorization. With a
noisy dataset, an extensive number of examples above a critical threshold is
needed. In this regime the memory storage limits of the system becomes an
opportunity for the occurrence of a learning regime in which the system can

Exploring structural and strategic correlates of difficulties in the internationalisation process of Italian wine SMEs
Internationalisation has been a key strategy for businesses around the world over the last decades. Nowadays, the European wine sector finds itself in an increasingly competitive international environment, which is characterised by mature and declining per capita wine consumption in traditional markets and increasing competition form new emerging wine producing countries. Structurally, this sector is characterised by a vast majority of family businesses and faces several particularities. This research investigates the perception of difficulties in the internationalisation process of small and medium wineries in two emerging Italian wine exporting regions. It is found that the difficulties perceived in the internationalisation process depend on strategic and structural factors. The strategic factors highlighted in this paper are the degree of international diversification and the geographic scope of a firm's export activities. The structural factors relate to the characteristics of the exported goods, the management and the size of a firm. The findings are discussed in the light of recent developments of Italian wine exports and their implications for the Italian wine sector are derived
A structural equation modeling analysis of relational governance and economic performance in agri-food supply chains: evidence from the dairy sheep industry in Sardinia (Italy)
This study investigates the factors affecting the inter-organizational relationships and governance of firms in agri-food supply chains and assesses the influence that the current conditions of vertical coordination have on the economic performance of these firms. Research hypotheses describing the causal effects between the environment, product characteristics, inter-organizational relationships, relational governance, and firm economic performance are formulated and tested using a structural equation modeling approach. Data were gathered from a questionnaire administered via a direct survey to both farmers and processors in a traditional high-quality dairy sheep supply chain in the Italian region of Sardinia: the Pecorino Romano Protected Designation of Origin. Results point out the role of informal contractual arrangements in this local production system characterized by social cohesion, entailing higher product quality and better economic performance. Further, the study highlights the role of trust as a key variable for attaining collaborative paths along the agri-food supply chain, particularly between farmers and processors
