    Traditional knowledge system on paddy straw management in North-East India

    Burning of paddy straw in the field is a national issue nowadays. Many researches have been taken up for efficient utilization of paddy straw at national and international level. But the use of paddy straw for various applications is known since ancient days. The application of paddy straw varies from region to region. Therefore, an attempt has been made to collect information on the traditional uses of paddy straw and its management in the Northeastern states of India particularly Manipur. The information has been collected through review of literature and interaction with the villagers. The study revealed that the people of this region used paddy straw for different purposes such as thatching, wall construction, cattle feed, animal bedding, fuel, mulching, mushroom cultivation, handicraft products, extraction of substrate from straw ash and preparation of fermented beverages. This traditional knowledge on the utilization of paddy straw can provide an idea for scientific exploration for better and efficient uses in various fields.

    Major factors that influence protein separation by ultrafiltration are the physico-chemical properties of proteins such as molecular size, charge, system hydrodynamics and other operating conditions of ultrafiltration such as pH, ionic strength and membrane fouling. The effect of varying the ionic strength on transmission and selectivity in case of binary protein mixture of myoglobin and ovalbumin was studied in stirred cell ultrafiltration unit at pH 7.0. Proteins in permeate and retentate samples were resolved and analyzed by HPLC. The results indicated that increasing ionic strength in creasesd the transmission and decreased the selectivity. The selectivity also decreased with increase in pressure

    Tenderness is an important criterion for satisfactory eating quality and repeated buying of goat meat. Goat meat available in markets is generally tough. Mechanical tenderization is an effective method widely used for tenderization. A prototype of blade tenderizer with sterile surgical blades was developed for tenderization of meat. Two mechanical methods viz., incision of goat meat with blade tenderizer and passing of meat between two knurled rollers were evaluated for their effectiveness as tenderization method. Meat chunks were cooked after the treatment and evaluated for different physico-chemical and sensory evaluation. Cooking yield and peak shear force decreased for samples subjected to incision of goat meat with blade tenderizer as well as by passing of meat between two knurled rollers. The treatments did not affect the pH value of meat samples. The extent of disintegration of muscle structure in case of 16 passes was more as compared to other treatments, and resulted in less juicy cooked meat with apparent tough mouth feel. Blade tenderization was found to yield the best result in terms of tenderness and other eating quality parameters
