    A Comparison between Physico-Chemical Characteristics of the Degraded Palm Oil by Chicken Nuggets Coated with Sweet Pepper and Hot Pepper

    Palm oil was selected from varieties of vegetable oils used in the food industry (especially in the food industry of "Fast Food") proved to be an oil with properties that can be maintained within acceptable limits for use after a reasonable time highly dependent on the type of food processed. It is known that frying is the most widely used process for the preparation of food both in the home and in industrial scale. The preference for this method of preparation of the food is due to the fact that it is a quick and convenient method from the point of view of time / output, and the food unique sensory properties, color, texture, consistency, taste and flavor are very popular with consumers. Degraded samples of the oils were analysed to ascertain the psysicochemical caracteristics (density, refractive index, acid and saponification values and percentage of water) in comparison to the blank samples. The determinations conducted revealed elevated parameters due to the degradation compounds in the analysed samples

    Orange and lemon peel powders as a bioelement source

    The purpose of this paper was to evaluate the concentration of some bioelements from citrus peel powder. Peels powder was obtained by drying and grinding citrus peels as a by-product resulting after the preparation of some natural juices. The results obtained by atomic absorption spectrometry of Na, K, Ca, Mg, Fe, Mn, Zn and Cu, shows that the powders taken into the study contain important amounts of essential mineral elements, especially Ca and K (159-182 mg/100g, respectively 211-218 mg/100g) and also appreciable contents of Mg (15.3-23.4 mg/100g), Fe (18.1-34.1 mg/100g), Zn (9.34-11.8 mg/100g), Na (8.75-12.8 mg/100g), Cu (1.27-3.71 mg/100g) and Mn (1.32-2.03 mg/100g). The concentration of the analyzed mineral bioelements shows, in general, the following decreasing trend: K> Ca> Fe> Mg> Zn> Na> Cu> Mn

    Medicinal plants - important source of essential microelements

    The purpose of this paper was to evaluate the concentration of some essential microelements (Fe, Mn, Zn and Cu) from the leaves of two plants: stinging nettle (Urtica dioica) and sage (Salvia officinalis), species of plants with multiple uses in the food and medical field due to their high content of compounds with beneficial action for organisms. Samples were obtained by washing, drying and calcination of fresh leaves. The results obtained by atomic absorption spectrometry regarding Mn, Fe, Zn and Cu concentration in sage and nettle leaves shows that the samples contains important amounts of essential microelements, Cu (1.72-1.87 mg/g), Fe (25.43-65.67 mg/g), Mn (7.86 – 9.30 mg/g), Zn (54.61 – 73.12 mg/g). The appreciable contents of essential microelements recommend the use of these plants as a supplementary source of essential elements

    THE EFFECT OF TiO2 NANOPARTICLES (DOPED OR NOT WITH Ag, ENCAPSULATED OR NOT IN LYPOSOMES), ON THE SPLEEN ULTRASTRUCTURE IN Mus musculus SPECIES, EXPOSED AT A STRESS FACTOR X-RAYS

    The present experiment was performed on young females of Mus musculus, 22-24 g each, intraperitoneal injected with a suspension of titanium dioxide (five injections of 0.5 ml each, one at two days, with 0.01% TiO2 or TiO2-Ag suspension). The TiO2 nanoparticles of anatase crystallization form, 10-20 nm size, wereconjugated or not with 1% Ag, encapsulated or not in lyposome. A day after the third injection, half of theanimals received a sublethal dose of X-rays (2.58 Gy; the stress factor). A day after the last injection, the animals were sacrificed through the section of thecarotid artery. Ultrastructural investigations were performed at the spleen level. The analysis of the ultrastructural features from the spleen level enabledthe following observations: the single action of the TiO2 or TiO2-Ag nanoparticles induced an inflammatory process, but in the presence of X-rays, they manifested a slight protective effect; the TiO2-Ag nanoparticles, encapsulated in liposome, manifested a strong radioprotective effect, but the endocapsulation process is not optimal and has to be improved; the presence of a protective effect at the spleen level can suggest that the TiO2-Ag nanoparticles can be used to enhance the organism resistance in case of carcinogenic treatment (in animal or in homo)

    Apples and beverages are an important source of antioxidants, effective in fighting free radicals. The apple has high nutritional value and can be eaten fresh as a fruit throughout the year or it can be a raw material for juice, nectar, puree, compotes, apple cider, vinegar and dehydrated fruit. The objective of the paper is to present the nutritional and health benefits of apples and its derivatives from the scientific literature of food chemistry, horticulture, agriculture and medicine. Articles and online references have been consulted. Knowing that apples and derived products are a source of polyphenols, the source of B and C vitamins, calcium, potassium phosphorus, and fiber, with antioxidant properties that reduce the risk of developing tumors, hypertension, diabetes, heart disease and brain aging . The nutritional profile of the fruit, juice and apple cider are summarized as average values of polyphenols, antioxidant capacity and fiber, vitamins and minerals content. Therefore, it is recommended to include the apple in the daily diet, both the core and the peel without neglecting the offer of juices, smoothies, cider and apple vinegar from Romani
