Morphometric and biochemical indices of the red-colored Amaranthus tricolor L. Valentina variety were studied, the content of the reduced form of vitamin C, the amaranthine pigment in roots, leaves, stems and inflorescences was determined. Studies have shown the presence of a high concentration of vitamin C in the leaves of amaranth both in the open ground (195 mg%) and in the film greenhouse (176 mg%). In the leaves of amaranth of different varieties of the species Amaranthus tricolor, a large amount accumulates a secondary compound - an antioxidant - amaranthine. The red-violet color of the inflorescences is due to the presence in the vegetative organs of the plant of the red-violet pigment of amaranthine. It is important to note that the amaranth Valentine variety have found substances with antioxidant activity: ascorbic acid, selenium, carotenoids, methionine. In the largest amount, amaranthine is found in the inflorescences (2.18 mg/g) and leaves (1.41 mg/g). Its predecessors are D-glucose and L-tyrosine - photosynthetic metabolites, which are used in growth processes and in the biosynthesis of amaranthine In red-colored plants of the genus Amaranthus, betacianin-amaranthine is 5-O-glucuronidoglucoside betanidine. Leaves with a high content of red-violet pigment amaranthine used in the production of food additives-dyes Amvita and Amphicra, used in the food concentrates industry. These additives, due to their antioxidant properties, enhance immunity and have immunomodulatory activity. Extraction of amaranth leaves in H2O revealed high rates of antioxidant activity (CCA from 1.81 mg EQ GK/g). Material for research was fresh leaves of Amaranthus tricolor L. varieties Early Splendor. They were grown in a greenhouse (Federal Scientific Vegetable Center, Moscow region). Using GC-MS, 8 and 11 amino acids were identified in extracts of hetero- and autotrophic leaves. One of the mechanisms that provide resistance to stresses of various natures is the accumulation of free amino acids; therefore, the total content of antioxidants can serve as an indicator of plant resistance. The amino acids found in amaranth leaves have pronounced functional activity in the human body. For example, tyrosine is the most important neurotransmitter, stimulates the brain, is involved in the control of stress. In humans, the precursor of tyrosine is the essential amino acid phenylalanine, while tyrosine is formed by hydroxylation of the phenyl group of phenylalanine. In this case, the lack of the latter in food leads to a deficiency of tyrosine in the body. Tryptophan controls the body's protective and adaptive functions. Amino acids valine, leucine, glutamine, proline - stimulate the growth of beneficial intestinal flora and biomass accumulation. Thus, the amino acid composition determines the nutritional and pharmacological value of amaranth leaf biomass. Extracts were obtained from foliar biomass of vegetable plants Amaranthaceae, Brassicaceae and small fruit crops Actinidia polygama and Schisandra chinensis families, investigation of content and composition of series of small molecule metabolites with antioxidative activity was performed. The following metabolites-antioxidants were identified in the derived extracts: ascorbic acid, carotenoids, monosaccharides; total antioxidant capacity was studied as well. Positive correlation between total antioxidant capacity and ascorbic acid was found for the examined vegetable plant varieties. Peak content of ascorbic acid was identified in foliage of Dobryj molodets and Akkord varieties of the silver vine, with the value reaching 690 mg%. The use of the rapid amperometric method made it possible to promptly measure and evaluate the total content of water- and ethanol-soluble antioxidants in extracts from Chryzantemum coronarium L. plants. The effect of optimal and low positive temperatures on the accumulation of low molecular weight antioxidants: ascorbic acid, phenolic compounds, soluble carbohydrates, carotenoids in various organs of vegetable chrysanthemum plant were investigated. In the leaves of the studied varieties, the content of flavonoids was two times higher than in the stems, while the accumulation level of condensed and polymeric polyphenols in the stem was three times higher than the level of their accumulation in the leaves. The maximum total antioxidant content was found in the inflorescences, whereas in other organs of the plant they accumulated 2-3 times less. Under the conditions of hypothermia in November, the amount of ascorbic acid, photosynthetic pigments and the total antioxidant content remained at a higher level in the upper photosynthesizing leaves. The experiment was carried out in a greenhouse on sod-podzolic soil in the Moscow region under conditions of natural insolation at a temperature of 20... 25 Β° C in March using varieties of VNIISSOK selection - Chernyj princ and Zolotnichok. The effect of Albit and Amir biostimulants on the content of antioxidants and photosynthetic pigments in the leaves of onion was studied. The work shows the promise of using growth-stimulating plant and bacterial preparations for foliar treatment of onion leaves, which allow increasing the yield of leaves and the content of antioxidants. In the leaves of the Chernyj princ variety, an increase in the content of ascorbic acid by 30% was observed when treated with biostimulant Amir, as well as an increase in leaf weight by 18% when treated with Amir and by 14% when treated with biostimulant Albit. Providing the world population with high-quality and functional food products is one of the main tasks of modern scientists. The introduction and subsequent cultivation of new and rare crops makes it possible to expand the diet. Stachys sieboldii Mig, or stakhys, is a vegetable plant with medicinal properties. Antioxidant profile of Amaranthus paniculatus L. Of the Pamyat of Kovas variety
The study of the composition and content of biologically active compounds in the leaves and inflorescences of the Pamyat of Kovas vegetable variety of the VNIISSOK selection revealed a difference in their accumulation in the leaves of the lower and upper layers. The maximum accumulation of biologically active substances was found in the leaves and inflorescences of the upper layer, exhibiting high antioxidant activity. In the studied extracts, antioxidant metabolites were found: amarantine, ascorbic acid, flavonoids, hydroxycinnamic acids, simple phenols and hydroxybenzoic acids, as well as pectins. The features typical for vegetable leaf crops were found: the maximum number of studied antioxidant metabolites accumulates in the leaves of the upper layer and amaranth inflorescences, while the decrease in the content of antioxidants is observed in aging leaves. Extracts were obtained from foliar biomass of vegetable plants Amaranthaceae, Brassicaceae and small fruit crops Actinidia polygama and Schisandra chinensis families, investigation of content and composition of series of small molecule metabolites with antioxidative activity was performed. The following metabolites-antioxidants were identified in the derived extracts: ascorbic acid, carotenoids, monosaccharides; total antioxidant capacity was studied as well. Positive correlation between total antioxidant capacity and ascorbic acid was found for the examined vegetable plant varieties. Peak content of ascorbic acid was identified in foliage of Dobryj molodets and Akkord varieties of the silver vine, with the value reaching 690 mg%.
