El objetivo del presente estudio fue utilizar el chaguarmishqui, en la elaboración de bebida alcohólica con pulpa de maracuyá. Donde se estableció la mejor formulación utilizando distintos niveles (300, 400, 500) ml de pulpa, determinando así sus características fisicoquímicas, microbiológicas y organolépticas, y el su beneficio/costo. El chaguarmishqui se adquirió de la provincia de Cañar cantón el Tambo de los pequeños productores, el maracuyá se adquirió del mercado mayorista del Cantón Riobamba y se procedió a realizar el despulpado, para los análisis microbiológicos se estableció por medio de la normativa, NTE INEN 1529-10:98. la cual menciona que se debe realizar mohos y levaduras y salmonella, en cuanto a las características organolépticas con los atributos color, olor, sabor, aspecto, se lo estableció con la prueba Friedman, para el análisis estadístico se utilizó la prueba de Tukey dando como resultado diferencias significativas para pH, sólidos solubles, grados alcohólicos, acidez volátil, azúcares reductores, en los análisis microbiológicos mostró presencia de moho y levaduras en T0, T2, T3, con una cantidad de 2 unidades formadoras de colonias (UFC), mientras que el T1 obtuvo 1 (UFC), en el análisis de salmonella en los cuatro tratamientos presentó ausencia, esto cumplió con la norma establecida, para el análisis organoléptico con el atributo color, olor, sabor y aspecto el mejor tratamiento fue el T3. Se concluye que la composición física química, microbiológica y sensorial del producto el T1, presentó 4,40 pH, 5,15% ST, 8,09% alcohólicos, 1,06 g/L acidez volátil, 0,70g/L azúcares reductores, cumpliendo con los valores máximos y mínimos de las NTE INEN, el tratamiento tres con un mejor beneficio costo 0,61 porcadadoˊlarinvertido.Elchaguarmishquiporserunabebidaancestralyporsuscaracterıˊsticasbeneˊficasquepresentaserecomiendacontinuarconelestudiodeutilizacioˊncondiferentesproductosalimenticios.Theobjectiveofthisstudywastousethechaguarmishquitoprocessanalcoholicbeveragewithpassionfruitpulp.Thebestformulationwasestablishedusingdifferentlevels(300,400,500)mlofpulp,thusdeterminingitsphysicochemical,microbiological,andorganolepticcharacteristicsanditsbenefit/cost.ThechaguarmishquiwasacquiredfromsmallproducersintheprovinceofCan~arinthecantonofElTambo.ThepassionfruitwasacquiredfromthewholesalemarketoftheRiobambaCantonandthepulpingwascarriedout.Forthemicrobiologicalanalysis,itwasestablishedbymeansoftheregulation,NTEINEN1529−10:98,whichmentionsthatmoldsandyeastsandsalmonellashouldbecarriedout.Asfortheorganolepticcharacteristicswiththeattributescolor,odor,flavor,andappearance,itwasestablishedwiththeFriedmantest.Forthestatisticalanalysis,theTukeytestwasused,resultinginsignificantdifferencesforpH,solublesolids,alcoholcontent,volatileacidityandreducingsugars.MicrobiologicalanalysisshowedthepresenceofmoldandyeastsinT0,T2andT3,withaquantityof2colonyformingunits(CFU),whileT1obtained1(CFU).Allfourtreatmentsshowedanabsenceofsalmonellaintheanalysis.Thiscompliedwiththeestablishedstandard.Fortheorganolepticanalysiswiththeattributescolor,odor,flavorandappearance,thebesttreatmentwasT3.Itisconcludedthatthephysical,chemical,microbiological,andsensorycompositionoftheproduct,T1presented4.40pH,5.150.61 per dollar invested. Chaguarmishqui is an ancestral beverage with beneficial characteristics. Therefore, it is recommended to continue with the study of utilization with different food products
