    Comparative Evaluation of the Antioxidative and Antimicrobial Nutritive Properties and Potential Bioaccessibility of Plant Seeds and Algae Rich in Protein and Polyphenolic Compounds

    Spice plants are not only a source of nutrition compounds but also supply secondary plant metabolites, such as polyphenols. Therefore, their bioaccessibility is an important issue. In order to understand the biological activity of polyphenols present in spice plants, it is necessary to broaden knowledge about the factors influencing their bioaccessibility, including nutritional factors. Therefore, the objective of this research was to determine the antioxidative and antimicrobial nutritive properties and potential bioaccessibility of plant seeds and microalgae rich in protein and polyphenolic compounds. Plant seeds rich in protein—i.e., black cumin, milk thistle, fenugreek, almonds, white sesame, white mustard, eggfruit and the two most popular algae, chlorella and spirulina—were analyzed for total polyphenolic compounds (TPC) and antioxidant properties (ABTS, FRAP), as well as their potential bioaccessibility, antimicrobial activity, basic chemical composition and amino acid profiles. With regard to the TPC, the highest levels were found in star anise, followed by milk thistle, white mustard and fenugreek, whereas the lowest were noted in white sesame, almonds, eggfruit, spirulina and chlorella. White mustard and milk thistle showed the highest antioxidant capacities and almonds, eggfruit, spirulina, and chlorella the lowest according to the ABTS and FRAP assays. The widest spectrum of microbial growth inhibition was detected for fenugreek extract, which showed antimicrobial activity against four analyzed microorganisms: B. subtilis, P. mirabilis, V. harveyi and C. albicans. The protein from seeds of black cumin, milk thistle, white mustard and eggfruit and chlorella was not limited by any essential amino acids. Among all analyzed plants, fenugreek seeds were judged to have potential for use in food formulation operations in view of their antioxidant activity and amino acid profile. Based on the results, intake of polyphenols together with protein in plant seeds does not have a major impact on the potential bioaccessibility of a range of polyphenols and phenolic metabolites

    Effectiveness of E-Beam Radiation against <i>Saccharomyces cerevisiae</i>, <i>Brettanomyces bruxellensis</i>, and Wild Yeast and Their Influence on Wine Quality

    The simplest way to eliminate microorganisms in the must/wine is through sulfuration, as it allows the introduction of pure yeast varieties into the must, which guarantees a high-quality wine. However, sulfur is an allergen, and an increasing number of people are developing allergies to it. Therefore, alternative methods for microbiological stabilization of must and wine are being sought. Consequently, the aim of the experiment was to evaluate the effectiveness of ionizing radiation in eliminating microorganisms in must. The sensitivity of wine yeasts, Saccharomyces cerevisiae, S. cerevisiae var. bayanus, Brettanomyces bruxellensis, and wild yeasts to ionizing radiation was com-pared. The effects of these yeasts on wine chemistry and quality were also determined. Ionizing radiation eliminates yeast in wine. A dose of 2.5 kGy reduced the amount of yeast by more than 90% without reducing the quality of the wine. However, higher doses of radiation worsened the organoleptic properties of the wine. The breed of yeast used has a very strong influence on the quality of the wine. It is justifiable to use commercial yeast breeds to obtain standard-quality wine. The use of special strains, e.g., B. bruxellensis, is also justified when aiming to obtain a unique product during vinification. This wine was reminiscent of wine produced with wild yeast.. The wine fermented with wild yeast had a very poor chemical composition, which negatively affected its taste and aroma. The high content of 2-methylbutanol and 3-methylbutanol caused the wine to have a nail polish remover smell

    Effect of Inoculated Lactic Acid Fermentation on the Fermentable Saccharides and Polyols, Polyphenols and Antioxidant Activity Changes in Wheat Sourdough

    Inoculation of sourdough allows the fermentation medium to be dominated by desired microorganisms, which enables determining the kinetics of the conversion of chemical compounds by individual microorganisms. This knowledge may allow the design of functional food products with health features dedicated to consumers with special needs. The aim of the study was to assess the dynamics of transformations of fermentable oligosaccharide, disaccharide, monosaccharide and polyol (FODMAP) compounds from wheat flour as well as their antioxidant activity during inoculated and spontaneous sourdough fermentation. The FODMAP content in grain products was determined by the fructan content with negligible amounts of sugars and polyols. To produce a low-FODMAP cereal product, the fermentation time is essential. The 72 h fermentation time of L. plantarum-inoculated sourdough reduced the FODMAP content by 91%. The sourdough fermentation time of at least 72 h also positively influenced the content of polyphenols and antioxidant activity, regardless of the type of fermentation. The inoculation of both L. plantarum and L. casei contributed to a similar degree to the reduction in FODMAP in sourdough compared to spontaneous fermentation

    Zachowania zdrowotne i żywieniowe wybranej grupy pacjentów z Polski południowo-wschodniej: badanie pilotażowe

    Background. The growing number of people with excess body weight is one of the most important global health issues. The increase in the number of people with excess weight and obesity leads to a shortened life expectancy. Material and methods. The aim of this pilot study was to use a questionnaire survey to determine the lifestyle of the people in a group of 84 Polish patients from south-eastern Poland, including diet, physical activity, and health. The pilot studies were carried out from December 2021 to January 2022 in a family doctor’s clinic among people in search of advice, who willingly volunteered themselves for the study. Results. The results of the study showed that 33% of women and 44% of men have excess body weight. Economic status statistically significantly affects the incidence of overweight and obesity. However, the level of education does not have a statistically significant effect on body weight. The irregularity of meals among the respondents was often explained by irregular work and many responsibilities. Our research also showed a low physical activity of the studied population. Conclusions. Improper nutrition combined with other anti-health behaviors make it significant to introduce intensive health education programs.Wprowadzenie. Wzrastająca liczba osób z nadmierną masą ciała jest jednym z najważniejszych globalnych problemów zdrowotnych. Wzrost liczby osób z nadwagą i otyłością prowadzi do skrócenia średniej długości życia. Materiał i metody. Celem badań pilotażowych było określenie za pomocą ankiety kwestionariuszowej stylu życia w 84-osobowej grupie polskich pacjentów z południowo-wschodniej Polski z uwzględnieniem diety, aktywności fizycznej i stanu zdrowia. Badania pilotażowe przeprowadzono od grudnia 2021 do stycznia 2022 w poradni lekarza rodzinnego wśród chętnych osób szukających porady lekarskiej. Wyniki. Wyniki badań wykazały, że 33% kobiet i 44% mężczyzn ma nadwagę. Status ekonomiczny statystycznie istotnie wpływa na występowanie nadwagi i otyłości. Natomiast poziom wykształcenia nieistotny statystycznie nie ma wpływu na masę ciała. Nieregularność posiłków wśród respondentów była często tłumaczona nieregularnością pracy i wieloma obowiązkami. Z naszych badań wynika również niska aktywność fizyczna badanej populacji. Wnioski. Niewłaściwe odżywianie w powiązaniu z innymi zachowaniami antyzdrowotnymi oraz mała aktywność fizyczna sprawiają, że ważne jest wprowadzenie intensywnych programów edukacji zdrowotnej

    Flowers and Leaves Extracts of Stachys palustris L. Exhibit Stronger Anti-Proliferative, Antioxidant, Anti-Diabetic, and Anti-Obesity Potencies than Stems and Roots Due to More Phenolic Compounds as Revealed by UPLC-PDA-ESI-TQD-MS/MS

    The present work aims to assess the biological potential of polyphenolic compounds in different parts (flowers, leaves, stems, and roots) of Stachys palustris L. Towards secondary metabolites profile, 89 polyphenolic compounds (PCs) were identified by UPLC-PDA-ESI-TQD-MS/MS, with a total average content of 6089 mg/100 g of dry matter (d.m.). In terms of biological activity, antioxidant activity (radical activity, reducing power), digestive enzyme inhibitory (α-glucosidase, α-amylase, pancreatic lipase) effect, and antiproliferative activity (inhibition of cell viability and induction of apoptosis in different human cancer cell lines) were explored. Leaves, flowers, stems, and roots of S. palustris L. have not been studied in this regard until now. Vescalagin and cocciferin d2, isoverbascoside (verbascoside), luteolin 6-C-glucoside, luteolin 6-C-galactoside, apigenin 6-C-glucoside, (−)-epicatechin, ellagic acid, and malvidin 3-O-diglucoside were detected as main ingredients in the studied parts. Methanolic extract of S. palustris L. leaves and flowers revealed the highest amount of PCs with the strongest antiradical (18.5 and 15.6 mmol Trolox equivalent (TE)/g d.m., respectively) and reducing power effects (7.3 and 5.6 mmol TE/g d.m.). Leaf extracts exhibited better α-amylase and pancreatic lipase inhibition effects, while flower extracts exhibited better α-glucosidase inhibition effect. Regarding antiproliferative activity, extracts of the leaves and flowers significantly reduced cell viability and induced a high level of apoptosis in human lung, pancreatic, bladder, and colon cancer cell lines, as well as in human acute myeloid leukemia; whereas the extracts from stems and roots revealed the weaker effects. The results of this work showed anti-proliferative and potentially anti-diabetic, anti-obesity properties of S. palustris L., especially for flowers and leaves, which may have wide potential applications in the functional food, special food, pharmaceutical, cosmetics industries, and/or in medicine.Land and Food Systems, Faculty ofNon UBCReviewedFacultyResearche
