Micotoxinas : a situação actual da legislação e metodologias analíticas
Mestrado em QuímicaO presente trabalho apresenta os desenvolvimentos mais recentes no que
concerne às micotoxinas, em relação às metodologias analíticas utilizadas na
sua determinação e à situação actual em termos de legislação e limites
máximos para algumas micotoxinas.
Com o presente trabalho pretende-se fazer uma compilação das técnicas
analíticas utilizadas na detecção e quantificação das micotoxinas que mais
frequentemente ocorrem nas rações e produtos alimentares, nomear os
desenvolvimentos mais recentes no que concerne aos novos métodos e a
situação actual em termos de legislação nacional e comunitária, arrolando os
limites máximos propostos e consolidados em legislação para algumas
micotoxinas.
O trabalho está dividido em cinco capítulos. O primeiro capítulo apresenta
uma breve narrativa sobre as micotoxinas e a micologia. Um segundo
capítulo faz referência às micotoxinas mais estudadas (sua características,
microrganismos que as produzem e doenças com as quais estão implicadas).
O terceiro capítulo é dedicado às metodologias analíticas e aos métodos
comummente utilizados na análise de micotoxinas. O quarto capítulo
apresenta de uma forma sucinta a legislação existente a nível nacional e
comunitário bem como os limites máximos para as várias micotoxinas.
Finalmente o último capítulo faz-se a compilação da bibliografia e de um
conjunto de relatórios técnicos.

ABSTRACT: The current work presents the most recent developments concerning
mycotoxins, in regard to the analytic methodologies utilized in their
determination and the actual situation in terms of legislation as well as the
maximum limits for some mycotoxins.
Throughout this essay it is intended to make a compilation of the analytical
techniques used in the detection and quantification of mycotoxins which occur
most frequently in feed and food products, to designate the latest
developments regarding the new methods and the current situation in terms of
national and EU legislation, listing the maximum limits proposed and
consolidated in legislation for some mycotoxins.
The manuscript is divided in five chapters. The first chapter is composed by a
brief account on mycotoxins and mycology. A second chapter makes
reference to some of the more studied mycotoxins (their characteristics, the
microrganisms that produce them and the illnesses with which they are
implicated). The third chapter is dedicated to the analytic methodologies and
methods most commonly utilized in the mycotoxins’ analysis. The fourth
chapter presents in brief the legislation established in the national and
European Union as well as the maximum limits for the various mycotoxins.
Finally, in the last chapter is enclosed the compilation of the bibliography and
of a set of technical reports
